A dear friend gave me this recipe. It's been such a hit with family that I'm happy to share it. A few years back, it won a blue ribbon in a chicken recipe contest.-June Sheaffer, Fredericksburg, Pennsylvania

Ingredients

2 cups cubed cooked chicken
1 can (10-3/4 ounces) condensed cream of chicken soup, undiluted
1/2 cup sour cream
1 teaspoon poppy seeds
3/4 cup crushed Ritz crackers (about 18 crackers)
2 tablespoons butter
Hot cooked noodles

Steps:

In a large bowl, combine the chicken, soup, sour cream and poppy seeds. Pour mixture into a greased shallow 3-cup baking dish. In a small bowl, combine cracker crumbs and butter; sprinkle over top. , Bake, uncovered, at 350° for 30-35 minutes or until bubbly. Serve with noodles.

Classic comfort food! This creamy Poppy Seed Chicken Casserole with almonds and buttery Ritz crackers is an easy dinner with just 10 minutes of prep.

Ingredients

1 cup sour cream
2 (10.5 ounce) cans condensed cream of chicken soup, NOT diluted
2 teaspoons poppy seeds
5 cups cooked, shredded chicken ((about the amount of meat from 1 large rotisserie chicken or 2 smaller chickens))
½ cup slivered almonds ((about 2 ounces))
2 sleeves Ritz crackers, coarsely crushed ((about 60 crackers total))
12 tablespoons (1 ½ sticks) butter, melted
Optional garnish: chopped fresh parsley

Steps:

Preheat oven to 350° F. In a large bowl, whisk together sour cream, chicken soup and poppy seeds. Stir in chicken and slivered almonds.
Transfer the chicken mixture to a greased 9 x 13-inch baking dish.
In a small bowl, combine the Ritz crackers and the melted butter.
Add the buttered cracker crumbs to the top of the casserole.
Bake uncovered for 20-25 minutes, or until the filling is hot and bubbly.
Garnish with fresh parsley and serve.

Boil raw chicken breasts for 20 minutes. Let chicken cool slightly and cut into one inch cubes. You can also use leftover chicken or rotisserie chicken. Place cubed chicken in a greased 9×13 casserole dish.
In a bowl stir together the condensed soup and sour cream. Add the Worcestershire, celery salt, garlic, lemon juice, and pepper to the soup and sour cream mixture. Pour over the chicken.
In a separate bowl, stir together the crushed crackers, poppy seeds and melted butter. Sprinkle over the chicken and sauce.
