GRILLED MEATLOAF SANDWICHES

Grilled Meatloaf Sandwiches image

Provided by Nancy Fuller

Categories     main-dish

Time 1h25m

Yield 12 to 15 servings

Number Of Ingredients 24

1 cup whole milk
3 potato rolls, torn
1 tablespoon chopped fresh rosemary
4 celery stalks, chopped
2 carrots, chopped
1 white onion, chopped
1 pound ground bison
1 pound lean (90/10) ground pork
1 pound ground veal
1 cup grated Parmesan cheese
1/4 cup Worcestershire
3 eggs, lightly beaten
Freshly ground black pepper
1 cup ketchup
1/2 cup dark brown sugar
2 tablespoons Dijon mustard
1 tablespoon apple cider vinegar
Canola oil spray, for spraying meat and rolls
12 to 15 onion slider rolls
12 to 15 slices Cheddar cheese
1/2 cup mayonnaise
12 to 15 pieces green leaf lettuce
12 to 15 thinly sliced pieces red onion
12 to 15 slices tomato

Steps:

  • For the meatloaf: Preheat the oven to 425 degrees F and line a 9-by-13-inch baking dish with foil.
  • In a small bowl, add the milk and bread and set aside. To the bowl of a food processor, add the rosemary, celery, carrots and onions. Pulse until the vegetables are medium chopped, about 15 seconds.
  • In a large bowl, combine the ground bison, pork and veal. Add in the bread mixture, chopped vegetables, Parmesan, Worcestershire, beaten eggs and some pepper and mix with your hands to combine. Continue to mix the meat for about 2 minutes or until the seasoning and vegetables are evenly distributed. Place the meatloaf mixture into the lined baking sheet and gently shape into a flat football.
  • For the glaze: In a medium bowl, whisk together the ketchup, brown sugar, Dijon mustard and apple cider vinegar.
  • Spread the glaze evenly over the surface of the meatloaf. Bake for 40 minutes. Let cool for 10 minutes before cutting.
  • For the sandwiches: Preheat a grill to medium high.
  • Spray the meatloaf pieces with canola spray and place on the grill for 3 minutes per side. Spray the insides of the onion rolls with canola spray and grill for 1 minute per side. Transfer the grilled meatloaf and rolls to a plate and assemble the sandwiches. Begin with a roll, top with cheese, some mayonnaise, a piece of lettuce and onion and a slice of tomato. Add a piece of meatloaf and serve immediately.

FANCY MEATLOAF

Fancy Meatloaf image

"I was invited to cook dinner for Nora Ephron." As was wont to happen at one point in New York. Back in 2009, Sam Sifton was invited to a potluck in which "guests were meant to bring food inspired by Ephron's career or by the woman herself." He drew meatloaf, a dish she was known for. Here, in this recipe adapted from Gourmet, he pairs beef, veal, pancetta and Parmesan. The end result, he described, as "luxurious." And what did Ms. Ephron think? She called it "remarkable."

Provided by Sam Sifton

Categories     dinner, main course

Time 1h20m

Yield Serves 6 to 8

Number Of Ingredients 14

1/2 loaf Italian bread, crust removed, torn into small pieces (about 2 cups)
1 cup whole milk
1 pound ground beef
1 pound ground veal
2 large eggs, scrambled
4 ounces thinly sliced pancetta, chopped
3/4 cup grated Parmesan
1 bunch parsley, cleaned and finely chopped (about 1 cup)
2 teaspoons grated lemon zest
Kosher salt
Freshly ground black pepper
1/4 cup extra-virgin olive oil
1/4 cup butter
1 cup dry white wine

Steps:

  • Heat oven to 375 degrees. Soak bread in milk for 10 minutes.
  • Mix beef, veal, eggs, pancetta, Parmesan, parsley and lemon zest in a large bowl. Season liberally with salt and pepper. Squeeze the bread to remove excess milk, then chop and add it to the meat. Mix gently until well combined, but do not overmix. Transfer onto a board and shape into a fine meatloaf, shy of a foot in length and 4 inches across. Loosely cover and refrigerate for 15 minutes.
  • Heat oil and butter in a large, ovenproof skillet over medium-high heat. Add meatloaf and sear without moving it until it is browned, about 5 minutes. Carefully slide a spatula under the meatloaf, then gently use another spatula to help turn it and brown the second side, again without moving it for 5 minutes. Transfer to a plate.
  • Pour out all but 2 tablespoons of the fat, return skillet to the stove and raise heat to high. Add wine and deglaze pan, scraping up browned bits stuck to it with a wooden spoon. Return meatloaf to the skillet and then transfer to the oven, basting occasionally with the pan juices, until a meat thermometer inserted into the center of the loaf reads 150 degrees, about 25 minutes.
  • Transfer the meatloaf to a platter and let stand, tented with foil, 10 minutes. Slice, pour the pan juices over the top and serve.

1770 HOUSE MEATLOAF WITH GARLIC SAUCE

1770 House Meatloaf with Garlic Sauce image

This Ina Garten Meatloaf recipe is the best I've ever had. It's tender, moist, and flavorful. The delectable garlic meatloaf sauce makes it extra fancy and tasty. Pure comfort food.

Provided by Karen

Categories     Main Course

Time 1h40m

Number Of Ingredients 20

2 tablespoons olive oil
2 cups onion (chopped (1 large))
1 & 1/2 cups celery (small-diced (2 stalks))
1 pound ground beef
1 pound ground veal
1 pound ground pork
1 tablespoon parsley (fresh, chopped)
1 tablespoon thyme (fresh, chopped)
1 tablespoon chives (chopped, or green onions)
3 large eggs
2/3 cup whole milk
2 tablespoons kosher salt
1 tablespoon black pepper (freshly ground)
2 & 1/2 cups panko bread crumbs
3/4 cup olive oil
10 cloves garlic (peeled)
2 cup chicken stock
3 tablespoons butter
1/2 teaspoon kosher salt
1/4 teaspoon black pepper (freshly ground)

Steps:

  • Preheat the oven to 350 degrees.
  • In your largest saute pan, heat the 2 tablespoons olive oil. When it is hot add the onion and celery. Cook for 5-8 minutes until the onion is soft but not brown. Remove from heat and set aside.
  • In a large bowl, add ground beef, veal, pork, parsley, thyme, chives, eggs, milk, salt and pepper.
  • Blend the panko bread crumbs in a food processor until they are finely ground, then add that to the bowl with the meat. Add the onion and celery mixture.
  • Combine the meat with your hands. This is the best way to mix meatloaf so that it doesn't get tough. Don't overdo it.
  • Cover a large sheet pan with parchment paper. Use your hands to pat the meat into a flat rectangle. Then push the sides in to make a cylinder about 15 inches by 6 inches (spreading it out first prevents air pockets).
  • Bake at 350 for 40 to 50 minutes, or use a meat thermometer to find out when it has reached 155-160 degrees F.
  • Remove from the oven and let rest for a few minutes before slicing. Serve with garlic sauce.
  • While the meatloaf is cooking, combine the oil and garlic in a small saucepan . Bring the oil to a boil, then lower the heat to low. Simmer for 10-15 minutes, until the garlic is a light golden brown. Don't burn it! Watch carefully. Strain out the oil and save it for another use (I used it for oven roasted potatoes).
  • In the same saucepan (with the garlic still in it), add the chicken stock and butter. Bring to a boil. Lower the heat but continue to boil for 35-40 minutes, until it is slightly thicker. Use a fork to smash the garlic in the pan. Add the salt and pepper.
  • Ladle the warm sauce over each serving of hot meatloaf.

OUR FAVORITE MEATLOAF

Our Favorite Meatloaf image

This ultimate meatloaf recipe took rounds and rounds of testing to get just right. Our final version incorporates an ideal blend of seasoned ground beef and pork, aromatics, and breadcrumbs and bakes in a freeform loaf on a baking sheet instead of in a loaf pan for maximum browning. The result is a loaf that is savory, tender, and juicy, yet holds together well when sliced.

Categories     Frankenrecipe     Meatloaf     Beef     Ground Beef     Pork     Breadcrumbs     Milk/Cream     Garlic     Egg     Dinner

Yield 8 servings

Number Of Ingredients 13

1 cup fine fresh breadcrumbs (from 6 slices firm white bread; see Cooks' Note below)
1/3 cup whole milk
1 medium onion, coarsely chopped
1 celery stalk, coarsely chopped
4 garlic cloves
2 tablespoons neutral vegetable oil, such as grapeseed
2 1/4 teaspoons kosher salt, divided
1 1/2 teaspoons freshly ground black pepper, divided
3 tablespoons Worcestershire sauce
1 1/2 pounds ground beef chuck, preferably 20% fat
1/2 pound ground pork
2 large eggs
1/2 cup ketchup, divided, plus more for serving

Steps:

  • Position rack in center of oven; preheat to 350°F. Line a rimmed baking sheet or 13x9" shallow baking dish with foil. Soak breadcrumbs in milk in a large bowl until ready to use.
  • Pulse onion, celery, and garlic in a food processor until finely chopped. (Alternatively, you can finely chop by hand.)
  • Heat oil in a large skillet over medium. Add onion mixture, 1 tsp. salt, and 1/2 tsp. pepper. Cook, stirring occasionally, until softened, 5-7 minutes. Remove from heat, stir in Worcestershire, and scrape into bowl with breadcrumb mixture. Add beef, pork, eggs, 1/4 cup ketchup, and remaining 1 1/4 tsp. salt and 1 tsp. pepper, then mix with your hands to combine.
  • Form meatloaf mixture into a long, well-packed, approximately 5"-wide loaf shape on prepared baking sheet. Brush top of loaf with 1/4 cup ketchup. Bake meatloaf until an instant-read thermometer inserted into the center registers 155°F, 60-75 minutes. Let rest 15 minutes before slicing. Serve with more ketchup alongside.
  • Do Ahead
  • Meatloaf can be made 3 days ahead; wrap in foil and chill, or freeze for up to 3 months.

NIF'S NOTHING FANCY MEATLOAF

Nif's Nothing Fancy Meatloaf image

Just a basic meatloaf recipe that my family happens to really enjoy. If you don't have green onions (they do add a great flavour), or your kids pick out the green pieces, you can substitute them with 1/2 medium onion, chopped. I'm not a huge fan of ketchup, but you can add it on top if you want to. Make these in a muffin tin if you want to get your kids more interested. Served with mashed potatoes and a veggie, it's a simple, tasty meal. These aren't huge portions so you might want to double the recipe. The leftovers will freeze very well. Enjoy!

Time 1h5m

Yield 1 loaf pan, 4 serving(s)

Number Of Ingredients 7

1 lb extra lean ground beef (if you use lean or regular ground beef, pour fat off when meatloaf is cooked)
6 saltines, crushed (I prefer Premium Plus)
1 egg
2 green onions, sliced
1/2 teaspoon seasoning salt
1/2 teaspoon black pepper, freshly ground
1/2 teaspoon Worcestershire sauce

Steps:

  • Mix all ingredients in a bowl; get your hands in there!
  • Spray a loaf pan with nonstick cooking spray; place mixture in pan.
  • Bake at 350 degrees Fahrenheit for 45 minutes to 1 hour or until internal temperature reaches 170 degrees Fahrenheit.
  • If you choose to make these in a muffin tin, they will cook quicker so be sure to use a thermometer.

  • Mashed Potatoes. As traditional as cherry pie for Independence Day, mashed potatoes go perfectly alongside meatloaf. This recipe includes some tasty variations so you can customize yours to suit your family's faves.
  • Skillet Candied Sweet Potatoes. An apple cider glaze gives these skillet candied sweet potatoes some serious autumn flare for a seasonal dinner that will hit the spot.
  • Baked Macaroni and Cheese. Creamy baked macaroni and cheese will turn dinner into a feast. Make it gluten free by using a different pasta and omitting the breadcrumbs, if you have dietary restrictions.
  • Creamed Peas With Mushrooms and Onions. Frozen green peas are often a childhood side to meatloaf. Without too much effort beyond defrosting a bag of peas, you can take it to another level with creamed peas, mushrooms, and onions that have far more flavor and an indulgent texture.
  • Mashed Cauliflower and Leeks. Mashed cauliflower makes a great, lower-carb substitute for potatoes. Adding leeks gives them an even more buttery, earthy flavor while garlic lends a little kick.
  • Honey Glazed Baby Carrots. The Thanksgiving table would be incomplete without honey glazed carrots, but they're simple enough to make on weeknights, too.
  • Slow Cooker Carnival Squash. Pretty carnival squash has a lovely sweetness that complements the umami of meatloaf wonderfully. Make it in the slow cooker to free up oven space for the main event or bake it up alongside.
  • Lemon Garlic Broccoli. Add a little green to your diet with this super-simple broccoli side. Enhance it with lemon juice, garlic, shallots, and red pepper flakes to give the basic crucifer more zip.
  • Toasted Garlic Bread. It's so easy to make crisp, fragrant, toasted garlic bread. Use a French or Italian loaf for this side dish or appetizer that goes great with any hearty meal including tomato sauce, from meatloaf to spaghetti dinners.
  • Cheddar Cheese Scalloped Potatoes. Cheesy, hearty, and comforting cheddar scalloped potatoes will really hit the spot. Add some chopped ham or bacon for a meatier side or mix up the cheeses for a different flavor.
