1 cup soy sauce
¼ cup sesame oil
2 tablespoons olive oil
2 tablespoons rice vinegar
2 tablespoons lime juice
2 tablespoons minced garlic
2 tablespoons minced fresh ginger
1 teaspoon Sriracha hot pepper sauce
12 boneless country-style pork ribs

Steps:

  • Stir together the brown sugar, soy sauce, sesame oil, olive oil, rice vinegar, lime juice, garlic, ginger, and Sriracha in the crock of a slow cooker. Add the ribs; cover and refrigerate. Allow ribs to marinate in the refrigerator for 8 hours or overnight.
  • Before cooking, drain marinade and discard. Cook on Low for 9 hours. Drain cooked meat and shred, using 2 forks.

This is my adaptation of a Chinese style rib recipe from my Irene Kuo cookbook. I usually take the long skinny pieces of rib they put in the packages in the supermarket (the ones they "hide" under the rack lol), cut them into Chinese rib style pieces and throw them in the freezer til I have enough to cook up a batch. These are not saucy, but rather have a glaze. You can adjust the heat to your taste.

1 1/2-2 lbs pork spareribs, separated and cut through the bone into thirds
2 tablespoons peanut oil
4 slices fresh ginger, peeled and smashed
2 garlic cloves, peeled and smashed
1 cup hot water
1 green onion, chopped
3 tablespoons szechuan hot bean sauce
2 tablespoons dark soy sauce
2 tablespoons dry sherry
2 tablespoons cider vinegar
2 tablespoons sugar
2 teaspoons sesame oil
1/2 teaspoon sambal oelek (to taste)

Steps:

  • Preheat wok (preferably nonstick) over high heat.
  • Add oil to wok and swirl to coat sides of wok.
  • Add ginger slices and garlic and toss in oil.
  • Add ribs to wok and stir fry until they are all white on the outside (no need to brown).
  • Add hot water and bring to a simmer.
  • Cover and simmer for 45 minutes to an hour.
  • Mix the last 7 ingredients together, stirring to dissolve the sugar.
  • The water should have about boiled off the ribs. Remove the cover and boil further if necessary.
  • Add the sauce to the wok and stir fry until the ribs are coated and the sauce is reduced to a glaze.
  • Add the chopped green onion and stir fry another few seconds to combine.
  • Use a slotted spoon to transfer ribs to a serving platter, leaving as much of the oil behind as possible.

500 g pork ribs, , cut crosswise into single-bone pieces
1 teaspoon salt
1 teaspoon light soy sauce
Blanched broccoli to garnish
20 g ginger, , sliced
3 stalks scallions, , cut into 5cm length
5 cm cinnamon stick, , about 12g
6 star-points of star anise
6 pieces cloves
2 tablespoons Shaoxing wine, , or any rice wine
1.5 tablespoons Rice vinegar
1.5 tablespoons light soy sauce
1/2 tsp five spice powder
1/2 tsp ground white pepper
30 g rock sugar
Water sufficient just to cover the ribs in the pan.

Steps:

  • Cut the spareribs into single-bone pieces. Add the salt, light soy sauce, then marinate overnight.
  • Blanch in hot water for three minutes to remove blood and impurities. Rinse and drain in a colander. (Optional step)
  • Saute ingredients (B) with the oil in the pan until fragrant. Remove the aromatics.
  • Heat the remaining vegetable oil in the frying pan. Pan-fried the spare ribs over medium heat until golden brown on both sides. Remove and set aside.
  • Add ingredients (C). Bring the liquid to a boil and simmer for one hour over low heat or until the ribs become tender. Add water if necessary.
  • Remove the ribs from the braising liquid.
  • Strain the braising liquid through a fine sieve. Reduce the liquid. Thicken with the 1/2 teaspoon of cornflour.
  • Add the ribs back to the sauce. Coat the ribs with the sauce and reduce the sauce further until it becomes syrupy. Serve.

  • Line large baking pan with foil. Place ribs in pan. Combine salt-pepper, ginger and garlic in small bowl. Rub into ribs. Drizzle with sesame oil and rub into ribs. Cover and refrigerate overnight.
  • Preheat oven to 350°F. Uncover ribs and roast 45 minutes, turning once and basting occasionally with drippings. Combine hoisin and plum sauce. Brush liberally over ribs, covering all sides and using all of glaze. Continue roasting until ribs are tender and glazed, about 20 minutes longer. Transfer ribs to platter. Garnish with cilantro and serve.

1 medium red bell pepper (sliced thin)
1 teaspoon ginger (minced)
1 teaspoon garlic (minced)
green onions for garnish (if desired)
sesame seeds for garnish (if desired)
1 pound strip steak or flank steak (sliced thin)
2 tablespoons cornstarch
2 tablespoons mirin
1 tablespoon low sodium soy sauce
3 tablespoons low sodium soy sauce
1/2 teaspoon chili oil
1 tablespoons water
1/2 teaspoon sesame oil
1 tablespoon rice wine vinegar
1 tablespoon hoisin
1 tablespoon light brown sugar

Steps:

  • Add the steak and the marinade ingredients to a large ziplock bag. Toss to coat and let the beef marinate for 15 minutes or while you are getting the sauce ingredients together.
  • Meanwhile in a small bowl combine the sauce ingredients, set aside.
  • When you are ready to cook heat 1 tablespoon oil in a large skillet over medium high heat.Add in beef (discard marinade). Sear beef for 2-3 on both sides. Just until the beef is browned on the outside. Remove from the pan and set aside.
  • Add the remaining tablespoon of oil to the pan. Add in bell pepper, ginger, and garlic, and sauté for 3-4 minutes or until the pepper is tender.
  • Add the beef back to the pan along with the sauce. Simmer for 1-2 minutes or until the sauce is thickened.
  • Serve immediately with green onions and sesame seeds for garnish, if desired

  • Preheat an oven to 500 F. Remove the pork from the packaging and place it into a large casserole dish to marinate the pork (a 13” x 9” pan will work well). Combine all the sauce ingredients, including the sweetener, five-spice powder, Szechuan peppercorns, white pepper, sesame seed oil, Shaoxing wine, kosher salt, soy sauce, hoisin sauce, molasses, red food coloring (optional), minced garlic, and honey. Mix well to combine the sauce and pour it over the pork.
  • Move the pork around in the casserole dish to distribute the sauce all over the meat. Cover the pork and marinate the pork overnight. The next day, place a wire rack over a rimmed baking sheet. Place the meat onto the wire rack as far apart as possible. There will be some marinate in the bottom of the casserole dish that you will want to reserve. Add 1 cup of water into the bottom of the rimmed baking sheet. The water will help the drippings from smoking. Place the meat into the oven and roast on the first side for 25 mins.
  • Flip and baste this second side with the reserved marinate using a silicone pastry brush. Cook on the second side for 20-25 minutes. Be sure to add more water to the baking sheet’s bottom if it is starting to smoke. Flip the meat again and roast another 15 minutes until the meat is very charred in spots.
  • Carefully remove the tray from the oven because of the water still in the bottom of the sheet tray. If you want to play it safe, turn off the oven, remove the meat with a pair of tongs and place it on a cutting board. Allow the baking sheet to cool before removing it from the oven. Slice the pork thin and serve immediately.
