3 lbs pork loin
2 (14 1/2 ounce) cans black beans
2 cups salsa
1 teaspoon chili powder
1 teaspoon cumin
1/2 teaspoon salt
1/2 teaspoon pepper
2 cloves crushed garlic
3 cups cooked rice

Steps:

  • place pork in crock pot and sprinkle seasoning all over.
  • add the beans, salsa, and garlic.
  • cook on low for 8 hours.
  • shred the pork and mix it all together.
  • serve over rice.

1 (8 ounce) can tomato sauce (1 cup)
1 cup bottled barbecue sauce
1 medium onion, thinly sliced
2 (4 1/2 ounce) cans diced green chilies
1/4 cup chili powder
1 teaspoon ground cumin
1 teaspoon dried oregano
1/4 teaspoon ground cinnamon
2 1/2 lbs well trimmed boneless pork loin roast
1/2 cup chopped cilantro

Steps:

  • Mix sauce ingredients in 3 quart or larger slow cooker. Add pork, then spoon sauce over pork to just cover.
  • Cover cooker and cook on high 3-1/2 hours or on low 8-10 hours, until pork is fork tender, remove pork to cutting board and using 2 forks, pull meat to shreds.
  • Pour sauce into serving bowl; stir in the cilantro and shredded pork.

In the search for the best pulled pork recipe there were several that I found that were appealing. I combined a couple recipes and added my own flare to make this delicious dish. The recipe is easy enough to include my kids. My 3 year old really enjoyed asking the butcher for some pork butt, while my 4 year old enjoyed applying the rub.

3 -4 lbs pork butt
2 large onions
1 cup ginger ale
16 ounces barbecue sauce (I used 4 oz Famous Dave's Texas Pit and 12 oz Zarda's Original)
1 tablespoon light brown sugar
1 tablespoon sugar
1 tablespoon paprika
1 tablespoon salt
1 teaspoon pepper
1 teaspoon dry mustard
1/4 teaspoon cayenne

Steps:

  • 1. 6 hours before cooking, mix all ingredients for the rub and apply the rub liberally onto the butt, cover with plastic, and store in the refrigerator.
  • 3. Slice one onion and place in crock pot.
  • 4. Put in the butt and cover with the other onion, sliced. Pour in the ginger ale. Cover and cook on LOW for about 12 hours, turning once or twice in the process to ensure more even cooking.
  • 5. Remove the meat, strain and save the onion and 1/4-1/2 cup of the liquid.
  • 6. With latex gloves, pull the pork apart by hand and add it back to the crockpot, discarding any remaining fat, bones, or skin. Most of the fat will have melted away.
  • 7. Depending on how dry the pork is in the crock pot, add 1/4-/12 cup of saved liquid to keep the pork most.
  • 8. Chop up the saved onion into tiny pieces and add back to the crock pot.
  • 9. Stir in the barbeque sauce.
  • 10. Continue to cook with the lid on for another 2-4 hours.
  • 11. Serve on hamburger buns, topped with more sauce, coleslaw, and sliced pickles.

5 lbs boston butt (also called pork shoulder)
1 lb light brown sugar (approximately)
1/4 cup Worcestershire sauce (approximately)
1 (28 ounce) bottle barbecue sauce (your favorite brand)

Steps:

  • I like to use a crockpot liner for this. Take Boston Butt and place in crockpot.
  • Cover meat with brown sugar. I usually make it about 1/2 inch thick on top and stick some to the sides.
  • Pour Worcestershire sauce over meat and down the sides until the bottom of the crockpot is JUST covered.
  • Cover and cook on low in crockpot for about 8 hours.
  • When finished, shred with two forks, add some of the juice from the crockpot to the meat, then add as much BBQ sauce as you would like.

My favorite easy way to cook pork for burritos or taco filling. I prefer using a slow cooker for this so I don't have to watch it. If you do it on the stove top, be careful not to burn it. Simmer slowly, stir frequestly. It will take about 3-4 hours on the stove or 6-8 in the crockpot.

3 lbs lean pork, cut into 2-3-inch pieces
2 tablespoons cooking oil
2 large onions, chopped
4 garlic cloves, minced
1 (16 ounce) can diced tomatoes with juice
3 -6 fresh chili peppers, chopped (havanero or jalapeno depending on the level of heat desired)
3 bay leaves
1 tablespoon ground cumin
1 tablespoon ground oregano
1 -2 cup water

Steps:

  • Heat oil in large pan until hot.
  • Add pork, stir until browned.
  • Add onion, garlic and chilies, cook and stir until onions are tender.
  • Add all spices and stir.
  • Add enough water to just cover meat.
  • Put in crock-pot on Hi for 6-8 hours until meat shreds. (You can help it by pulling meat apart with forks or by pressing meat onto side of pan when almost done.).
  • If not using crock-pot, simmer on top of stove on low heat for 3-4 hours until meat shreds, adding more water if needed to prevent sticking.
  • Serve with taco shells or as burritos with beans, sour cream, guacamole, etc.
