2 (2 1/2-3 lb) boneless turkey breast halves
salt & freshly ground black pepper, to taste
1 tablespoon chopped fresh flat-leaf parsley
2 teaspoons chopped fresh thyme
2 tablespoons canola oil
5 tablespoons unsalted butter
1 1/2 cups chicken or 1 1/2 cups turkey broth
2 tablespoons all-purpose flour
2 tablespoons madeira wine

Steps:

  • Preheat an oven to 350F degrees.
  • Season both sides of each turkey breast half with salt and pepper, then sprinkle each side evenly with the parsley and 1 teaspoons.

2 cups all-purpose flour
1 1/2 cups yellow cornmeal
6 tablespoons sugar
2 tablespoons baking powder
2 teaspoons salt
2 large eggs
1 1/3 cups milk
3/4 cup unsalted butter, melted
8 tablespoons unsalted butter, room temperature
1 small onion, finely chopped
2 celery ribs, finely chopped
1 garlic clove, minced
1 lb fresh mushrooms, finely chopped
1 shallot, minced
1/4 teaspoon dried thyme
1/4 teaspoon dried sage
salt & freshly ground black pepper (to taste)
1/2 cup milk (or as needed)
1 (14 lb) whole turkey, ready to cook
3 tablespoons chopped mixed fresh herbs (such as basil, parsley, sage, and tarragon)
1 tablespoon fresh lemon juice
1 cup madeira wine
8 ounces fresh cranberries
2 cups turkey stock
1 lb tangerine, juiced
2 tablespoons sugar

Steps:

  • Make Cornbread: Heat oven to 425 degrees. Lightly butter 13x9" baking pan. Mix flour, cornmeal, sugar, baking powder, and salt in mixing bowl. Whisk eggs, milk, and butter in small bowl until blended, then pour into dry ingredients and stir just until moistened. Spread batter evenly in prepared pan. Bake until pick inserted in center comes out clean, 35-40 minutes. Let cool completely in pan.
  • Make Stuffing: Heat 1 T. butter in large saucepan over medium heat. Add onion, celery, and garlic; cook until softened, about 5 minutes. Add mushrooms and 2 T. butter; cook until mushrooms are lightly browned about 5 minutes. Stir in sallot and remove from heat. Crumble cornbread into large mixing bowl. Add mushroom mixture, thyme, sage, salt, and pepper and toss to combine. Stir in enough milk to lightly moisten stuffing. Add 1 T. butter and combine.
  • Make Turkey: Heat oven to 325 degrees. Rinse turkey inside and out and pat dry. Combine 4 T. butter, the fresh herbs, lemon juice, and salt and pepper to taste. Using fingers, lift skin from breast and spread butter mixture evenly under skin. Sprinkle cavities lightly with salt and pepper.
  • Place turkey on rack in large roasting pan and spoon stuffing loosely into both cavities. Tuck skin at neck under, then fold iwngs under and tie legs together.
  • Roast turkey 2-3/4 hours, basting with pan juices every 30 minutes. Increase heat to 350 degrees and pour Madeira over turkey. Roast until meat thermometer inserted in breast meat registers 170 degrees, about 30 minutes longer. Turkey should be glazed and brown. Transfer to platter and let stand.
  • Measure and reserve 1/4 cup cranberries. Simmer remaining cranberries and 1 cup turkey stock in medium saucepan over medium heat until cranberries pop. Puree through food mill or press through fine sieve. Degrease pan juices in roasting pan and add tangerine juice and remaining 1 cup turkey stock. Boil, scraping loose browned bits on bottom of pan, until reduced by half, about 20 minutes. Strain into saucepan and stir in cranberry puree, reserved 1/4 cup cranberries, and the sugar. Season to taste with salt and pepper. Simmer over medium heat just until cranberries pop, about 5 minutes. Pour into sauceboat.
  • Carve turkey and serve with sauce.

1/2 cup butter, melted
1 cup madeira wine
3 tablespoons soy sauce
3 tablespoons Worcestershire sauce
1 lemon, cut in half
1 (12 -15 lb) turkey
vegetable oil cooking spray
1 -3 tablespoon cornstarch
1/4 cup water

Steps:

  • Combine first 4 ingredients and juice of 1 lemon half; set aside.
  • Remove giblets and neck from turkey; reserve for other uses. Rinse turkey with cold water; pat dry. Tie ends of legs to tail with cord if legs are not tucked under flap of skin. Lift wingtips up and over back, and tuck under bird.
  • Place turkey on rack of a roasting pan, breast side up; rub turkey with other lemon half, squeezing juice over turkey. Spray turkey with cooking spray. Insert meat thermometer into meaty part of thigh, making sure it does not touch bone.
  • Bake at 325 degrees for 3 hours or until meat thermometer reaches 185 degrees, basting every 30 minutes after the first hour with Madeira mixture. If turkey starts to brown too much, cover with aluminum foil.
  • When turkey is 2/3 done, cut the cord or band of skin holding drumsticks to tail; this will ensure that thighs are cooked internally. Turkey is done when drumsticks are easy to move up and down. Let stand 15 minutes before carving.
  • Measure remaining basting mixture and pan juices from turkey. Using 1 tablespoon cornstarch to each cup of drippings, combine cornstarch and 1/4 cup water, stirring until smooth; stir into pan drippings. Bring to a boil; boil 1 minute, stirring constantly. Serve.

5 lbs whole turkey breast, thawed if frozen
1/2 cup butter, melted
1/4 cup dry white wine
2 tablespoons chopped fresh thyme
1 teaspoon salt
1 teaspoon paprika
2 garlic cloves, finely chopped
2 teaspoons cornstarch
2 tablespoons cold water

Steps:

  • Heat oven to 325º.
  • Place turkey, skin side up, in a shallow roasting pan and insert ovenproof thermometer in the thickest part of the turkey making sure it does not touch the bone.
  • Roast 2 to 2 1/2 hours.
  • While turkey is roasting, mix butter, wine, thyme, salt, paprika, and garlic. After turkey has roasted 1 hour, brush with half of the butter mixture. Roast for 30 more minutes and then brush with remaining butter mixture. Roast for 1 hour longer or until thermometer reads 170º and turkey is no longer pink when you cut into center.
  • When turkey is done, place on platter and cover with foil to keep warm Let rest about 15 so that juices can redistribute.
  • To make gravy: While turkey is resting, pour pan drippings into measuring cup and skim fat from drippings. Add enough water to drippings to measure 2 cups. Heat drippings to boiling in 1 quart saucepan. Mix cornstarch and cold water; stir into drippings. Boil and stir 1 minute.
  • Serve gravy with turkey.

6 tablespoons butter or margarine
8 slices turkey breast tenderloin cooked, 1/4 -inch thick
8 prosciutto thin slices or boiled ham
16 mushrooms fresh, washed, stemmed and left whole
Salt and pepper to taste
8 slices mozzarella cheese (1 8-ounce package)
1/2 cup cream
1/2 cup madeira wine (dry)
2 tablespoons parsley chopped fresh

Steps:

  • In a large skillet, heat 4 tablespoons butter or margarine and sauté turkey slices to coat well. Remove and keep warm. Add a bit more butter or margarine if needed, and sauté ham slices for about 1 minute on each side. Remove and keep warm. Sauté mushroom caps in the same skillet for 5 minutes sprinkle with salt and pepper.In an attractive, shallow oven platter, arrange the turkey slices overlapping. Then alternate 1 slice each of ham and mozzarella cheese on the turkey slices. Place the mushroom caps around the meat-cheese combination. Mix the cream and Madeira together, pour over the meat mixture, spooning over mushrooms. Add sprinkle of pepper. Bake in 350° oven 15 to 20 minutes, basting a couple of times, just long enough to heat through and melt cheese. Sprinkle with parsley just before serving.
