Jalapeno provides a kick, but you can remove the seeds or omit it altogether for less heat.

3/4 cup apple cider vinegar
1/2 cup vegetable oil
1 tablespoon water
1/2 cup sugar
1 teaspoon kosher salt
1 teaspoon freshly ground pepper
One 15-ounce can black-eyed peas, rinsed and drained
One 15-ounce can black beans, rinsed and drained
One 15-ounce can corn, drained
1/2 cup finely chopped red onion
1 green bell pepper, finely chopped
1 red bell pepper, finely chopped
1/4 cup finely diced jalapeno (remove seeds for less heat)
Tortilla chips, for serving

Steps:

  • Combine the vinegar, oil, water, sugar, salt and pepper in a medium saucepan over medium-low heat. Whisk together and simmer for 3 minutes then remove from the heat. Set aside to cool.
  • Meanwhile, combine the black-eyed peas, black beans and corn in a large bowl. Add the onion, bell peppers and jalapeno, then pour in the dressing and stir until well combined.
  • Serve the Texas caviar immediately with tortilla chips or cover and refrigerate for up to 24 hours.

2 (15 ounce) cans white corn, rinsed and drained
1 (4 ounce) can chopped green chiles, undrained
1 jalapeno chile pepper, seeded and finely chopped
1 red bell pepper - cored, seeded and finely chopped
1 green bell pepper - cored, seeded and finely chopped
1 small red onion, finely chopped
1 bunch cilantro leaves, finely chopped

Steps:

1 yellow bell pepper
1 orange bell pepper
1 red bell pepper
2 jalapeno peppers
1 (15 ounce) can black-eyed peas
1 (15 ounce) can black beans
1 (11 ounce) can white shoepeg corn
1 (16 ounce) bottle Italian dressing
4 roma tomatoes
1 bunch cilantro

Steps:

  • Remove membranes and seeds from peppers.
  • Dice peppers and place in a large plastic bowl (jalapenos should be finely chopped).
  • Drain and rinse the black beans, blackeye peas, and shoepeg corn and add to peppers.
  • Add italian dressing and stir well.
  • Cover and marinate in refrigerator for 8 hours.
  • Drain.
  • Dice roma tomatoes and cilantro and stir into mixture.
  • Serve with tortilla chips.

I saw this recipe in the Tyler newspaper and I don't even like blackeye peas and thought this might be good. Mentioned it to a friend and she had already made it the day before and loved it. Made last night and it is awesome (this coming from someone who hates New Years Day because I hold to the southern tradition of pork, greens and blackeye peas, which I gag on. But this is wonderful. Comes from Erica Cady 2007 Blackeyed Pea Festival in Athens, Texas. This is really better the longer and longer you let it sit.

1 cup diced tomato (I used can diced because of the season)

Black Beans - two 15-16 ounce cans. However
Canned Corn- one 15-16 ounce can (drained.)
Red Pepper- 1 chopped.
Onion- one small (I prefer sweet onion chopped or 1-2 green onions chopped.)
Garlic- one clove minced.
Cilantro- chopped (quantity as needed.)
Olive Oil- 1/2 cup. However (you could alternatively use Italian Salad Dressing, or salsa a combination of the choices.)
Lime Juice- 1 tablespoon.
Avocado- 1 (chopped.)
Seasonings as desired.

Steps:

  • The majority of this recipe can be made ahead. However, I would add the chopped avocado just before serving to prevent having to serve this Texas Caviar with any avocado pieces that may have turned brown. You can also add the part or all of the cilantro at this time as well.
  • As mentioned above, make sure that your beans or peas have been rinsed and drained before making this recipe. Once they are drained you can begin making this recipe.
  • In a large bowl, combine together the beans, peas, canned corn (also drained well first), chopped red pepper, chopped onion, and the minced garlic. Mix or toss these together well.
  • Next stir in the cilantro and olive oil (or Italian dressing/salsa). I suggest reserving a bit of the cilantro to use as a garnish to use when serving this as well.
  • Refrigerated this covered for at least an hour. When you are ready to serve this, toss in the avocado and any desired seasonings (salt, pepper etc) and top with remaining cilantro.
  • Serve with some great dipping chips

3 Roma tomatoes ( seeds removed and diced)
2 ripe avocados ( diced)
1 15 oz can black beans (rinsed and drained)
1 15 oz can black eyed peas (rinsed and drained)
1 ½ cups frozen sweet corn, thawed
1 bell pepper (diced, I used half a green and half a red, but color doesn't matter)
⅓ cup red onion (diced)
1 jalapeno pepper (seeds removed and diced into very small pieces)
⅓ cup Cilantro (finely chopped )
⅓ cup olive oil
2 Tablespoons red wine vinegar
2 Tablespoons lime juice (fresh-squeezed preferred)
1 teaspoon sugar
½ teaspoon salt
½ teaspoon pepper
¼ teaspoon garlic powder
Tortilla chips for serving

Steps:

  • Combine tomatoes, avocado, onion, black beans, black eyed peas, corn, pepper, jalapeno pepper, and cilantro in a large bowl. Toss/stir well so that ingredients are well-combined.
  • In a separate bowl, whisk together olive oil, lime juice, red wine vinegar, sugar, salt, pepper, and garlic powder.
  • Pour dressing over other ingredients and stir/toss very well.
  • Keep refrigerated. For best results refrigerate (covered) for one hour before serving so that the beans and other ingredients can soak in the dressing. Make sure to stir well before serving.

1 16 oz can black eyed peas, drained and rinsed well

½ cup red onion (finely chopped)

½ cup red bell pepper (chopped)
1 jalapeno pepper (cleaned, seeded and chopped - more or less pepper for preference)
½ cup cilantro (chopped)

Dressing:
1/2 cup cup olive oil

1 ½ teaspoons ground cumin
