Ten-minute pasta image

This meal is quicker to get on the table than oven chips and it's full of fresh vegetables - making it perfect for kids

350g pasta
1 carrot , roughly chopped
½ small onion , roughly chopped
½ stick celery , roughly chopped
6-8 ripe plum tomato , roughly chopped
1 tsp dried oregano
1 tsp red pesto
2 tbsp raspberry vinegar
grated parmesan and basil leaves, to serve

Steps:

  • Cook the pasta according to the pack instructions. Meanwhile, add everything else apart from the parmesan and basil to a food processor and whizz together until you get a smooth paste.
  • Tip into a saucepan and bring to the boil, then reduce the heat to a simmer and leave to cook for 5 mins.
  • Drain the pasta, toss together with the tomato sauce, then serve with the parmesan and basil leaves.

I cut this out of my local newspaper in 1988 because the ingredients intrigued me. After making it, I wrote above the printed recipe, "I Love This!! I still do.

Number Of Ingredients 10

1 lb linguine or 1 lb fettuccine
4 ounces butter
20 small fresh shiitake mushrooms, chopped
1/4 lb sun-dried tomato
1/2 cup coarsely chopped walnuts (to taste)
1 tablespoon capers
8 ounces heavy whipping cream
1/4 cup dry sherry
fresh parmesan cheese
fresh pepper, ground

Steps:

  • Melt butter over low heat.
  • Add chopped mushrooms.
  • Meanwhile, rinse sun-dried tomatoes in warm water & slice in strips.
  • Cook pasta.
  • Add walnuts, capers and tomatoes to mushrooms & saute 5 minutes. Stir frequently.
  • Add half the cream, stir add sherry.
  • Add a few turns of ground pepper, then rest of cream.
  • In last minute, sprinkle genrously with fresh Parmesan cheese. If sauce is too thick, add a little more sherry.
  • Rinse pasta, put in large bowl, toss with sauce & sprinkle with more cheese.

  • Marmite and pancetta spaghetti. Serves 4 Prep 5 mins Cook 10 minsHeat 1 tbsp olive oil in a frying pan, add 200g diced pancetta and fry for 8-10 mins or until crispy.
  • Avocado and smoked salmon spaghetti. Serves 2 Prep 5 mins Cook 10 minsBlend the flesh of 1 ripe avocado in a food processor along with 2 tbsp extra virgin olive oil, 1 garlic clove, a handful of chopped fresh parsley, a squeeze of lemon juice and a good pinch of salt and pepper until very smooth.
  • Garlic butter prawns. Serves 2 Prep 10 mins Cook 10 minsVery gently cook 2-3 chopped garlic cloves in 50g butter in a pan until softened. Add 175g pack raw shelled king prawns and cook until they just turn from grey to pink.
