Steps:
- Gently rinse strawberries and dry on paper towels (berries must be completely dry). Line cookie sheet with waxed paper.
- In 1-quart saucepan, melt chocolate chips and shortening over low heat, stirring frequently. Remove from heat.
- Dip lower half of each strawberry into chocolate mixture; allow excess to drip back into saucepan. Place on waxed paper-lined cookie sheet.
- Refrigerate uncovered about 30 minutes or until chocolate is firm, or until ready to serve. Store covered in refrigerator so chocolate does not soften (if made with oil, chocolate will soften more quickly at room temperature).

CHOCOLATE COVERED STRAWBERRIES
This is the simplest version of chocolate covered strawberries I know. Paraffin was originally used instead of shortening. Turn the strawberries upside down and insert by the toothpicks into a piece of styrofoam for easy cooling, or simply place them on a sheet of wax paper. White chocolate may be drizzled over the milk chocolate for a fancier look. They are perfect for weddings when decorated with frosting bow ties, bells, butterflies, roses, etc.

Steps:
- Put the semisweet and white chocolates into 2 separate heatproof medium bowls. Fill 2 medium saucepans with a couple inches of water and bring to a simmer over medium heat. Turn off the heat; set the bowls of chocolate over the water to melt. Stir until smooth. (Alternatively, melt the chocolates in a microwave at half power, for 1 minute, stir and then heat for another minute or until melted.)
- Once the chocolates are melted and smooth, remove from the heat. Line a sheet pan with parchment or waxed paper. Holding the strawberry by the stem, dip the fruit into the dark chocolate, lift and twist slightly, letting any excess chocolate fall back into the bowl. Set strawberries on the parchment paper. Repeat with the rest of the strawberries. Dip a fork in the white chocolate and drizzle the white chocolate over the dipped strawberries.
- Set the strawberries aside until the chocolate sets, about 30 minutes.

Steps:
- Cut a strip of baking parchment and leave to one side. To melt the dark chocolate, fill a small pan with 2cm water and bring to a simmer. Put the chocolate in a heatproof bowl and rest it on top of the pan, ensuring the bowl isn't touching the water. Stir the chocolate to gradually melt it. Or, melt the chocolate in 20 second blasts in the microwave, stirring after each blast until melted. Put the melted chocolate in a small deep bowl.
- Gently hold the strawberries by the leafy top and dip into the chocolate. Tap off any excess chocolate and put on the parchment to set. If you have any leftover chocolate, pour it onto another strip of parchment and leave it to set, it can be used again.
- If you'd like to decorate the strawberries, melt the white and milk chocolate and drizzle lightly over the fruit.

- Start by washing the strawberries and then drying them VERY well. It's so important to dry the strawberries well because, as you may know, chocolate and water do not work well together! If the strawberries are the least bit wet the chocolate will not stick!
- Next pour the milk chocolate chips and white chocolate chips into their own microwaveable bowls.
- Pour the nuts and coconut onto their own small plates. Line a sheet pan with parchment or waxed paper.
- Microwave the milk chocolate for 30 seconds intervals, removing and stirring at each 30 second interval, until the chocolate has melted. Repeat with the white chocolate chips until they are melted. Stir often, making sure not to burn the chocolate!

- Dip each strawberry into the chocolate, turning to coat all sides. Lift and let the chocolate drip for a moment, then place on the prepared baking sheet. Complete with remaining strawberries. Refrigerate 5-10 minutes, or until the chocolate has hardened.
- While the chocolate is hardening, melt the white chocolate according to the same directions as the milk chocolate. Pour the melted white chocolate into a pastry bag (or a ziptop bag) and cut a small piece off the tip of the bag. Drizzle back and forth over the strawberries.

- Rinse and thoroughly dry the strawberries. Line a baking sheet with parchment paper or a silicone baking mat. Set aside garnishes.
- In a microwave-safe bowl, melt the chocolate wafers at 50% power in 30 second intervals; stir after each interval and continue until chocolate is melted. Reduce microwave time as needed so the chocolate does not burn.
- Hold the tip of the strawberry between your fingers (or use a toothpick), and dip and swirl the strawberries in the chocolate. Tap off excess chocolate on the side of the dish and brush the bottom of the strawberry against the side of the bowl. Place on parchment paper and garnish immediately with toppings, as the chocolate sets quickly. Allow the chocolate to set and then serve.
- To add a drizzle, wait until the chocolate has set and then apply the drizzle. Fill a small piping bag with 2-3 tablespoons of melted chocolate and cut off the tip of the piping bag. Drizzle and allow to set.
