2 tablespoons lime juice
2 tablespoons tequila
¼ cup olive oil
1 pinch garlic salt
1 pinch ground cumin
ground black pepper to taste
1 pound large shrimp, peeled and deveined
6 (10 inch) wooden skewers
1 large lime, quartered

Steps:

  • Whisk together the lime juice, tequila, olive oil, garlic salt, cumin, and black pepper in a bowl until well blended. Pour into a large resealable plastic bag; add the shrimp, seal bag and turn to coat evenly. Refrigerate 1 to 4 hours before grilling.
  • Soak skewers at least 30 minutes in water to prevent burning.
  • Preheat outdoor grill for medium-high heat. Lightly oil grill grate, and place about 4 inches from heat source.
  • Drain and discard marinade from shrimp. Thread shrimp onto prepared skewers, 5 to 6 per skewer.
  • Cook, uncovered, on preheated grill until shrimp turn pink, turning once, for 5 to 7 minutes. Serve with lime wedges for garnish.

3 tablespoons olive oil
3 tablespoons tequila
1 tablespoon lime zest, from about 2 limes
4 cloves garlic, minced
1¼ teaspoons ground ancho chili pepper
½ teaspoon ground coriander
¼ teaspoon dried oregano
1¼ teaspoons salt
½ teaspoon freshly ground black pepper
2 teaspoons honey
4 boneless skinless chicken breasts (or about 2 pounds), pounded to an even ½-inch thickness
1 lime, sliced into wedges, for serving (optional)

Steps:

  • Combine all of the ingredients except for the chicken breasts in a 1-gallon freezer bag. Close the bag and squish the marinade around to mix. Add the chicken breasts and massage the marinade into the meat until evenly coated. Seal the bag and place it in a bowl in the refrigerator (the bowl protects against leakage); marinate for at least 6 hours or overnight.
  • Clean the grill and preheat to high. Lightly dip a wad of paper towels in vegetable oil and, using tongs, carefully rub over the grates several times until glossy and coated. (Alternatively, you can spray the grates with a non-flammable cooking spray.) Place the chicken breasts on the grill and spoon any remaining marinade from the bag over top. Grill, covered, for 2 to 3 minutes per side (turning only once). Serve immediately with lime wedges.

1 cup roughly chopped garlic (about 3 bulbs)
3/4 cup freshly squeezed lime juice (about 8 large limes)
1/2 cup clear tequila
1/4 cup soy sauce
1 bunch roughly chopped fresh cilantro, leaves and stems
1 jalapeno pepper, seeded and diced
1 serrano pepper, seeded and diced
1 teaspoon cumin powder
1 tablespoon freshly cracked black pepper
1 1/2 to 2 pounds flank steak
12 corn tortillas, wrapped in foil
1/2 cup chopped fresh cilantro
1 bunch radishes, cleaned, ends cut and sliced
1/3 cup grated queso fresco cheese
2 ripe avocados, seeded and sliced
3 vine ripened tomatoes, sliced in wedges
Hot sauce, for serving

Steps:

  • Combine the garlic, lime juice, tequila, soy sauce, cilantro, peppers, cumin and black pepper in a resealable plastic gallon bag. Add the steak and let marinate in the refrigerator for 2 hours. Remove from the refrigerator, and let marinate at room temperature another 30 to 45 minutes.
  • Prepare a grill to medium-high heat. Remove the steak from the marinade, reserving the marinade. Put the marinade in small saucepot and bring to a boil. Then strain and reserve.
  • Put the tortillas on the corner of the grill and flip the package a few times to heat through while the steak is cooking
  • Place the steak on the grill. Cook for 4 minutes, turn 180 degrees, and cook for 3 minutes more (to create cross grill marks). Flip over and finish cooking for 3 to 5 minutes, depending on desired doneness. Remove from the grill to a cutting board and let rest, lightly covered, for 5 minutes.
  • Slice against the grain, and serve immediately with the reserved marinade, garnishes, tortillas and hot sauce.

Steps:

  • Combine the tequila, lime juice, orange juice, chili powder, jalapeno pepper, garlic, salt, and pepper in a large bowl. Add the chicken breasts. Refrigerate overnight.
  • Heat a grill with coals and brush the rack with oil to prevent the chicken from sticking. Remove the chicken breasts from the marinade, sprinkle well with salt and pepper, and grill them skin-side down for about 5 minutes, until nicely browned. 1/2 cup lime juice
1/4 cup tequila

1 teaspoon ground cumin
1 teaspoon adobo sauce
1/2 tablespoon freshly cracked pepper

Steps:

  • For the wings at home:
  • Preheat the oven to 350 degrees F.
  • Season the wings with salt and pepper. Arrange the chicken wings on a baking sheet in a single layer. Put in the preheated oven and cook for 45 minutes.
  • Remove the wings from the oven to a bowl and allow to cool. Cover and refrigerate until ready to finish at the event on the barbecue.
  • For the Tequila Lime sauce at home:
  • Combine all of the ingredients in a resealable gallon-size plastic bag and combine well.
  • For the wings tailgaiting:

  • In a resealable plastic bag, combine 3 tablespoons lime juice, tequila, 1 tablespoons cilantro, garlic and cumin. Add fish, seal bag and turn to coat; refrigerate, turning once, 1 hour. In a bowl, combine vinegar, oil, 2 teaspoons honey, 1/4 teaspoon salt and 1/4 teaspoon pepper. Add cabbage; toss well. 1 lemon, quartered
1 small onion, quartered
2 bay leaves
8 peppercorns

Steps:

  • In a small saucepan combine tequilla, lime juice and honey. Bring just to a boil to melt honey and evaporate most of the alcohol. Set aside.

1 fresh ripe jalapeno chile, minced (the red one)
2 stalks green onions, minced

4 large boneless skinless chicken thighs, about 2lbs
1 tbsp Mexican oregano
1 tsp ground cumin
1 tsp ancho chili powder
1/2 tsp smoked paprika
1 tsp garlic powder
1/4 tsp ground all spice
1 tsp salt
1 tsp black pepper
2 whole limes, squeezed for the juice
1/4 cup tequila
1 tbsp maple syrup or honey
fresh cilantro and more limes for garnishing

Steps:

  • Lay the chicken thighs out on a cutting board and trim any large pieces of skin or fat from them.
  • In a small bowl combine all of the spices and mix well together.
  • Sprinkle the spice rub generously over both sides of each chicken thigh.
  • Transfer the chicken to a 1 gallon zip lock bag.
  • In the same bowl as the spice mix, whisk together the lime juice, tequila and syrup.
  • Pour the liquid into the bag, squeeze to get all of the air from the bag and seal.
  • Massage the bag to make sure the chicken is completely covered in the marinade and liquid.
  • Let rest in the fridge for at least 4 hours or up to 24 hours.
  • Preheat your grill to high.
  • Using tongs, carefully place each thigh onto the grill and cook for about 5 minutes.
  • Turn the chicken over and repeat until the internal temperature reaches 165 degrees.
  • Place the chicken on a plate, cover with foil and let rest for 5 minutes.
  • Slice or chop into pieces and eat as is or use in another dish.

  • PREP THE TOFU: First, you’ll want to freeze your tofu. Place the whole container (do not open it) in the freezer overnight. In the morning, remove it from the freezer and set it in a shallow dish on your counter to thaw. This will take several hours. When the tofu is thawed, squeeze it gently over the sink and press it with a tofu press or on paper towels for at least 15 minutes to remove any excess liquid.
  • MARINATE: Slice the tofu into 8 equal “cutlets.” Use a fork to mix all the marinade ingredients in a large measuring cup. Pour a little marinade on the bottom of a shallow container and Place the cutlets on top. Then, pour the rest of the marinade over them, making sure each cutlet is coated. Cover and place them in your fridge for at least 30 minutes or overnight for best results.
  • BAKE: Preheat your oven to 350F and grab a large baking sheet. Place the cutlets on this baking sheet and bake them at 350F for 40 minutes, flipping them halfway through. Depending on the thickness / brand of tofu you’re using, you may want to flip and cook them another 10 - 15 minutes until they are browned and meaty. We end up cooking ours an extra 10 minutes most of the time.
  • SERVE: Finally, let your cutlets cool slightly before slicing them up for all your salads, tacos, nachos, and bowls. They will firm a bit as they cool. You can store leftovers in an air-tight container in the fridge for 1 week or freeze them for up to 8 weeks!

Sit the chicken pieces on a smallish, shallow roasting pan for about 30 minutes to allow them to come to room temperature. It's important that the chicken pieces sit on the pan without a lot of room to spare, or else the marinade will immediately evaporate in the hot oven. When you are ready to put it into the oven, pour half of the marinade over the chicken pieces and transfer to the hot oven for 25 minutes.
  • Take the chicken out of the oven, pour the other half of the reserved marinade over it, then put the chicken back in for another 25-30 minutes. Check it is cooked through before removing from the oven.
