- In a large skillet, cook beef, onion and green pepper over medium heat until meat is no longer pink; drain. Stir in taco seasoning and water. Cook and stir until thickened, about 3 minutes; set aside. , Place chips in a greased 8-in. square baking dish. In a small bowl, stir refried beans; spread over chips. Top with beef mixture and cheese. , Bake, uncovered, at 375° until heated through, 15-20 minutes. Top with lettuce, tomatoes and olives. Serve with sour cream and picante sauce.

- Heat oven to 425°F.
- Crumple 4 sheets of foil to make 4 (3-inch) balls; place on baking sheet. Top each with 1 tortilla; spray with cooking spray. Bake 6 to 8 min. or until tortillas are golden brown. (Tortillas will drape over balls as they bake to form shells.)
- Meanwhile, brown meat with chili powder in large nonstick skillet. Stir in beans and salsa; cook 3 to 5 min. or until heated through, stirring occasionally.
- Fill tortilla shells with salad greens, meat mixture, cheese and tomatoes. Drizzle with dressing.

- Heat a large nonstick skillet over medium to medium-high heat and saute ground beef, diced onion, salt, and pepper together until ground beef is browned and no longer pink and onions are tender, about 10 minutes. Add 1/4 cup water and taco seasoning to the meat. Stir to coat and allow to simmer for 1 minute to thicken. Set aside to cool while you prep the salad.
- Add kidney beans, crushed chips, lettuce, tomatoes, Cheddar cheese, and dressing to a large bowl. Top with meat mixture and toss gently to evenly combine. Serve immediately.

Steps:
- Fry beef, until cooked through. Drain any fat.
- Add taco seasoning pkt., and Rotel tomatoes. Mix well.
- Add the jalapeno peppers.
- Let cook for a few mins., until some of the liquid from the tomatoes vaporates.
- Add 1/2 the pkg. of cheese, and mix well. Let cook until cheese is completely melted.
- Spoon into taco shells, and top with the rest of the cheese, lettuce, tomatoes, sour cream, and salsa.

TACO SALAD OLE'
I had never had or heard of Taco Salad in the 1970's when a friend prepared this for a girl's gathering. I instantly loved it and prepared it for my family. I have adjusted it to our taste and you can do the same for your's. You could also put all the ingredients on the side and let everyone put what they like in their salad. I hope you and your loved ones like this as much as we do. Enjoy!

Steps:
- In a medium skillet, brown ground beef. Stir in taco seasoning and water. Add Pinto Beans and simmer for 5 minutes.
- In a large mixing bowl add lettuce, tomatoes, cheese and beef. Stir to mix well.
- Stir in French Dressing to taste.
- Just before serving, add slightly crushed Doritos. Do not add too soon or the chips will get soggy.
- Garnish with cheese and chips. You can also add Avacado, salsa or other ingredients.
