¼ cup milk
¼ cup dried bread crumbs
4 skinless, boneless chicken breasts
3 tablespoons butter
½ cup chicken broth
1 cup heavy whipping cream
1 (4 ounce) jar sliced pimento peppers, drained
½ cup grated Parmesan cheese
¼ cup chopped fresh basil
⅛ teaspoon ground black pepper

Steps:

  • Place milk and bread crumbs in separate, shallow bowls. In skillet, heat butter or margarine to medium heat. Dip chicken in milk, then coat with crumbs. Cook in butter or margarine, on both sides, until juices run clear (about 10 minutes). Remove and keep warm.
  • Add broth to skillet. Bring to a boil over medium heat, and stir to loosen browned bits from pan. Stir in cream and pimentos; boil and stir for 1 minute. Reduce heat.
  • Add Parmesan cheese, basil and pepper. Stir sauce and cook until heated through. Pour mixture over chicken and serve!

1/4 cup milk
1/4 cup dry breadcrumbs
1/4 teaspoon garlic powder
4 boneless skinless chicken breasts
3 tablespoons butter
1 tablespoon olive oil
1/2 cup chicken broth
1 cup heavy cream
1 (4 ounce) jar diced pimentos, drained
1/2 cup freshly grated parmesan cheese
1/4 cup minced fresh basil
1/8 teaspoon pepper
1 dash salt
1 teaspoon cornstarch

Steps:

  • Preheat oven to 350 degrees.
  • Place milk in a shallow bowl.
  • Place the bread crumbs and garlic powder in another shallow bowl.
  • Dip the chicken in the milk, then coat the chicken well with the bread crumbs.
  • Place the butter and olive oil in a skillet and heat till butter melts over medium heat.
  • Brown the chicken over medium heat in the butter and olive oil mixture.
  • Keep chicken warm in preheated oven.
  • Add broth to skillet and bring to a boil over medium heat, scraping up the browned bits from skillet.
  • Stir in cream and pimentos, boil and stir for 1 minute.
  • Reduce heat and while stirring constantly add the cheese, basil, salt and pepper.
  • Cook until heated through.
  • Mix cornstarch with a bit of water and stir into sauce if sauce needs thickening.
  • Place chicken on platter, and pour sauce over chicken before serving.

4 chicken breast fillets
30 g unsalted butter
2 green onions, chopped (shallots)
1 cup dry white wine
1/2 cup light cream
1/2 cup shredded basil

Steps:

  • Cover each chicken breast with plastic wrap and lightly flatten with a rolling pin. Season well with freshly ground pepper.
  • Melt butter in a large frying pan on medium.
  • Cook chicken breasts for 3 minutes each side, until golden and almost cooked through. Remove to a platter and keep warm.
  • Reduce heat to low and add onion. Cook for 5 minutes, stirring, until soft.
  • Increase heat to medium and add wine. Simmer for 1 minute.
  • Stir in cream. Cook for another 3 minutes, until reduced slightly.
  • Add basil and season.
  • Return chicken to pan for 1 minute, until heated through.

1 tbsp Olive Oil
½ cup White Wine
2 cloves Garlic (minced)
½ cup Sundried Tomatoes (cut into small pieces)
1 pint Cherry Tomatoes
1 cup Chicken Stock
½ cup Heavy Cream (Double Cream)
½ cup Grated Parmesan
4 cups Baby Spinach
Sea Salt and Black Pepper

Steps:

  • Slice through the middle of each chicken breast to make 2 thinner pieces and season generously with sea salt and black pepper.
  • Pan fry in olive oil over a medium high heat in a large skillet for around 4-5 minutes per side. Cook until there is a nice golden brown sear on both sides, the chicken is cooked through to the middle and the juices run clear.
  • Set the chicken aside on a plate and cover with foil while you make the sauce.
  • Add the wine to the same skillet without cleaning it and scrape up all the bits from the chicken. Let the wine bubble away for a couple of minutes.
  • Add the minced garlic, chicken stock, chopped sundried tomatoes and cherry tomatoes then allow to simmer on a low heat to let the flavors come together for 2-3 minutes. Simmer until the cherry tomatoes start to burst.
  • Stir in the heavy cream and the grated parmesan cheese. Mix gently until it has melted into the sauce.
  • Finally stir through the baby spinach until it has just wilted.
  • Place the chicken pieces back in the sauce to gently reheat for a moment or two.
  • Serve immediately

1 lb boneless, skinless chicken breasts (2 large chicken breasts OR 4 cutlets)
4 Tablespoons butter
1 1/2 Tablespoons olive oil
1 1/2 cup heavy cream (aka heavy whipping cream)
3/4 cup chicken broth
2 cloves garlic (minced)
1/2 teaspoon black pepper (ground)
2 Tablespoons fresh Rosemary (chopped)

Steps:

  • If you have two large chicken breasts, slice each one in in half horizontally in order to make four cutlets total.
  • In a large skillet over medium high heat, add the olive oil. Let the olive oil heat up, then add the chicken to the pan.
  • Cook the chicken for four minutes without moving it around in the pan. Then flip each piece and cook it for another four minutes. Set aside on a clean plate.
  • In the same pan, add all remaining ingredients (butter, cream, broth, garlic, black pepper, and rosemary) and stir to combine, making sure to break up any bits and pieces left in the pan from cooking the chicken to combine those into the sauce as well.
  • Stirring occasionally, let the sauce simmer and reduce for about 5 minutes.
  • Add the chicken back to the pan and ladle the sauce over it. Allow it to warm in the simmering sauce for 1 min.
  • Remove the pan with the chicken and creamy rosemary sauce from the heat and serve over pasta, rice, zoodles, or cauliflower rice! Optional: Top with a few sprigs of fresh rosemary for garnish.

4 small chicken breasts (or 2 large chicken breasts cut in half, lengthwise)
¼ cup all-purpose flour
1 ½ tbsp. unsalted butter (divided)
1 tbsp olive oil
1 head of garlic (peeled)
½ cup dry white wine
1 cup heavy cream
2 cups packed baby spinach

Steps:

  • Season chicken breasts on both sides with salt and pepper.
  • Place flour on a medium plate. Dredge each chicken breast with flour, patting off any excess.
  • Heat a large skillet with high sides to a medium-high heat. Add one tablespoon butter and olive oil. Once the butter has melted, add the chicken breasts. Sear until golden brown, about 3-4 minutes. Flip and sear until brown, another 2-3 minutes. Remove the chicken breasts from the pan and set aside on a plate. (Do not worry about cooking the chicken all the way through, they will finish cooking later.)
  • Add the remaining ½ tablespoon butter to the pan. Turn the heat down to medium and add all the peeled garlic cloves. Toast the garlic until light brown on all sides. Be careful to not burn the garlic.
  • Pour in the wine. Bring it up to a boil and then reduce to a simmer. Simmer until reduced by half. Once the wine has reduced, pour in the cream. Again, bring the cream and wine up to a boil and then reduce to a simmer. Add the chicken back to the sauce, cover and cook until the chicken is cooked through and reaches an internal temperature of 165 degrees.
  • Once the chicken is cooked, add in the spinach. Shut the lid and simmer for another 1-2 minutes. Remove the lid and toss the spinach with the chicken and sauce until completely wilted. Season to taste with salt and pepper.

1 tablespoon olive oil
1/2 tsp EACH paprika, salt
1/4 teaspoon pepper
1 1/2 pounds chicken breasts (chopped into large bite size pieces)
3 cups broccoli (chopped into bite size pieces)
1 small onion (diced)
1 1/2 cups orzo pasta (uncooked)
1/2 cup sun-dried tomatoes (rinsed, chopped, patted dry)
4 garlic cloves (minced)

2 tablespoons cornstarch
3 cups chicken broth
1 12 oz. can evaporated milk
1 15 oz. can corn (drained and rinsed (may sub frozen))

1/2 cup shredded mozzarella
1/3 cup freshly grated Parmesan

Steps:

  • While chicken is still on the cutting board, pat it dry and season with ½ teaspoon salt, ½ teaspoon paprika and ¼ teaspoon pepper; set aside.
  • Melt butter in olive oil in a Dutch oven over medium high heat until hot. Add onions and cook for 3 minutes. Add chicken and broccoli and cook until most off the chicken is opaque (chicken will not be cooked through). Add orzo, sun-dried tomatoes, garlic and red pepper flakes and cook an additional 1 1/2 minutes.

1 tsp kosher salt
1 tsp cracked black pepper
1 tsp dried basil
2 tbsp olive oil

2 pounds chicken tenderloins (thawed)
1/4 cup flour
1 teaspoon dried basil
1 teaspoon salt
3/4 teaspoon black pepper
1/4 teaspoon cayenne pepper
1 teaspoon garlic powder
1/2 teaspoon onion powder
1 tablespoon butter
1 tablespoon oil
1 & 1/4 cups chicken broth*
1/3 cup fresh lemon juice (2 lemons-zest them first!)
1/2 cup cream
1-2 tablespoons lemon zest (to taste**)
1/4 cup fresh basil (chiffonade)
fresh basil (more to garnish)

Steps:

  • Dry the chicken tenderloins with a paper towel.
  • On a plate or shallow dish, mix together the flour and spices: basil, salt, pepper, cayenne, garlic, and onion.
  • Dredge the chicken in the flour mixture to coat both sides.
  • Heat a large skillet to medium high heat. When it is hot, add 1 tablespoon butter and 1 tablespoon oil, and swirl to coat.
  • Add about half the chicken tenderloins. Don't add them all at once or they will steam, not sear, and that won't get you those nice crispy brown edges. Leave about an inch in between each piece of chicken.
  • Sear for about 4 minutes. Keep an eye on it and make sure it's not cooking too quickly. Turn the heat down to medium if necessary.
  • Flip the chicken and cook for another 2 minutes or so, until brown.
  • Remove the chicken to a plate and sear the other batch, adding more oil if the pan gets dry.
  • When the chicken is done and out of the pan, add the chicken broth and lemon juice. Keep the heat on medium high. Scrape up the browned bits with a wooden spoon.
  • Bring to a boil and simmer for about 3 minutes.

1 cup panko bread crumbs
1 1/2 teaspoons seasoning salt ((I use Lawry's))
1/8 teaspoon black pepper
1/2 teaspoon paprika
1 cup milk
3 tablespoons margarine ((or butter))
2 tablespoons all-purpose flour
3/4 cup chicken broth ((low sodium))
1/2 cup milk (1%)
1 teaspoon basil pesto
1/4 tsp salt

Steps:

  • Preheat oven to 400 degrees F and spray a baking sheet with non-stick spray or line with parchment paper.
  • In a shallow, square container combine panko through paprika. Place milk in another shallow container or dish.
  • Dip chicken into milk, then into crumb mixture, pressing down gently to make sure the crumbs adhere to the chicken. Flip the chicken and coat the other side in the crumbs. Place on baking sheet.
  • Bake for 15 minutes, then flip the chicken. Bake another 10 minutes or until a meat thermometer reads 165 degrees F and coating is lightly golden.
  • While the chicken is baking, prepare the sauce. In a medium pan, melt the margarine or butter. Whisk in flour and cook 1 minute.
  • Whisk in broth, milk, pesto and salt and cook over medium heat, stirring often, until thickened. Remove from heat and serve over chicken.

1 ½ pounds boneless skinless chicken breasts
1 teaspoon kosher salt
½ teaspoon freshly ground black pepper
2 tablespoons extra virgin olive oil
6 tablespoons butter
4 ½ tablespoons all-purpose flour
3 cups heavy cream
3 bay leaves
1 ½ cups freshly grated Parmesan cheese
½ teaspoon kosher salt
½ teaspoon white pepper
8 large leaves fresh basil*
¼ teaspoon fresh nutmeg
½ teaspoon dry mustard
Large pinch red pepper flakes
1 pound penne pasta
Additional chopped fresh basil for garnish
Additional grated Parmesan cheese for garnish

Steps:

  • Fill a large pot of salted water and heat to a boil but do not cook the pasta yet.
  • Butterfly the chicken breasts so they are the same thickness. (See How to Butterfly a Chicken Breast)
  • Coat both sides with the salt and pepper.
  • Heat a deep wide saute pan with the olive oil over medium high heat.
  • Once hot, add the chicken breasts and count 30 seconds, then cover, lower heat to the lowest flame and continue to cook chicken, flipping once the first side is cooked, until no longer pink inside. Depending on the thickness of the chicken, this should take 5-10 minutes to cook on low.
  • Remove cover and place the chicken breasts on a cutting board. Pour off but save liquid in the pan.
  • Over medium heat add the butter and once melted, add flour and cook for three minutes, stirring often.
  • Slowly add the cream whisking as you add.
  • Add bay leaves, Parmesan cheese, salt, pepper, whole basil leaves, nutmeg, mustard and pepper flakes. Bring to a bubble then lower to a simmer and simmer ten minutes, stirring often.
  • While cream sauce cooks, add Penne pasta to the hot water and cook to just short of al dente. Still should be a little bit chewy.
  • Strain the cream sauce through a fine sieve and discard the solids. Taste and salt if needed. Pour the sauce back into the pan, reserving one cup that will be drizzled over each portion when serving.
  • Slice the cooked chicken breast into strips and add to the sauce. Add the liquid that you saved after you cooked the chicken.
  • Use a spider or strainer and scoop out and add the pasta to the sauce, but do not discard the pasta water yet.
  • Stir the mixture over low to medium heat until the pasta is fully cooked. Add a little pasta water if it starts to dry out a little.
  • Serve with the reserved sauce, chopped basil and grated Parmesan cheese.

1/2 tsp salt
black pepper
1/4 cup flour
15g / 1 tbsp unsalted butter
30g / 2 tbsp unsalted butter
300g / 10 oz mushrooms (, sliced (button or Swiss brown))
2 garlic cloves (, minced)
1/4 cup dry white wine ((sub more chicken stock, Note 2))
1/2 cup chicken or vegetable stock (, low sodium)
1 cup thickened / heavy cream (, full fat (Note 3))

Steps:

  • Split breast: Cut each breast in half horizontally to form 4 thin steaks in total.
  • Dust with flour: Sprinkle each side with salt and pepper, then sprinkle with flour and use your fingers to spread it all over the surface.
  • Cook chicken: Melt 15g butter in a large non-stick frying pan over medium high heat. Add chicken and cook each side for 2 1/2 minutes until golden brown and just cooked through. Remove from pan, cover and keep warm.
  • Cook mushrooms: In the same frying pan, add remaining butter and increase heat to high. Add mushrooms and cook for 4 minutes, until starting to turn golden brown on the edges.
  • Add garlic later: Then add garlic and a pinch of salt and pepper, and continue cooking for another minute until both garlic and mushrooms are golden.
  • Deglaze skillet: Add white wine - it will bubble and be steamy! Cook for 30 seconds, scraping the bottom of the pan, until wine is mostly evaporated and the alcohol smell is gone.
  • Make creamy sauce: Add chicken stock, cook vigorously for 1 minute so it mostly evaporates. Then add cream, lower heat to medium and simmer for 2 minutes until it reduces and thickens slightly.
  • Add parmesan: Stir in parmesan, taste and add more salt and pepper if needed.
  • Finish chicken in sauce: Return chicken to sauce for 30 seconds (to warm through slightly.) Garnish with chives and serve as-is in the pan, for people to help themselves (or transfer to serving platter, if you prefer). Alternatively, serve a portion of chicken onto each plate, spoon sauce over and garnish with more chives.

3 chicken breasts (cut in half horizontally)

1 tbsp butter
1/2 yellow onion (slice into moon shapes)
2 cup half and half
1 1/2 tbsp flour
2 tbsp garlic paste
3/4 cup parmesan cheese (shredded)
1/4 cup chicken broth
1 tbsp dried basil (can use fresh)
1 lb fresh asparagus (cut into 2 inch pieces)
fresh parsley (chopped)

Steps:

  • Salt and pepper both sides of the chicken breasts.
  • In a large skillet over medium heat add olive oil and chicken breasts. Cook and brown the chicken on each side.
  • Remove the chicken from the skillet and set aside. Add the butter and onion to the skillet and cook until onion is soft and tender, about 5-7 minutes.
  • Add half and half to the skillet and sprinkle flour over the top. Use a whisk to mix together. Add garlic paste, Parmesan cheese, chicken broth, and dried basil. Whisk together and bring to a boil. Deglaze the pan by scraping up all of the browned bits on the bottom of the pan.
  • Add fresh asparagus pieces and stir into sauce. Bring to a simmer, cover and letcook for 5 minutes. Uncover, stir and add the chicken back to the sauce. Cover and let simmer for an additional 3-4 minutes, or until the chicken is hot and ready to serve.
  • Top with fresh chopped parsley.
