3 pounds very ripe red or yellow tomatoes, coarsely chopped
1 1/4 cups celery with leaves, chopped
1/3 cup onion, chopped
1/2 teaspoon kosher salt
1/2 teaspoon freshly ground pepper
1 tablespoon kosher salt
1 tablespoon finely chopped fresh flat-leaf parsley
1 lime wedge
1/2 medium tomato, seeded and chopped
1 fresh basil sprig
1/4 cup gin
Garnishes: cucumber spears, celery ribs, fresh basil sprigs, lime wedges

Steps:

  • Prepare Tomato Juice: Bring tomatoes and next 4 ingredients to a simmer in a large non-aluminum saucepan over medium heat; simmer 25 minutes or until mixture is soft. Cool 30 minutes. Process, in 2 batches, in a blender until smooth. Pour through a fine wire-mesh strainer into a container, discarding solids. Cover and chill 2 hours. Prepare Cocktail: Combine kosher salt and parsley. Rub rim of a glass with lime wedge; dip rim in salt mixture to coat. Muddle tomato and basil sprig against sides of glass to release flavors. Fill glass with ice. Stir in gin and 1/2 cup Garden Tomato Juice. Sprinkle with ground pepper.

1 celery stalk, chopped
4 cherry tomatoes, halved
1 radish, chopped, whole, for garnish, divided
½ teaspoon kosher salt
½ tablespoon prepared horseradish
½ teaspoon celery seed, divided
2 tablespoons lemon juice
1 cup tomato juice
¼ cup good-quality dill pickle juice
¼ teaspoon hot sauce
½ teaspoon worcestershire sauce
1 sprig fresh dill
1 ½ oz 1800® Tequila Reposado

Steps:

  • Add the celery, cherry tomatoes, chopped radish, salt, horseradish, ¼ teaspoon celery seeds, and the lemon juice to a large glass or a medium nonreactive container with a lid. Muddle for 1-2 minutes, until well mashed and combined.
  • Stir in the tomato juice, pickle juice, hot sauce, and Worcestershire sauce. Cover and refrigerate for at least 2 hours until ready to serve.
  • Make the garnish: Trim the leaves off of the whole radish, leaving the stem intact. Use a chopstick to poke a hole through the top of the radish, right next to the stem, all the way through the bottom. Push the sprig of dill through the hole at the top of the radish and pull through so the fronds sit right atop the radish.
  • When ready to serve, strain the tomato mixture.
  • Add the 1800® Tequila Reposado to a tall, thin glass and top with the strained tomato mixture. Give a quick swirl to mix.
  • Sprinkle the remaining ¼ teaspoon celery seeds on top and place the dill radish in the drink or balanced across the rim of the glass.
  • Enjoy!

30ml gin
2 tsp elderflower cordial (use more or less, depending on how sweet you like it)
2 tsp lemon juice
large handful of ice
cloudy apple juice, for topping up
1 long strip of cucumber, peeled using a vegetable peeler

Steps:

  • Mix the mint leaves, gin, elderflower cordial and lemon juice together in the bottom of a tall glass using a long-handled spoon.
  • Add a large handful of ice, then top up with the apple juice. Stir well, then drop in the strip of cucumber before serving.

1 container (8 ounces) refrigerated jumbo lump crabmeat, drained
3 celery ribs, chopped
1 medium cucumber, peeled, seeded and chopped
1 medium sweet orange pepper, chopped
2 plum tomatoes, seeded and chopped
1/2 cup red onion, finely chopped
1 to 2 jalapeno peppers, seeded and finely chopped
1/4 cup minced fresh cilantro
3 tablespoons lime juice
1 tablespoon olive oil
2-1/4 teaspoons adobo seasoning

Steps:

  • Combine the first 9 ingredients. Whisk together lime juice, oil and adobo seasoning; drizzle over shrimp mixture and toss gently to coat. Refrigerate at least 1 hour, tossing gently every 20 minutes. Serve shrimp mixture in cocktail glasses.
