1 tablespoon soy sauce
1 teaspoon minced fresh ginger root
1 teaspoon minced garlic
1 teaspoon olive oil
1 pound pork tenderloin, cut into 3/4-inch slices
⅓ cup salsa
1 tablespoon seedless raspberry preserves
2 tablespoons chopped fresh cilantro

Steps:

  • Mix soy sauce, ginger, and garlic in a small bowl.
  • Heat oil in a large nonstick skillet over medium-high heat. Arrange pork slices in a single layer in the skillet. Spoon soy sauce mixture over the pork. Cook pork until completely browned and just slightly pink in the center, about 3 minutes per side. An instant-read thermometer inserted into the center should read at least 145 degrees F (63 degrees C). Remove pork to a plate, retaining juices in the skillet.
  • Stir salsa and raspberry preserves into the drippings in the skillet; cook and stir until slightly thickened, about 30 seconds. Spoon sauce over pork slices and top with cilantro.

1 pound pork tenderloin, cubed
1 tablespoon olive oil
salt and pepper to taste
½ teaspoon ground cinnamon
1 cup butternut squash, cubed
1 onion, chopped
½ teaspoon ground cloves
¼ teaspoon ground mace
2 tart apples - peeled, cored and chopped
1 cup dried cranberries
2 tablespoons brown sugar
½ cup apple juice
½ cup chopped walnuts, toasted
salt and pepper to taste

Steps:

  • Heat oil in a large skillet over medium heat. Add pork and saute until lightly browned, about 3 to 4 minutes. Stir in cinnamon and season with salt and pepper to taste. Remove pork from skillet and set aside.
  • To same skillet add squash and saute for 4 minutes. Add additional oil if needed. Stir in onion and saute until soft. Stir in the cloves, mace, apples, cranberries and brown sugar. Saute for 4 to 5 minutes. Stir in the apple juice, reduce heat and simmer until apples are tender. Stir in reserved pork and cook for about 5 more minutes. Add chopped walnuts just before serving.

2 lbs boneless pork loin, cubed
1 medium onion, chopped
3 cloves garlic, minced
1/2 cup orange juice, fresh is best
1/4 cup lime juice, fresh is best
1 tablespoon brown sugar
1 habaneros or 1 jalapeno pepper, seeded and finely chopped
1/4 teaspoon salt
1/2 teaspoon turmeric
1/8 teaspoon black pepper

Steps:

  • In a large skillet, heat vegetable oil over medium heat.
  • Brown pork cubes for 6 to 8 minutes stirring occasionally.
  • Add the onion and garlic, lower heat to medium-low and cook for 2 minutes.
  • Add the remaining ingredients and bring to a simmer, lower heat and cook, covered, over low heat for 40 or 50 minutes till pork is tender.
  • Uncover pan and cook over medium-high heat for 5 to 10 minutes, until juices have reduced to a thick glaze.
  • Serve warm.

2 tablespoons cumin seeds, toasted and ground
1 tablespoon freshly ground black pepper
1/2 cup coarse salt
1/2 cup light-brown sugar or cane sugar
1 (3-pound) pork belly
Zest of 1 orange
1 1/4 cups freshly squeezed orange juice
2 sticks cinnamon
1/3 cup maple syrup
2 cups homemade or store-bought low-sodium chicken stock

Steps:

  • In a small skillet over medium heat, toast chiles until charred and fragrant, 1 to 2 minutes. Remove chiles from skillet and set aside. Add cumin seeds to skillet and toast until fragrant, 1 to 2 minutes. Place chiles and cumin seeds in a spice grinder and finely grind. Transfer to a medium bowl along with black pepper, salt, and sugar. Remove two tablespoons of the spice mixture and set aside to make the glaze.
  • Rub remaining spice mixture all over pork belly. Cover and refrigerate for 6 to 8 hours.
  • In a small saucepan, combine reserved spice mixture, orange zest, 1/4 cup orange juice, cinnamon sticks, and maple syrup. Bring to a simmer over medium-low heat and cook until slightly thickened and heated through, about 5 minutes. Remove from heat and set glaze aside.
  • Preheat oven to 300 degrees. Remove pork belly from refrigerator and rinse off spice mixture; pat dry with paper towels. Add remaining 1 cup orange juice and chicken stock to a roasting pan. Place over medium-high heat and cook until liquid just comes to a simmer. Add pork, fat side up, to roasting pan. Transfer to oven and cook until meat is very tender and easily pierced with the tip of a sharp knife, 2 to 2 1/2 hours.
  • Increase oven temperature to 425 degrees. Cook pork belly until browned and crisp, 30 to 40 minutes more, basting with reserved glaze every 10 minutes.
  • Remove pork from roasting pan and transfer to a cutting board; let stand for 10 minutes before slicing into 1/2-by-3-inch pieces.

3/4 teaspoon coarse salt
1/4 teaspoon freshly ground black pepper
3/4 teaspoon ground cumin, divided
1 tablespoon vegetable oil
1 large clove garlic, minced
1/2-1 canned chipotle pepper in adobo sauce, rough chopped
2 tablespoons Worcestershire sauce
1/2 cup ketchup
1/2 teaspoon apple cider vinegar
1/4 cup peach preserves (or 12 ounces ripe fresh peaches, diced)
12 slider buns, split and lightly toasted
1 cup pickles (store-bought or homemade)

Steps:

  • Preheat oven to 375°F.
  • Rub the pork loin all over with the salt, pepper, and 1/2 teaspoon cumin.
  • In a large skillet over medium-high heat, add the oil and swirl to coat the pan. Sear the pork loin on all sides until golden brown. Transfer to a roasting pan. Bake for 20 minutes.
  • Add the garlic and chipotle pepper to the skillet and place over low heat. Saute until fragrant and lightly golden, about 30 seconds. Deglaze the pan with Worcestershire sauce.
  • Add the remaining 1/4 teaspoon cumin, ketchup, vinegar, and peach preserves and bring to a boil. Reduce the heat to a simmer and cook for several more minutes.
  • Remove from heat and allow the sauce to cool to room temperature. For a completely smooth sauce, pulse in a food processor or blender.
  • Baste the pork with 2 tablespoons of the sauce. Return it to the oven for about 5-8 minutes, until fully cooked and the internal temperature reaches 160°F. Remove from oven. Allow the pork to rest for 5 minutes, and then thinly slice against the grain.
  • To assemble the sliders, top the bottom half of each bun with a few slices of the pork, several pickles, a heaping spoonful of the sauce, and the top bun.

  • For the sweet and spicy marinade: Put the oil, cilantro, honey, lime juice, thyme, garlic, jalapenos, 1 teaspoon each salt and pepper in a food processor and pulse to puree. Transfer the mixture to a nonreactive container, add the pork chops and toss to combine. Cover and refrigerate for at least 30 minutes and up to 2 hours before cooking.
  • For the squash and zucchini: Heat 1 tablespoon of the oil in a large skillet over medium-high heat. Add the zucchini and a pinch of salt and cook, stirring, until the zucchini is light brown and tender, about 3 minutes. Transfer to a plate. Repeat with the remaining 1 tablespoon olive oil, yellow squash and a pinch of salt, then transfer the cooked squash to the plate. Add the scallions to the skillet and cook, stirring once or twice, until lightly charred. Add the tomato, jalapeno and the cooked zucchini and squash and stir to combine. Add the cilantro and season with salt. Set aside.
  • Prepare an outdoor grill for medium-high heat.
  • Brush the grill grates with oil. Grill the pork chops until marked and cooked through, 4 to 5 minutes per side. Transfer to a cutting board and thinly slice.
  • Serve with the warm tortillas, the squash and zucchini mixture and toppings.

1/4 cup distilled white vinegar
1/2 cup coarsely chopped fresh cilantro, plus more for serving

1/4 cup apricot jam
3 tablespoons sambal oelek or chili-garlic sauce
1 head broccoli (12 ounces), cut into large florets
3 small sweet potatoes, scrubbed and cut into 1-inch wedges
1/4 cup vegetable oil, plus more for drizzling
4 bone-in pork chops (each 1 inch thick), preferably rib end

Steps:

  • Preheat oven to 475°F, with a rimmed baking sheet on center rack and another rack in top position. Stir together cucumbers, vinegar, and 2 tablespoons cilantro; season with salt and set aside. In a small bowl, stir together jam and sambal oelek; set aside. In another bowl, toss broccoli and sweet potatoes with 3 tablespoons oil; season.
  • Remove sheet from oven; drizzle with remaining 1 tablespoon oil, then spread broccoli mixture in a single layer. Roast, flipping once, until charred in places, 22 to 25 minutes. Transfer to a plate; toss with remaining cilantro. Switch oven to broil.
  • Season chops with salt and pepper; place on same baking sheet and broil on top rack until beginning to brown, about 5 minutes. Flip; spread reserved jam mixture over chops. Broil until glaze is bubbly and chops are cooked through, about 2 minutes. Return broccoli mixture to sheet; broil 30 seconds. Serve with cucumber salad, topped with cilantro.

6 thick pork chops
2 -3 tablespoons olive oil
1 teaspoon dried tarragon leaves
salt & freshly ground black pepper

1/2 cup dark brown sugar (3 oz)
1 tablespoon ground cinnamon
1 ounce butter
1 large lemon, juice of
1/4 cup water

Steps:

  • Rub pork chops with oil, and sprinkle both sides with tarragon, salt and pepper.
  • Heat griddle over high heat, spray with a little vegetable oil, and quickly brown chops on each side to seal in the juices.
  • Toss the sliced apples and onions together, then arrange in the bottom of a casserole dish which is large enough to hold the chops in one layer.
  • Mix brown sugar and cinnamon together in a bowl, then sprinkle half the mixture over the apples and onions.
  • When the chops are nicely browned, add them to the casserole dish, and sprinkle with remaining brown sugar and cinnamon.
  • Combine lemon juice and water in a small jug and gently and carefully (so as not to disturb the brown sugar mix) pour this over the chops.
  • Dot all over with little knobs of butter.
  • Cover casserole dish with a lid or alfoil, and bake in a moderate oven for about and hour, or until tender, uncovering for the last 10 minutes of cooking time.

Steps:

  • For the pork marinade, place the diced pork into an ovenproof dish. Finely chop the coriander, spring onions, red chillies, garlic and ginger and add to the pork. Pour over the honey, soy sauce and oil, add the chinese 5 spice and give it a good mix, so the pork is fully coated. Cover with foil and put in the fridge for 4-6 hours.
  • When the pork has finished marinating, preheat the oven to 220C/200C fan assisted.
  • When the oven has reached the right temperature, put the foil covered pork on a middle shelf. The pork should take 30 mins to cook, stir it halfway through and remove the foil for the last 10 mins.
  • Meanwhile, slice the vegetables and boil the noodles according to the pack instructions. Once the noodles have cooked and are being strained, heat the oil in a wok. It is important that the noodles dry out as much as possible. When the oil is hot add the vegetables, you do not want them to fry to quickly so put them on a low heat. Test the vegetables after 7 mins, they should still slightly crunchy.
  • Next, add the soy sauce, the noodles and the pork with the juice from the oven dish, carry on frying that for 1 min, garnish with the chopped coriander and it is ready to serve!

  • Preheat the oven to 350 degrees F. Rinse and dry the pork shoulder.
  • Mix together the brown sugar, garlic, cumin, salt, and cayenne. Rub the mixture generously and evenly over the pork shoulder.
  • In a large roasting pan or Dutch oven, add the chopped onions, broth, and cola. Place the seasoned pork in the Dutch oven and roast for 4 to 6 hours, checking the pork every hour for tenderness and liquid level.
