Mini Zucchini Pizzas are the perfect low carb way to curb a pizza craving and use up your zucchini crop! Win-Win!

1/3 cup of homemade tomato sauce or no sugar added sauce like Rao's
1/2 zucchini, thinly sliced
2 1/2 tbsp shaved Parmesan OR shredded mozzarella
garlic powder
crushed red pepper
olive oil spray

Steps:

  • Set oven to Broil on High
  • Spread zucchini out on a baking pan covered in foil or parchment paper
  • Spray with olive oil spray and sprinkle with garlic powder and crushed red pepper
  • Broil for a few minutes until zucchini starts to brown
  • Remove pan from oven and flip zucchini slices. Season again.
  • Top each mini pizza with sauce, cheese and sprinkle with oregano.
  • Place in broiler again until cheese is melted and golden Enjoy!

2 medium zucchinis, sliced
3 Tbsp pizza sauce
2 Tbsp unsalted tomato paste
1/4 tsp. oregano
Dash of garlic powder
3/4 cup reduced-fat mozzarella cheese, shredded
1/4 cup reduced-fat parmesan cheese, shredded
4 Turkey pepperonis, cut in half
8 olives, pitted and chopped

Steps:

  • Preheat your broiler on high.
  • Slice your zucchinis at a slight diagonal so that you have about 16 pieces and place zucchini slices on a baking sheet and set aside. Mix together your pizza sauce, tomato paste, oregano and garlic powder and spread about one teaspoon over each slice of zucchini.
  • Mix together your cheeses and sprinkle about a tablespoon over each zucchini slice. Then add your chopped olives and pepperoni slices on top of the cheese and place baking sheet in the oven to broil for about 3 to 5 minutes, until cheese is melted.
  • Serve immediately and enjoy!

  • Preheat the oven 400 degrees F. Line a baking sheet with aluminum foil and spray with cooking spray.
  • Slice the zucchini 1/4-inch thick; you should get about 24 slices. Place the slices on the prepared baking sheet and sprinkle with salt. Top each slice with 1/2 teaspoon marinara sauce and 1 teaspoon mozzarella.

Steps:

  • Cut your zucchini slices about half an inch thick.
  • To remove moisture, generously salt both sides and allow to rest in a colander for 15 minutes.
  • Preheat oven to 400°F.
  • After the zucchini has rested, wipe off salt and squeeze between paper towel to remove any excess moisture.
  • Place zucchini on baking sheet.
  • Spread a spoonful of pizza sauce on each slice, followed by some shredded cheese (I used cheddar), a slice or two of pepperoni, some tomato slices with seeds removed and some slices of red onion.
