3 ounces unsweetened chocolate
1/4 cup Irish Mist liqueur
1 tablespoon instant coffee
3/4 cup sugar
1/8 teaspoon salt
3 egg yolks
1 1/4 cups heavy cream, reserve 1/4 cup for garnish

Steps:

  • Combine chocolate, Irish Mist and coffee in small saucepan. Cook gently over low heat until the chocolate melts. Add sugar and salt, stirring until sugar dissolves. Remove from heat and COOL.
  • Beat egg yolks, add cooled chocolate mixture and stir over LOW heat until smooth.
  • Whip cream until stiff. Reserve 1/4 cup for garnish. Fold the remaining cream into the chocolate mixture. Spoon into six Irish coffee glasses and chill. Garnish with remaining whipped cream and serve. Serves 6.

1 ½ cups butter, softened
3 cups white sugar
6 eggs at room temperature
1 (8 ounce) package cream cheese, softened
1 teaspoon vanilla extract
3 cups all-purpose flour, sifted

Steps:

  • Preheat oven to 300 degrees F (150 degrees C).
  • Grease and flour a 10-inch fluted tube pan (such as a Bundt®).
  • Cream butter and sugar together in a mixing bowl until thoroughly combined.
  • Beat in eggs, one at a time, beating each egg until fully incorporated before adding the next one.
  • Mix in cream cheese and vanilla extract.
  • Mix in flour, about 1/2 cup at a time, until batter is smooth and velvety. Pour batter into prepared pan.
  • Bake cake in the preheated oven until top is golden brown, about 1 1/2 hours.

1 cup chopped pecans
1 (18.25 ounce) package yellow cake mix
1 (3.4 ounce) package instant vanilla pudding mix
4 eggs
¼ cup water
½ cup vegetable oil
¾ cup Irish cream liqueur
½ cup butter
¼ cup water
1 cup white sugar
¼ cup Irish cream liqueur

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Grease and flour a 10 inch Bundt pan. Sprinkle chopped nuts evenly over bottom of pan.
  • In a large bowl, combine cake mix and pudding mix. Mix in eggs, 1/4 cup water, 1/2 cup oil and 3/4 cup Irish cream liqueur. Beat for 5 minutes at high speed. Pour batter over nuts in pan.
  • Bake in the preheated oven for 60 minutes, or until a toothpick inserted into the cake comes out clean. Cool for 10 minutes in the pan, then invert onto the serving dish. Prick top and sides of cake. Spoon glaze over top and brush onto sides of cake. Allow to absorb glaze repeat until all glaze is used up.
  • To make the glaze: In a saucepan, combine butter, 1/4 cup water and 1 cup sugar. Bring to a boil and continue boiling for 5 minutes, stirring constantly. Remove from heat and stir in 1/4 cup Irish cream.
