TAGLIARINI
In my home town during the 1950's and 60's it seemed like every mom made this dish, it had many names and many different ways of making it. It was called Tagliarini, Talarini, Slumgoli and goulosh. This recipe is close to a neighbor's version that I loved as a kid. She called hers Tagliarini.

Steps:
- 1. Saute onion, bell pepper and garlic in oil, add beef cook until beef is lightly browned. Add all ingredients except cheese. cook until noodles are done then add cheese, stir until cheese is mixed in. This can also be baked like a casserole.
AMERICAN CHOP SUEY
Steps:
- Gather the ingredients.
- Cook the pasta in boiling salted water following the package directions.
- Drain in a colander and rinse under hot water. Set aside.
- In a large, deep skillet or saucepan, heat the vegetable oil and butter over medium heat. Add the onion and bell pepper, if using. Cook, stirring until onion is softened and edges are lightly browned.
- Add the ground beef and cook, stirring and breaking up, until the beef is cooked through and no longer pink.
- Add the garlic and garlic powder and cook, stirring for 1 to 2 minutes longer.
- Stir in the crushed tomatoes, diced tomatoes, tomato sauce, tomato paste, sugar, and pepper. Cook, stirring, until the sauce mixture begins to boil. Taste and add salt, as needed. Simmer for 5 to 10 minutes.
- Add the drained macaroni to the sauce, mix well, and heat through. Serve and enjoy.

This recipe is so quick and delicious. It's been in my family for years! I serve it with garlic bread or Mexican cornbread.

- In a large pot with boiling salted water cook egg noodles until al dente. Drain well.
- Meanwhile, in a large skillet cook meat with seasoning salt, black pepper, and garlic powder until brown. Add the cans of Mexican-style corn, tomatoes with green chilies and mix well.
- Pour mixture into casserole dish prepared with butter spray. Arrange sliced processed cheese food on top. Cover with aluminum foil.
- Bake in a preheated 375 degree F(190 degrees C) oven for 20 to 30 minutes. Stir and serve.

MARINATED TRI-TIP IN RED WINE AND HERBS

- For the marinade: Place the steak in a 2-gallon resealable plastic bag and place the bag in a large bowl. Add the shallots, oil, honey, mustard, cilantro, parsley, thyme, garlic, oregano, wine, 1 tablespoon kosher salt and 2 teaspoons black pepper to the bag. Cut the oranges in half, squeeze the juice into the marinade and then add the halves as well. Seal the bag, squeezing out any excess air, then massage the marinade into the steak, making sure all the ingredients are evenly incorporated. Marinate the steak in the refrigerator for 2 1/2 hours.
- Preheat a grill for cooking over medium-high heat. Remove the steak from the marinade, making sure to pull off any marinade ingredients like herbs or shallots that stick to the steak (reserve the marinade). Generously sprinkle the steak all over with salt and pepper. Grill until dark grill marks form, 3 to 4 minutes per side; then turn the heat down, cover the grill and cook until an instant-read thermometer inserted into the thickest part of the steak registers 130 degrees F for medium-rare, another 25 to 30 minutes. Remove the steak from the grill and let rest for 10 minutes.
- Meanwhile, place the marinade in a medium pot over medium-high heat. Bring the mixture to a boil and cook until thickened and reduced down to 1 1/2 cups, approximately 25 minutes. Remove from the heat and strain the sauce through a fine-mesh strainer.
- To serve: Rub a cutting board with olive oil and garlic, then sprinkle with flaky sea salt. Put the steak on top and slice it against the grain. Garnish with cilantro and parsley leaves, and serve with the red wine herb sauce.

A delicious recipe my grandma gave me, this was my favorite dinner when I was a kid. It's still in my top ten! For the grown-ups, Grandma would make another casserole separately with a layer of sliced green olives.

- Preheat oven to 350 degrees F (175 degrees C).
- In a Dutch oven over medium-high heat, saute the ground beef and the onion together for about 5 minutes, or until the meat is browned and crumbly. Stir in the tomato paste, stewed tomatoes with juice, salt and ground black pepper.
- Add the uncooked egg noodles to this mixture and pour in water to cover. Bring to a boil, reduce heat to low and let simmer until the noodles are slightly softened, about 5 minutes. Drain excess water, stir in the corn and transfer mixture to a 9x13-inch baking dish. Top with cheese.

TELLERINI
Steps:
- Boil egg noodles in about 6 cups of water in medium pot. Meanwhile, brown ground beef and onion in skillet and drain.
- Once noodles are done, drain noodles and add to ground beef. Pour canned vegetables into mix of noodles and ground beef. Cut up bell pepper and put it in the mix. Stir mixture until well integrated.
- Pour mixture into a 9x13 baking pan cover with cheese and bake 350 degrees F until cheese is melted, about five minutes. Serve and enjoy!

TALLERINA CASSEROLE
Super easy and makes a lot - great for leftovers. My mom always made this great casserole for family picnics and potlucks. Everyone loved it, but my dad's brother was a fanatic! I believe this casserole was originally based on a Spanish dish. My mom's recipe called for black olives, but she never used them nor do I.

Steps:
- Brown ground beef with chopped onion until beef is thoroughly cooked and onion is soft and translucent. Drain fat.
- Place DRY noodles in bottom of 9x13 pan.
- Spread ground beef mixture evenly across the noodles.
- Drain 2 cans of corn and spread in pan on top of ground beef.
- Open tomatoes, but DO NOT drain. Layer in pan evenly, breaking tomatoes up slightly so that the tomatoes are evenly dispersed.
- Cut Velveeta cheese into 8 thick slices and layer on top of casserole. You can substitute other processed cheese loaf-type cheese, but be aware that some do not melt well on this casserole, so I always use Velveeta.
- Bake 45-60 minutes at 350 degrees (no need to preheat oven) until cheese is melted and brown.
- Noodles will be cooked and soft - infused with the flavors of the ingredients. Enjoy!
TALERINI
A quick easy beef and noodle casserole to whip up in a jiffy. An old family favorite. The orginal recipe in my family called for velveta cheese, but I prefer cheddar. Makes great leftovers too!

- Preheat oven to 375.
- In large pot, cook noodles as directed on package. Drain, rinse and set aside.
- Meanwhile, cook ground beef and onion in large skillet until meat is no longer pink and onions are tender.

- To meat mixture, add tomato sauce, creamed corn and olives.

- 1. Preheat oven to 350° F Bake in a casserole dish, uncovered, at 350° F for 30 minutes; cover with foil and bake for another 15 minutes or until heated through.
- 2. Remove from oven and put cheeses on top, return to oven until cheese is melted.
- 3. CHEESE: Approximately 2 cups of shredded cheddar cheese with 1 cup cubed velveeta cheese, (or 2 cups of a 4-cheese blend with 1 cup cubed velveeta...I like it this way).
- 4. OPTIONAL: Sprinkle grated Parmesan cheese over top of plated servings (as some do not like parmesan cheese).
- 5. Suggested Sides: Toss Green Salad, Garlic Toast, Homemade Bread or Hot Rolls; (or maybe a loaf of homemade beer bread).
- 6. Beer Bread: 3 c self rising flour 3 T sugar 1 (12 oz) can beer Preheat oven to 375° F Mix all 3 ingredient together with wooden spoon and pour into bread loaf pan. Melt 3 T butter and pour over top of dough before placing in oven. Bake for approximately 1 hour. When done remove to cool for 15 minutes on wire rack before taking out of pan. TIP: Sometimes I add 1 T garlic powder and 1 T of Itilian Herb Mix and blend into the flour before adding the beer. P.S. oooh...BTW, you may want to grease the loaf pan or spray some not-stick spray in it (on bottom and up the sides)...guess I forgot to tell ya that!!!
- 7. I serve a light dessert with this meal...such as my "Cin's Tarts".
- 8. P.S. The Italian Village in Tontitown, AR....is celebrating their 114th year for their "Italian Grape Festival" this year Aug. 7th thru 11th, 2012. The annual event is always in August...serving the dinners on Thursday, Friday & Saturday nights only. These Itallian's immigrated to the United States and setteled a town they called Tontitown, AR in 1898.
