Simple, easy comfort food. This is a quick and classic recipe from my mother-in-law. Tastes just like tater tot hot dish should!

1 lb ground beef
1 medium onion, chopped
1 (10 1/2 ounce) can cream of chicken soup
1 (15 1/4 ounce) can corn, drained
1/4 cup milk
1 cup cheddar cheese, shredded
1 (32 ounce) bag frozen tater tots
pepper, to taste

Steps:

  • Preheat oven to 350 degrees.
  • Brown beef with onion. Drain fat.
  • Add corn.
  • Mix soup, milk, 2/3 cup of cheese and pepper. Add to beef.
  • Place in a glass dish to bake.
  • Top with tater tots and rest of cheese.
  • Bake covered for 45 minutes, uncover and bake additional 15 minutes.

1 -2 lb hamburger
1/4 small onion
2 (10 1/2 ounce) cans cream of chicken soup (any cream soup I guess, I like to use one with herbs)
1 (16 ounce) bag frozen mixed vegetables
1 (16 ounce) bag tater tots

Steps:

  • Brown hamburger on skillet.
  • While browning, chop onion into small pieces and add onion to pan with beef (I like my onion still crunchy so I don't keep it in the pan long).
  • Drain grease from hamburger and add in the cream soup; stir until mixed.
  • Put beef soup mixture in bottom of baking dish; spread so it is even. Layer the frozen veggies on top and then cover entire dish with tater tots.
  • Bake uncovered for 30-40 minutes at 425° (till it smells done).

Hotdish is an easy, one-dish dinner often served in Minnesota at such large gatherings as family reunions, potlucks or church suppers. Don't be turned off by its humble appearance; the combination of cream of mushroom soup, corn, green beans, beef and a delightful crispy potato topping (the more taters, the better!) is universally likeable.

1/4 cup extra-virgin olive oil
1 medium yellow onion, finely chopped (about 2 cups)
1 pound 80-percent lean ground beef
Kosher salt and freshly ground black pepper
2 cups frozen cut green beans, thawed (8 ounces)
1 3/4 cups frozen corn kernels, thawed (8 ounces)
Two 10-ounce cans condensed cream of mushroom soup
1 pound frozen potato tots

Steps:

  • Preheat the oven to 350 degrees F.
  • Add the oil to a large skillet over medium heat. Add the onions and cook until soft and beginning to brown, about 15 minutes. Add the beef to the onions and cook until the meat is brown, stirring and scraping the bottom of the skillet to release the yummy brown bits, about 10 minutes. Season with salt and pepper.
  • Transfer the beef and onion mixture from the skillet into a 9-by-13-inch baking dish. Scatter the green beans and corn evenly on top. Spread the cream of mushroom soup over top and top with frozen potato tots. Bake uncovered for 1 hour; the potato tots should be golden brown. Serve.

16 ounces tater tots
1 lb ground beef
1 teaspoon butter
1/2 medium onion, diced
10 1/2 ounces cream of mushroom soup
8 ounces sour cream (or more if you like creamy)
1 cup frozen corn
1 teaspoon garlic powder
1/2 teaspoon salt
1/2 teaspoon pepper
3 ounces French-fried onions
2 cups shredded cheddar cheese

Steps:

  • Preheat oven to 350 degrees. Lightly grease 9x13 baking dish.
  • Add 1 tsp butter and onion to frying pan cook for 5 minutes on medium heat. Increase heat to medium high and add ground meat to onions. Fry meat until no longer pink, drain fat.
  • Arrange tater tots bottom of greased baking dish.
  • In mixing bowl add sour cream, cream mushroom soup, 1 cup cheese, frozen corn, salt, pepper and garlic, mix well. Add ground beef and mix together.
  • Add ground beef mixture to top of tater tot's. Spread out evenly and top with 1 cup cheese and French fried onions.
  • Bake at 350 degrees for 45 to 60 minutes.

1 (6 ounce) can French-fried onion rings

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
