Delicious but unusual meatloaf developed by me in my own kitchen. The majority of my friends and family love it, but there are a few haters, so be warned that this is not a meal for unadventurous eaters.

Number Of Ingredients 8

1 1/2 lbs finely diced Spam
1/2 cup cooked chopped French fries
1 egg
1 small sweet onion
1 teaspoon table salt
1/4 teaspoon black pepper
4 tablespoons barbecue sauce
1/2 cup half-and-half

Steps:

  • Don't put the Spam in a blender or a food processor. We don't want paste. Use leftover fries or leftover hashbrowns. Do not use mashed potatoes as they impart a mushy texture.
  • Fry the Spam until it is dry and slightly crunchy, draining oil as necessary.
  • Combine all ingredients and pat into a 9-inch aluminum pie pan.
  • Bake at 350°F for 1 hour until done.
  • Sprinkling this with your favorite cheese in the last 5 minutes of baking is a pleasant addition.

2 eggs
3/4 cup crushed saltine (about 22 crackers)
1/2 cup whole berry cranberry sauce
1/4 cup fresh cranberries or 1/4 cup frozen cranberries, thawed
1/4 cup packed brown sugar
2 tablespoons chopped onions
1 1/2 teaspoons salt
1/8 teaspoon pepper
1 1/2 lbs ground beef
1/2 lb ground ham
1/2 cup barbecue sauce (optional)

Steps:

  • In a large bowl, combine the first eight ingredients. Crumble beef and ham over mixture and mix well. Pat into a greased 9x5x3-inch loaf pan.
  • Bake, uncovered, at 350°F for 1 1/4 hours or until a meat thermometer reads 160.
  • During the last 15 minutes of baking, baste meatloaf with barbecue sauce if desired. Garnish with bay leaves and cranberries, if desired. Discard bay leaves before slicing.

1 (8 ounce) package Cajun-style sausage, diced
1 medium onion, diced
1 small green bell pepper, diced
2 garlic cloves, minced
2 teaspoons salt
1 teaspoon fresh ground black pepper
1/2 teaspoon dried thyme
1/2 teaspoon dried oregano
2 lbs ground beef
1/2 cup beef broth
1/2 cup tomato sauce
1/4 cup soft breadcrumbs
1 large egg, lightly beaten
2 tablespoons butter or 2 tablespoons margarine
2 tablespoons all-purpose flour
1/3 cup beef broth
1 (8 ounce) can tomato sauce
1/4 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Cook first 8 ingredients in a large nonstick skillet over medium-high heat, stirring often, 10 minutes or until vegetables are tender. Drain on paper towels; cool.
  • Stir together ground beef and next 4 ingredients in a large bowl; stir in sausage mixture. Shape meat mixture into an 11 1/2- by 4-inch loaf; place in a lightly greased aluminum foil-lined 15- by 10-inch jellyroll pan.
  • Bake at 375 degrees for 50 minutes or until meat mixture is no longer pink in center; drain meat loaf, and let stand 10 minutes. Serve with Tomato Gravy.
  • To make Tomato Gravy, melt butter and whisk in flour and cook, whisking constantly for 1 minute. Gradually whisk in broth and tomato sauce. Reduce heat and simmer until thickened. Whisk in salt and pepper.

1 1/2 cups cubed French bread (about 5 slices)
1 cup milk
2 lbs ground beef or 2 lbs ground turkey
1/2 cup finely chopped celery
1/2 cup grated raw carrot
1 small onion, grated
1 tablespoon prepared horseradish
2 teaspoons salt
1/2 teaspoon pepper

Steps:

  • Combine bread cubes and milk; let stand until milk is absorbed.
  • Mix lightly with ground beef, celery, carrot, onion egg, horseradish, salt and pepper.
  • Shape into a loaf in a shallow baking pan.
