Serve these marinated tortellinis as an appetizer with party toothpicks. Can also be used for a nice pasta salad lunch in larger size servings ...Optional ingredients: celery chunks, snow peas, artichoke hearts, salami or cheese chunks, green, yellow, or red pepper chunks, thin carrot slices, pearl onions (use your imagination!). Garnish with fresh parsley, if desired.

20 ounces cheese tortellini
⅓ cup red wine vinegar
¾ cup olive oil
1 ½ tablespoons prepared Dijon-style mustard
2 cloves garlic, minced
2 tablespoons chopped fresh basil
2 tablespoons chopped fresh parsley
4 green onions, thinly sliced
salt to taste
ground black pepper to taste
1 cup black olives
6 tablespoons grated Parmesan cheese

Steps:

  • Cook tortellini according to package directions--al dente.
  • While tortellini is cooking, prepare marinade. Combine vinegar, mustard, garlic, basil, chopped parsley, onions, and salt and pepper to taste.
  • Drain tortellini and rinse in cold water. Pour marinade over tortellini, add olives (and optional ingredients, see above) and refrigerate. When ready to serve, add Parmesan and some fresh parsley for garnish, if desired. Serve with toothpicks.

Olivieri® 3 Formaggi Tortellini 350 g
Olivieri® Basil & Cheese Pesto 160 g
3 tbsp balsamic vinaigrette
1/2 cup salami, diced
1/2 cup light Provolone cheese, diced
1/4 cup roasted red peppers, thinly sliced
1/4 cup green olives, chopped
1 tomato, seeded and chopped
4 to 6 basil leaves, torn

Steps:

  • Step 1
  • BOIL Olivieri® 3 Formaggi Tortellini until perfectly tender (6- 7 minutes). Drain pronto. Step 2
  • BLEND Olivieri® Basil & Cheese Pesto with vinaigrette; toss ½ of mixture with pasta while still warm. Step 3
  • ADD salami, cheese, peppers and olives. Toss carefully to combine. Step 4
  • REFRIGERATE for at least 1 hour or overnight. Step 5
  • TOSS with remaining pesto and vinaigrette mixture before serving. Step 6
  • TOP with juicy, ripe tomato and basil. Tasty Tip Add chopped walnuts for extra crunch and heartiness!

1 lb. fresh cheese tortellini
1/4 c. extra-virgin olive oil
2 tbsp. balsamic vinegar
1/2 tbsp. honey
kosher salt
Freshly ground black pepper
3/4 c. chopped salami or prosciutto
1/2 c. baby spinach
1/2 c. oil-packed sun-dried tomatoes, chopped
1/4 c. freshly grated Parmesan

Steps:

  • In a large pot of salted boiling water, cook tortellini according to package directions. Drain and transfer to large serving bowl.
  • Make dressing: Whisk together olive oil, balsamic vinegar and honey and season with salt and pepper.
  • To bowl, add prosciutto, spinach, sun-dried tomatoes and dressing and toss until well combined. Garnish with Parmesan.
