1/2 cup packed cilantro sprigs
3/4 teaspoon ground cumin
1/4 teaspoon cayenne
1/4 cup mayonnaise
1/4 teaspoon grated lime zest
1/2 teaspoon fresh lime juice
4 slices multi-grain bread, toasted

Steps:

  • Cook half of onion with 1/4 teaspoon salt in oil in a small heavy saucepan over medium heat, stirring occasionally, until golden, 5 to 7 minutes. Add bulgur and water and cook, covered, over low heat until water is absorbed, 15 to 18 minutes. Transfer to a bowl and stir in beans and soy sauce. Pulse bulgur mixture, walnuts, garlic, cilantro, cumin, cayenne, a rounded 1/4 teaspoon salt, 1/2 teaspoon pepper, and remaining onion in a food processor until finely chopped. Form rounded 1/2 cups of mixture into 4 (31/2-inch-diameter) patties. Chill at least 10 minutes. While patties chill, stir together mayonnaise, zest, and juice. Prepare grill for direct-heat cooking over medium-hot charcoal (medium heat for gas). Put perforated grill sheet on grill and preheat 10 minutes. Brush patties all over with oil. Oil grill sheet, then grill burgers on grill sheet, covered only if using a gas grill, carefully turning once, until golden brown, about 8 minutes total. Serve burgers open-faced on toast with lime mayonnaise.

1 1/3 lbs ground sirloin
1 tablespoon Worcestershire sauce
McCormick's Montreal Brand steak seasoning
4 crusty rolls, split
12 baby portabella mushrooms, thinly sliced
coarse salt
fresh ground black pepper
4 slices swiss cheese
3 tablespoons balsamic vinegar
1/2 cup mayonnaise
4 leaves romaine lettuce

Steps:

  • Preheat grill pan or large nonstick skillet (for the burgers) over med-high heat.
  • In a small nonstick skillet over medium heat, saute chopped onion in a drizzle of olive oil for 2-3 minutes; set pan aside.
  • In a bowl, combine meat, Worcestershire sauce, and steak seasoning; mix in sauteed onion and form into 4 large patties.
  • Drizzle patties with a touch of oil.
  • Quick toast your split rolls on the hot grill pan and set aside.
  • Then add burgers to hot pan; grill 4-5 minutes on each side for medium to medium-well burgers.
  • Return small nonstick skillet to stove over med-high heat; add 1 tablespoon olive oil and sliced mushrooms; season with salt and pepper, then saute until just tender, 3-5 minutes; remove from heat.
  • Pile mushrooms on top of burgers just before you are ready to take them off the grill.
  • Fold each slice of swiss cheese in half and rest on top of mushrooms; place a loose tin foil tent over burgers and turn off heat; let cheese melt down over the mushrooms for 2-3 minutes.
  • In a small dish, combine balsamic vinegar, mayo, and lots of coarsely ground black pepper.
  • To assemble burgers: place burgers topped with mushrooms and cheese on bun bottom; slather tops of buns with mayo mixture and add romaine.
  • Set burger tops in place and serve.

1 1/4 lbs boneless skinless chicken thighs or 1 1/4 lbs chopped chicken meat
6 slices rindless streaky bacon
1 tablespoon olive oil
1 garlic clove, crushed
1 shallot, finely chopped
2 tablespoons roughly chopped fresh tarragon
2 ounces fresh white breadcrumbs
1 egg yolk
1 teaspoon Dijon mustard
1/4 pint light olive oil
1 teaspoon white wine vinegar
3 ounces blue cheese
1 tablespoon fresh chives, chopped
4 hamburger buns

Steps:

  • Cut chicken thigh into pieces and put into food processor.Cut 2 bacon rashers into pieces and add to the chicken.Blend until coarsely chopped.
  • Heat the olive oil in a fry pan and add the garlic and shallot.Cook for about 2 mins,until soft.Remove from the pan,drain of excess oil and leave to cool.
  • Add the garlic,shallot,tarragon and breadcrumbs to the chicken mixture.Season well and mix to combine.
  • Divide mixture into four and with lightly floured hands shape into four burgers.Chill for 30 minutes.
  • For the Mayo-.
  • Whisk the egg yolk,mustard and plenty of seasoning in a bowl until smooth.
  • Slowly whisk in the olive oil until the mixture is thick and smooth.Whisk in the vinegar,crumble in the blue cheese and fold it into the mayo with the chives.Chill.
  • Grill the remaining bacon until crisp,cook the burgers on a medium heat for about 15 mins,turning once.
  • Toast the buns.Arrange salad leaves on one half of the buns,top with chicken burger,spoonful of mayo and bacon rasher,then the top of the bun.Serve!

This recipe is a modified version from this month's Gourmet Magazine (June 2008). The burgers can be prepared on the grill or in a skillet. If you don't want to use a food processor, you can simply chop the onions finely and mash the beans and walnuts together before mixing in everything else by hand. Uncooked patties can be chilled, covered, up to 4 hours.

1/2 cup packed cilantro
3/4 teaspoon ground cumin

1/2 of a small onion, finely chopped
1 egg
1 tablespoon mayonnaise (if burgers are not binding well)
1/4 cup breadcrumbs

2 tablespoons mayonnaise

Easy good variation on the standard burger. Shrimp burgers topped with a spicy mayo, fresh avocado, thin onion slices, lettuce and tomato make this the ultimate burger. These can also be froze and grilled or sauteed later. I love these. We get great prices down here and I know Sam's and Costco also have great prices. Take advantage. Also salad shrimp at 3 dollars a bag this makes a great new burger for little money. I just think the chili sauce with the mayo is a big part of the dish, but I always have the chili sauce in my fridge. If you don't. Tarter sauce would be just fine. I also like to toast the buns and make sure you have lots of fresh tomatoes and lettuce like you would for any good burger. 1 lb shrimp (pre cooked and diced fine)
1 cup fresh breadcrumb (I like day old baguette or day old Italian bread, but anything will work)
4 tablespoons celery, chopped fine
1 shallot (small, grated)
2 scallions, chopped fine
2 tablespoons fresh parsley, chopped
1 1/2 teaspoons lemon zest
1 pinch red pepper flakes
3 tablespoons mayonnaise
1/4 jalapeno, diced don't want too spicy (small, just chopped very fine)
1 egg, beaten
1 teaspoon kosher salt
1/4 teaspoon ground black pepper
1/4 cup oil, to pan fry the cakes in (vegetable)
1/4 plain breadcrumbs or 1/4 panko breadcrumbs
tomatoes, slices
lettuce
red onion, thin sliced
avocado, thin sliced
1/4 cup mayonnaise
1/4 cup chili sauce
1 teaspoon lime juice

Steps:

  • Now you can get boiled salad shrimp (the baby shrimp) or you can buy precooked any size you want. Just remember -- 1 lb. I have used large and chopped, small and not chopped and medium and chopped a little. So don't worry about the size. Besides, I love to buy it pre cooked for this, easier and quicker. This should be something quick so I try to take advantage of precooked shrimp when I can. Most stores do have some descent cooked shrimp these days. Even frozen precooked shrimp once thawed and drained well and dried will work just fine. Don't worry.
  • In a large bowl, -- Mix -- the chopped shrimp, scallions, pepper, lemon zest, shallot, celery, mayonnaise, seasoning, egg, parsley, and bread crumbs. Toss lightly. Don't over mix.
  • Patties -- Make the patties -- just form a medium size patty and then dredge lightly in the bread crumbs or panko. Pan saute on medium heat in a non stick skillet in the oil until golden brown. It will take 3-4 minutes per side is all until done.
  • TIP: I like to freeze the patties for a 15 minutes before sauteing. This just help firm them up a bit and helps with the frying.
  • Grill your burger buns -- prepare the toppings, the tomatoes, lettuce and onions and make your chili sauce. Just mix the mayo and chili sauce together for an amazing spread.
  • Serve dinner -- Serve each bun with a slather of the chili mayo, then lettuce, the burger, then tomato and avocado, onion, more lettuce, and top it with the bun also slathered again with the chili mayo. It is perfect.
