- 1. BARS: Preheat oven to 350. Grease a 9 x 13" pan. Cream butter & sugar until fluffy. Add eggs, one at a time. Stir in vanilla, flour & baking powder. Mix thoroughly. Stir in coconut, zucchini and walnuts. Spread evenly in a well greased 9 x 13" pan and bake on 350 for approximately 40 minutes. Frost while still warm.
- 2. CINNAMON FROSTING: Mix all ingredients together until smooth. Frost while warm and cut into bars.
ZUCCHINI BARS WITH CREAM CHEESE FROSTING
Yummy way to use up that over-abundance of zucchini from your garden. This makes about 2 dozen bars.

- Combine oil, sugar, and eggs in a large mixing bowl; beat at medium speed until well blended.
- In another bowl, combine the flour and next 5 ingredients; stir well. Add the flour mixture to the creamed mixture, beating until well blended. Stir in zucchini.
- Pour the batter into an ungreased 15 x 10 x 1 inch jellyroll pan. Bake at 350 degrees for 25 minutes or until a wooden pick inserted in the center comes out clean. Let cool in the pan on a wire rack. Once cool, spread cream cheese frosting evenly over the top; cut into bars.

- Combine the cream cheese, butter, and vanilla in a small mixing bowl; beat at medium speed until light and fluffy. Add the powdered sugar, beating until the frosting is smooth. Spread on the cooled zucchini bars.

- Cook zucchini in lemon juice until tender, use often.
- Add 1 cup sugar, nutmeg and 1 teaspoon cinnamon and vanilla and let simmer for two minutes.
- While zucchini cooks, combine the flour, 2 cups sugar, salt and margarine in a large bowl and mix well.
- Add 1/2 cup of the crumb mixture to the zucchini to thicken, stir well, turn off the heat after thick.
- Pat 1/2 of the remaining crumb mixture into a greased 9x13-inch pan.
- Bake at 375°Fs for 10 minutes.
- Spread zucchini evenly over the crust.
- Add 1 teaspoon cinnamon to the remaining crumb mixture and spread over the top of the zucchini.
- Bake at 375°F for 30-40 minutes, until bubbling around the crust.
- Let cool before cutting into bars. Can be warmed up in microwave and top with ice cream.
