MARINATED HAM STEAK FOR 2
In this downsized main dish, ham steaks are marinated in a tasty brown sugar mixture, then grilled to sizzling perfection. The recipe is shared by Maribeth Edwards of Follansbee, West Virginia.

- In a large resealable plastic bag, combine the first six ingredients. Add ham; seal bag and turn to coat. Refrigerate for at least 2 hours, turning occasionally. , Drain and reserve marinade. Grill ham, uncovered, over medium-hot heat for 3-4 minutes on each side, basting frequently with reserved marinade. Cut in half to serve.

HAM STEAK
Steps:
- Pat the ham steak dry with a paper towel and cut in half if needed to fit in the skillet. Set aside.
- Add the bacon to a large frypan or skillet over medium-high heat. Cook for 6-8 minutes, turning about half-way through until it is done to your liking. Remove from the pan and set aside on a plate lined with paper towels. Have a snack or save it for another use.
- Add the ham steak to the bacon grease and sear for about 3 1/2 minutes on the first side. Then, flip and sear for about 2 minutes more.
- Remove from the pan, and brush both sides with maple syrup. Serve and enjoy.

- Preheat oven to 375 degrees F (190 degrees C).
- Mix water, brown sugar, Worcestershire sauce, and cloves in a baking dish. Arrange ham steaks in baking dish, coating with sugar mixture. Add more water as needed to cover ham.
- Bake in preheated oven until ham is tender, 35 to 45 minutes.

- Pounding. Using a meat mallet (or kitchen mallet) to pound steaks helps soften and tenderize the meat. Simply place the meat in between pieces of plastic wrap or wax paper and pound it prior to cooking.
- Salting. Most cuts of steak benefit from being salted up to an hour in advance of cooking, but especially tougher cuts. In addition to seasoning the steaks, salt helps break down proteins and make the meat more tender.
- Marinating. Make a marinade with acidic components—such as citrus juice, buttermilk, yogurt, wine, vinegar or soda—to help break down tough connective tissue and muscle fibers.
- Velveting. Velveting is a Chinese method of marinating meat in a cornstarch-based slurry prior to cooking. The cornstarch mixture is typically made with equal parts cornstarch, soy sauce and sesame oil (or vegetable or peanut oil), along with flavor components such as rice vinegar, Shaoxing wine or oyster sauce.
- Slow Cooking. The process of low-and-slow cooking breaks down the connective tissue and releases collagen, resulting in supple, shreddable meat. Slow cooking applications include braising, barbecuing and sous vide (cooking proteins in a vacuum sealed bag immersed in warm water).
