This pork loin is very easy to make and comes out delicious and juicy every time. It's a real crowd-pleaser, especially served with mashed potatoes.

3 lbs pork loin
2 tablespoons chopped garlic
1 teaspoon salt
1 teaspoon pepper
2 tablespoons butter
1 small chopped onion
1/4 cup olive oil

Steps:

  • Heat oven to 350°F.
  • Melt butter in roasting pan and sauté onion.
  • Combine remaining ingredients in a small bowl.
  • Rub over loin.
  • Place loin on onions in roasting pan.
  • Roast until center reaches 160°F.
  • Serve.

6 cloves garlic
2 tablespoons freshly cracked black pepper
1 tablespoon sea salt
2 tablespoon prepared horseradish
5 tablespoons fresh thyme leaves, finely chopped
1 (4-pound) beef tenderloin, trimmed of all visible fat
Horseradish Cream, recipe follows
1/3 cup prepared horseradish
1/3 cup non-fat yogurt
1/3 cup buttermilk

Steps:

  • Preheat oven to 400 degrees F.
  • In a small food processor, puree the garlic, pepper, salt, horseradish, and thyme until smooth. Place the tenderloin on a clean work surface and cover evenly with the horseradish paste.
  • Place the coated tenderloin on a roasting rack. Roast for 30 minutes or until meat thermometer registers 140 degrees F. Remove from the oven and let rest for 5 minutes. Slice and serve warm with horseradish cream.
  • In a small bowl, mix the horseradish, yogurt, and buttermilk. Cover and place in refrigerator for at least 30 minutes.

2 pork tenderloin
2 teaspoons salt
1/4-1/2 teaspoon fresh ground black pepper
1 teaspoon cumin
1 teaspoon chili powder
1 teaspoon cinnamon
2 -3 tablespoons olive oil
1 cup brown sugar
2 tablespoons finey chopped garlic
1 teaspoon Tabasco sauce (or adjust to suit heat level)

Steps:

  • In a small bowl stir together the salt, black pepper, cumin, chili powder and cinnamon.
  • Using clean hands rub the spice mixture over the pork to coat well.
  • Heat a large heavy oven-proof skillet with oil over medium-high heat until very hot.
  • Add in tenderloins (if you have a large enough skillet to brown both at the same time).
  • Brown the pork on all sides then leave in the skillet.
  • Set oven to 350 degrees F.
  • To make the glaze: Stir together brown sugar, garlic and Tabasco; pat onto the top of each tenderloin.
  • Roast in the middle of the oven for about 20-22 minutes, or until a thermometer registers 140°F.
  • Let sit in the skillet for 10 minutes at room temperature (the temperature of the pork will rise to about 155F while standing for the 10 minutes).
  • Remove to a board and slice.
  • Delicious!

3/4 cup A.1. Original Sauce, divided
1/4 cup dry red wine or 1/4 cup water
1/4 cup onion, finely chopped
16 ounces beef tenderloin steaks, 1 inch thick

Steps:

  • Place unpeeled garlic on baking sheet.
  • Bake at 500°F for 10 to 15 minutes or until soft; cool.
  • Squeeze pulp from skins; chop slightly.
  • Combine garlic pulp, 1/2 cup steak sauce, wine or water and onion in small saucepan; heat to a boil.
  • Reduce heat; simmer for 5 minutes.
  • Keep warm.
  • Grill or broil steaks for 6 to 8 minutes on each side or until desired doneness, brushing occasionally with remaining steak sauce.
  • Serve steaks with warm garlic sauce.

1 (5 pound) whole beef tenderloin
6 tablespoons olive oil
8 large garlic cloves, minced
2 tablespoons minced fresh rosemary
1 tablespoon dried thyme leaves
2 tablespoons coarsely ground black pepper
1 tablespoon salt

Steps:

  • Prepare beef: Trim off excess fat with a sharp knife. Fold thin tip end under to approximate the thickness of the rest of the roast. Tie with butcher's twine, then keep tying the roast with twine every 11/2 to 2 inches (to help the roast keep its shape). Snip silverskin with scissors to keep roast from bowing during cooking. Then, mix oil, garlic, rosemary, thyme, pepper and salt; rub over roast to coat. Set meat aside.
  • Either build a charcoal fire in half the grill or turn all gas burners on high for 10 minutes. Lubricate grate with an oil-soaked rag using tongs. Place beef on hot rack and close lid; grill until well-seared, about 5 minutes. Turn meat and close lid; grill until well-seared on second side, another 5 minutes.
  • Move meat to the charcoal grill's cool side, or turn off burner directly underneath the meat and turn remaining one or two burners (depending on grill style) to medium. Cook until a meat thermometer inserted in the thickest section registers 130 degrees for rosy pink, 45 to 60 minutes, depending on tenderloin size and grill. Let meat rest 15 minutes before carving.

4 (4 ounce) beef tenderloin steaks (about 1" thick)
2 whole garlic heads (separated but not peeled)
1/2 cup A.1. Original Sauce
1 cup sliced mushrooms
1/4 cup dry red wine
1/4 cup finely chopped onion
1 teaspoon sugar
2 teaspoons garlic granules
extra virgin olive oil (if using skillet)

Steps:

  • Place unpeeled garlic cloves on baking sheet.
  • Bake at 500 degrees for 15 to 20 minutes or until garlic is soft,& then allow to cool.
  • Squeeze the garlic pulp from the skins.
  • Chop the pulp slightly.
  • In a small sauce pan, combine the garlic pulp, 1/4 cup steak sauce, granulated garlic, wine& onion.
  • Heat to a boil,& then reduce the heat, add the mushrooms& sugar,& simmer for 5 minutes.
  • Grill steaks on grill or in a skillet oiled with extra-virgin olive oil over medium heat 5 minutes on each side or until done, brushing occasionally with remaining steak sauce.
  • Serve the tenderloins topped with the garlic sauce.
