This is a very tasty mango salsa that is great served over fish. My favorite is any fish blackened with Cajun seasoning and then topped with this salsa. Also great for dipping chips.

1 mango - peeled, seeded, and chopped
¼ cup finely chopped red bell pepper
1 green onion, chopped
2 tablespoons chopped cilantro
1 fresh jalapeno chile pepper, finely chopped
2 tablespoons lime juice
1 tablespoon lemon juice

Steps:

  • In a medium bowl, mix mango, red bell pepper, green onion, cilantro, jalapeno, lime juice, and lemon juice. Cover, and allow to sit at least 30 minutes before serving.

Juicy mangoes and jalapeno make this spicy-sweet dip a refreshing alternative to ho-hum tomato varieties. Serve it with sturdy corn chips, or use it as a relish for hot dogs and sausage.

2 small ripe mangoes, peeled, pitted and diced (about 1 1/2 cups)
1/2 cup packed fresh cilantro (leaves and thin stems only)
1 jalapeno, seeded and chopped
Juice of 1 lime (about 2 tablespoons)
1 red bell pepper, seeded and diced
1/3 cup chopped scallions
Kosher salt

Steps:

  • Combine one-third of the mango, cilantro, jalapeno, lime juice and 1 teaspoon salt in a blender. Pulse until broken down but still chunky, scraping the inside of the carafe as necessary. Stir in the remaining mango, bell pepper and scallions.

1 mango, peeled with pitt removed, chopped
4 roma tomatoes, chopped
1 jalapeno pepper, with or without seeds & membrane
1/2 red onion, chopped
1/2 cup spinach leaves, chopped
1/4 cup cilantro, minced (feel free to cut down, I just love cilantro)
1 -4 garlic clove, minced
2 teaspoons lemon juice
2 teaspoons vinegar
salt

Steps:

  • Add ingredients together and mix. Let sit in the refrigerator for at least an hour before serving.
  • For an eaiser version I put the onion, spinach, jalapeno, cilantro, and garlic in the food processor and buzz a few times instead of hand chopping, but alway hand chop the tomato and mango since they are the stars!

I absolutely adore fresh mango, and this salsa is the perfect way to make them shine! The result is very fresh, sweet and spicy, and chunky...similar to pico de gallo in texture. Make sure you use mangoes at their peak...if they are too ripe, your salsa will be mushy. I make this often for guests by serving with blue corn tortilla chips (the color is so much prettier than plain ol' tortilla chips!) or serve alongside mahi mahi or other grilled fish. I hope you enjoy it as much as I do!

2 cups chopped mangoes (about 2 medium mangoes)
1 cup chopped red bell pepper
2/3 cup chopped green onion
1/4 cup chopped fresh cilantro
2 tablespoons fresh lime juice
4 teaspoons olive oil
1 medium fresh jalapeno, minced

Steps:

  • Mix first six ingredients together in large bowl.
  • Add jalapeno to taste (I usually use about 3/4 of a medium-sized jalapeno, which gives it quite a quick!).
  • Refrigerate for at least 30 minutes to an hour to allow flavors to mellow.
  • Immediately before serving, give salsa a quick stir. May be stored in a sealed container for several days.
