This is a spice mix used in North Africa. Goes great on any meat that you would like to grill or roast. Also, mix 1 teaspoon spice with 1 cup yogurt and 1 minced clove of garlic to serve with roasted meat.

Tabil is used to season & enhance many Tunisian dishes. In fact, Tabil means seasoning (it originally referred to the coriander which is the key ingredient in Tabil!) Tabil is often used in conjunction with harissa & added to stews. You can use it as a rub or to season cooked vegetable salads or in dolma stuffing.

1/2 cup coriander seed
4 tablespoons fresh garlic, chopped
2 tablespoons caraway seeds
2 tablespoons crushed red pepper flakes
1 teaspoon ras el hanout spice mix

Steps:

  • Combine coriander seeds, garlic, caraway seeds, crushed red pepper flakes and grindin a spice / coffee grider or in a mortar & pestle.
  • Spread out onto a baking tray and dry in a low oven (200°F) for about 1 hour.
  • Cool, grind again as fine as possible. Add the ras el hanout & store in an airtight jar in a cool, dark place for up to 4 months.

Posted for the Zaar World Tour-Africa! Tabil is said to have been brought to Tunisia in 1492. Tabil(pronounced table) means seasoning in Tunisian. In Africa, tabil is pounded in a mortar and then dried in the sun and is often used in cooking beef or veal.

2 large garlic cloves, peeled, chopped and dried in the open air for 2 days (or 2 teaspoons garlic powder)
1/4 cup coriander seed
1 tablespoon caraway seed
2 teaspoons cayenne pepper

Steps:

  • In a mortar, pound the garlic with the coriander, caraway, and cayenne until it is smooth. Store in the refrigerator or freezer. Keep in the refrigerator if using fresh garlic for up to two months or indefinitely if using powdered garlic, although the pungency will decline as time goes by.
  • Makes about 1/4 cup.

Entered for safe-keeping. From June 2012 Vegetarian Times. Tabil means coriander in Tunisian Arabic. Coriander is a pungent, slightly peppery seed. (Tunisia is located in the middle of Northern Africa.) This is a dry mix so it can be made in advance. Even with storage in a cool, dark place, the flavor will start to fade after one month.

2 tablespoons cumin seeds
1 tablespoon caraway seed
2 teaspoons red pepper flakes, use only 1 tsp. if a milder spice mix is preferred
2 teaspoons garlic powder

Steps:

  • Place coriander, cumin, caraway, and red pepper flakes in small skillet. Toast spices 3 minutes over medium-low heat, or until darkened and fragrant, swirling pan constantly. Transfer to bowl, and stir in garlic powder. Cool.
  • Finely ground spice mixture in spice grinder, coffee grinder, or mortar and pestle. Store in airtight container.

Serving at room temperature makes this perfect for a picnic or summer outdoor party. As the vegetables cool, they absorb the flavor of the vinaigrette. For Tabil spice mix, use Recipe #479881 #479881. Note: in the U.S. cilantro refers to the leafy herb that looks like Italian flat-leaf parsley; "cilantro" is the Spanish translation of the Latin "Coriandrum sativum", and the herb became available at U.S. grocers due to the rise in popularity of Mexican cuisine. 1 tablespoon olive oil
2 tablespoons olive oil
2 tablespoons lemon juice

1/4 cup cilantro, coarsely chopped
salt and pepper, to taste (optional)

Steps:

  • VEGETABLES:.
  • Preheat oven to 400 F (204 C). Brush large baking sheet with olive oil.
  • Toss together zucchini, carrots, bell pepper, shallots, and 1 tablespoon oil in large bowl. Spread on prepared baking sheet, and roast 20-25 minutes, or until vegetables are browned and tender, stirring once or twice.
  • VINAIGRETTE:.
  • Whisk together 2 tablespoons olive oil, lemon juice, and Tabil spice mix in large bowl.
  • Add hot vegetables, toss with vinaigrette and cilantro; season with salt and pepper, if desired.
  • Cool, serve at room temperature.
