15-ounce can corn
1 cup fresh pico de gallo, aka fresh salsa (purchased)**
1/2 teaspoon kosher salt
1 teaspoon olive oil
Fresh cilantro, if desired (for garnish)

Steps:

  • Drain and rinse the black beans. Drain the corn. In a bowl, mix them with the pico de gallo, salt, and olive oil.
  • If desired, add torn cilantro. Serve immediately with a slotted spoon as a side salad, in a rice bowl, in tacos, or as a dip with tortilla chips.

These simple and healthy Black Bean Quesadillas are an easy dinner everyone loves. Flour tortillas filled with cheese, black beans, corn, onion, bell pepper and spices.

1 teaspoon olive oil
1 clove garlic (, minced)
1/4 small onion (, chopped)
1/4 bell pepper (any color, chopped)
15 ounce can black beans (, drained and rinsed)
1 heaping cup corn ((canned or frozen-thawed))
1/4 cup salsa
1 teaspoon light brown sugar
1/2 teaspoon cumin
1/2 teaspoon chili powder
2 cups shredded cheese ((monterrey jack, colby jack, or cheddar))
4 large flour tortillas
sour cream (, for serving)

Steps:

  • Add olive oil to a large skillet over medium high heat.
  • Add the onion and bell pepper and saute for 1-2 minutes.
  • Add garlic and saute for 30 seconds. Add black beans, corn, salsa, brown sugar, cumin and chili powder and stir to combine.
  • Reduce heat. Taste and adjust seasonings, if desired.
  • Heat another large skillet. Place one tortilla in the skillet. Add a sprinkle of cheese, followed by a heaping scoop of black bean and corn filling and spread into an even layer.
  • Top with another sprinkle of cheese. Add a tortilla on top and cook until the bottom tortilla is golden.
  • Use a large spatula to carefully flip the tortilla to the other side. Cook until cheese is melted and bottom tortilla is golden brown.
  • Serve with sour cream and salsa.

These Mexican Black Beans and Corn (Frijoles con Elote) get a flavor boost from a mixture called a sofrito that's made of chiles, onion and garlic dry roasted then blended together. Top with cheese and pumpkin seeds and it's a fantastic side dish.

1 Serrano chili - dry roasted
1 Fresno pepper (red chili - dry roasted)
1 onion - dry roasted
3 cloves garlic - dry roasted
1 tbsp vegetable oil
1 cup corn kernels (fresh or frozen)
2 cups cooked black beans (or 2 cans cooked)
1/4 cup roasted (salted pepitas (pumpkin seeds))
salt

Steps:

  • I usually grill these on the open flame to char and dry roast the chiles, onion and garlic. If that's not an option, then dry roast in a skillet. You can grill an ear to two of corn, too if you like. When making this year round it's not always easy to get fresh corn, so frozen works great.
  • Blend the roasted chiles, onion and garlic in a food processor until thoroughly combined. Set aside.
  • In a large skillet sauté the sofrito of chiles, onion and garlic over medium heat until liquid has evaporated, stirring constantly. Add cooked beans and corn to the chili mixture, stirring to incorporate. Simmer for another 5 minutes until warmed through.
  • Serve with chopped cilantro, cheese and the pepitas (roasted pumpkin seeds) sprinkled on top.

1 onion, diced
1 tablespoon kosher salt
2 1/2 teaspoons smoked paprika
1/2 teaspoon cayenne pepper, optional
4 ears corn, kernels removed or 2 cups frozen and thawed corn kernels
1 dried bay leaf
3/4 cup chicken broth
2 (15-ounce) cans black beans, rinsed and drained
2 tomatoes, chopped
6 ounces jicama, peeled and diced into 1/4-inch pieces (about 1 cup)
1/4 cup chopped fresh cilantro leaves
2 tablespoons lemon juice
2 tablespoons lime juice
3 tablespoons agave nectar or 2 tablespoons maple syrup
2 tablespoons lemon zest
2 tablespoons lime zest
1/4 cup extra-virgin olive oil
Kosher salt and freshly ground black pepper

Steps:

  • Salad: In a large skillet, heat the oil over medium-high heat. Add the onion, salt, smoked paprika, and cayenne pepper, if using. Cook for 6 to 8 minutes until soft. Add the corn kernels and bay leaf. Cook, stirring constantly, for 2 minutes. Add the broth and black beans. Bring the mixture to a boil, reduce the heat and simmer for 4 minutes. Add the tomatoes and jicama and stir until warmed through, about 1 minute. Remove the pan from the heat.
  • Dressing: In a small bowl, combine the lemon juice, lime juice, agave nectar (or maple syrup, if using), lemon zest, and lime zest. Whisk in the olive oil until the mixture is smooth. Season with salt and pepper, to taste.
  • Remove the bay leaf and put the salad in a serving bowl. Pour the dressing over the salad and mix well. Season with salt and pepper, to taste. Garnish with chopped cilantro and serve warm or at room temperature.

1 (15 ounce) can corn, drained
4 fresh tomatoes, diced
1/2 cup red onion, chopped

2 tablespoons fresh lime juice

1 1/2 tablespoons olive oil
1 large clove garlic, minced
1 small onion, finely chopped
1 can (15 1/2 ounces) black beans
2 tablespoons tomato puree
1 teaspoon dried oregano
1/4 cup canned green chiles, cut into 1/4-inch dice
1 cup fresh corn kernels
Salt and freshly ground pepper to taste
1 tablespoon coarsely chopped parsley leaves, for garnish

Steps:

  • Heat the olive oil in a medium saucepan over medium-low heat. Add the garlic and onions, and cook, stirring occasionally, until translucent and very soft, about 10 minutes.
  • Drain the black beans, and reserve 1/4 cup of the liquid. Add the beans, the reserved bean liquid, and the remaining ingredients, except the parsley, to saucepan; cover, raise heat to medium, and cook, stirring occasionally, 10 to 12 minutes. Remove from heat, transfer to a serving dish, and garnish with the parsley leaves. Serve immediately.

pico de gallo, to taste (optional)

Steps:
