TASTES LIKE THANKSGIVING CASSEROLE

Tastes Like Thanksgiving Casserole image

A tradition for us to use up Thanksgiving Leftovers. If possible I enjoy it even more than Thanksgiving Dinner (I always have been a sucker for casseroles). Found in Dec/Jan 2008 issue of TOH. Submitted by Mary Lou Timpson. A lot of ingredients, and slightly labor intensive, but worth the effort. If you are using leftover potatoes skip steps 3-5, and 12.

JUST-LIKE-THANKSGIVING-CHICKEN (OAMC DUMP)

Just-Like-Thanksgiving-Chicken (Oamc Dump) image

Every time I make this, my husband swears it smells and tastes like Thanksgiving dinner. I suppose it could be made with Turkey cutletts to be even closer, but I've always used chicken.

Provided by gourmetmomma

Categories     One Dish Meal

Time 55m

Yield 4 serving(s)

Number Of Ingredients 9

4 frozen boneless skinless chicken breasts
2 apples, peeled and sliced
2 sweet potatoes, peeled and sliced
1 onion, sliced thinly
1/4 cup maple syrup
1 tablespoon poultry seasoning
1/4 cup chopped pecans
1/4 cup dried cranberries (craisins)
4 tablespoons butter

Steps:

  • TO MAKE IN A PAN:
  • Place the chicken breasts (still frozen) on the bottom of the pan.
  • Layer the apples, sweet potatoes, and onion on top.
  • Sprinkle on the nuts and craisins.
  • Place one pat of butter on each breast.
  • Mix the maple syrup and poultry seasoning together and drizzle on top.
  • TO MAKE IN A BAG:
  • Put everything except the maple syrup, poultry seasoning, and butter into a ziplock bag.
  • Melt the butter and combine with poultry seasoning and maple syrup.
  • Put these in a little bowl and freeze separately (in the bag).
  • When ready to cook, dump the bag out and then pour the (thawed) syrup butter mix on top.
  • To cook: Thaw. Cook covered in a 350 oven for 30-45 minutes. I confess I normally skip the thaw step and put it in the oven.

CREAMY CHICKEN STUFFING CASSEROLE

Creamy Chicken Stuffing Casserole image

This Creamy Chicken Stuffing Casserole, made with cooked chicken, stuffing, cream soup and sour creas an easy dinner for busy days. Tips for making ahead and storing in the freezer.

Provided by Julie Clark

Categories     Main Dish

Number Of Ingredients 6

3 1/2 cups cooked chicken ((about 1 1/2 pounds of chicken before cooking))
10.5 ounces cream of mushroom soup
1 cup sour cream (8 ounces)
1 box stuffing mix (6 ounces)
1 1/2 cups chicken stock (12 ounces)
1/4 cup unsalted butter (2 ounces)

Steps:

  • Preheat the oven to 350º Fahrenheit. Grease a 9x9" baking pan with cooking spray. (You can use a 9x13" baking pan if you'd like.)
  • Sprinkle the cooked chicken on the bottom of the prepared baking dish.
  • In a small bowl, stir together the cream of mushroom soup and the sour cream. Pour and spread this mixture over the chicken.
  • Prepare the box stuffing mix as per the instructions on the back of the box using the 1 1/2 cups chicken stock and 1/4 cup butter. We switch out the hot water for chicken stock for added flavor.
  • Spoon the prepared stuffing over the sour cream mixture.
  • Cover the casserole with foil and bake for 30 minutes, then uncover and bake for an additional 10 minutes. (If you used a 9x13" baking pan, it may heat through more quickly since it won't be as thick in the pan.)
  • Serve immediately.

  • Heat oil over medium-high heat in a large non-stick sauté pan. Add the onion and sweet potato and sauté for 5 to 7 minutes, stirring occasionally, until the sweet potato is mostly softened. Add the green beans, garlic, celery, and season the mixture with a few generous pinches of salt and pepper. Sauté for 2 to 3 more minutes, stirring occasionally, until the garlic is fragrant.
  • Transfer the cooked veggies to a large mixing bowl. Add in the bread, cooked turkey, dried cranberries, and fresh herbs. In a separate bowl, briefly whisk together the stock and eggs, then pour the mixture into the large mixing bowl. Very gently, use a spatula to toss the mixture until it is evenly combined. Transfer it to the 9 x 13-inch baking dish and spread the casserole out in an even layer.
  • Bake the casserole uncovered for 40 to 45 minutes, or until it is cooked through and the top is nice and golden. (That said, if the top turns too brown or looks like it is about to burn, just gently lay a layer of aluminum foil on top of the casserole until it is done baking.)
