If you're lucky enough to get swordfish, let the mild and meaty fish grill to perfection with a simple prepared glaze and pretty summer vegetables.

Bamboo or metal skewers
1 lb. swordfish steak, cut into bite-sized (1 1/2 to 2-inch) pieces
1/2 cup purchased sweet-and-sour sauce
2 medium zucchini, cut into 1/2-inch-thick slices
1 medium red bell pepper, cut into 1 1/2-inch pieces
15 to 20 cherry tomatoes
Additional sweet-and-sour sauce, if desired

Steps:

  • If using bamboo skewers, soak in water for 30 minutes.
  • Meanwhile, heat gas or charcoal grill. Place swordfish pieces in large bowl. Add 1/2 cup sweet-and-sour sauce; turn fish to coat all sides. Add zucchini, bell pepper and tomatoes; stir gently to coat.
  • Thread fish, zucchini, bell pepper and tomatoes evenly onto skewers.
  • When grill is heated, place kabobs on gas grill over medium heat or on charcoal grill 4 to 6 inches from medium coals. Cook 8 to 10 minutes or until fish flakes easily with fork, turning once. Serve kabobs with additional sweet-and-sour sauce.

2 (6-ounce) swordfish steaks
3 tablespoons honey
3 tablespoons soy sauce
1 tablespoon vegetable oil
1 to 2 cloves garlic , minced
1 tablespoon fresh ginger, grated
1 teaspoon lime zest
1 lime, juiced
1/4 teaspoon white pepper

Steps:

  • Gather the ingredients.
  • Place fish in a large glass bowl or shallow baking dish.
  • Combine marinade ingredients in a small bowl and pour over fish. (Make sure to coat fish evenly on both sides.) Cover dish with plastic wrap and place in refrigerator for 30 minutes to 1 hour.
  • Preheat grill to medium-high heat.
  • Lightly oil cooking grate.
  • Remove fish from marinade, making sure to reserve marinade.
  • Place fish on oiled grill and brush with reserved marinade. Allow to cook for 3 to 4 minutes, turn, and coat other side with marinade. Allow fish to cook for a remaining 5 minutes.
  • Once fish is opaque in center, remove from heat and serve.

Enough vegetable oil for light brushing of fish
2 tablespoons red-wine vinegar
1 tablespoon grated fresh ginger
1 tablespoon sugar
1/2 cup plus 3 tablespoons water
1 1/2 teaspoons reduced-sodium soy sauce
1 cup chopped fresh pineapple
2 teaspoons cornstarch
2 or 3 tablespoons fresh cilantro leaves

Steps:

  • Brush swordfish lightly with vegetable oil and broil or grill until done. Use the Canadian rule: measure fish at the thickest part and cook 10 minutes to the inch.
  • Combine vinegar, ginger, sugar, 1/2 cup water, soy sauce and pineapple and mix well. Bring to boil; reduce heat and simmer 2 minutes.
  • Combine cornstarch with 1 tablespoon water to make smooth paste. Stir in remaining 2 tablespoons of water and stir well. Stir into sauce and cook briefly, stirring, just until mixture thickens. Spoon sauce over fish; sprinkle with cilantro and serve.

1 jalapeno pepper, seeded and chopped
1 tablespoon olive oil
1 tablespoon lemon juice

1-1/2 pounds swordfish steaks, cut into 1-inch pieces

200 milliliters dry white wine
20 almonds
thyme
oregano
salt
freshly ground pepper
800 grams Swordfish fillet (piece)
24 Cherry tomatoes
1 big yellow Bell pepper
2 stalks Celery
Wooden skewer

Steps:

  • Rinse the parsley, shake dry and pluck off the leaves. Peel garlic. Mash coarsely with oil, white wine, almonds, thyme, oregano and season with salt.
  • Cut swordfish into bite-sized pieces. Rinse and halve the tomatoes. Halve bell peppers, trim, rinse and cut into pieces. Rinse celery, trim and cut into smaller pieces.
  • Thread fish alternately with tomatoes, bell peppers and celery on skewers. Season with salt and pepper, brush with marinade, cover and refrigerate for 1 hour.
  • Line a barbecue grill with aluminum foil or an aluminum grill pan and cook the skewers on all sides for 6 minutes.

1 pound red or white pearl onions
2 pounds swordfish, cut into 1-inch cubes
4 teaspoons extra-virgin olive oil
Salt and pepper
12 fresh bay leaves
1 cup balsamic vinegar

Steps:

  • Preheat grill to medium-high heat.
  • In a small saucepan, bring the balsamic vinegar to a boil. Lower the heat and reduce the vinegar to about 1/3 cup, and set aside.
  • In a medium saucepan with boiling water, add the pearl onions, and cook until soft but still firm, about 4 minutes. Drain and let stand until cool enough to handle. Remove the skins, leaving the root intact and the onion whole.
  • In a large bowl, toss the swordfish cubes, onions, and olive oil together. Season lightly with salt and pepper and toss again.
  • Thread the fish, onions, and bay leaves onto wooden or metal skewers. Divide the ingredients evenly, alternating them on the skewers. Grill the fish skewers for about 1 minute on each side, for a total 4 minutes.
  • To serve, drizzle with a little of the balsamic reduction.

2 lbs swordfish steak, about 1 inch thick
1 Tbs olive oil
1 dill, fresh, picked and chopped
Glaze:
1 orange, juiced
1 lemon, juiced
1 lime, juiced
1/4 cup sugar
zest of the orange, lemon, and lime
Sweet Chili Sauce:
2 tsp olive oil
2 garlic cloves minced
1oz ginger, peeled and grated
1/2 cup hoison sauce
2 Tbs honey
1Tbs low sodium tamari
2 tsp sambal oelek

Steps:

  • Combine oil and dill. Brush over fish and let rest while make the sauce.,
  • Mix the citrus juice and zest with the sugar. Brush this glaze onto the swordfish while grilling and again after removing from the grill. Grill to desired degree of doneness. Can also be done on a grill pan.
  • Sweet Chili Sauce
  • Heat oil in sauce pan over medium heat.
  • Add garlic and ginger and saute 2 minutes, or until fragrant. Stir in remaining ingredients and heat 1 to 2 minutes more. Cool before serving. Serve as an accompaniment.

1/2 cup orange juice
1/4 cup honey
1/4 cup soy sauce
2 tablespoons fresh lemon juice
1 teaspoon garlic powder

4 6-ounce swordfish steaks (each about 3/4 inch thick)
Cooked white rice

Steps:

  • Combine orange juice, honey, soy sauce, lemon juice, garlic powder and ginger in 8x8x2-inch glass baking dish and stir. Add fish and turn to coat. Let marinate at room temperature 1 hour, turning occasionally.
  • Preheat broiler. Remove fish from marinade; place on broiler rack. Transfer marinade to small saucepan and boil 1 minute. Broil fish until just opaque in center, basting occasionally with marinade, about 4 minutes per side. Transfer fish to plates and serve with rice.

12 fresh bay leaves, sage leaves, or sprigs rosemary

Steps:

  • Bring the balsamic vinegar to a boil in a small saucepan. Lower the heat to a gentle boil and cook until the vinegar is reduced to about 1/3 cup. Set aside.
  • Drop the pearl onions into a medium saucepan of boiling water and cook until softened but still quite firm, about 4 minutes. Drain and let stand until cool enough to handle. Slip off the skins, leaving the root intact and the onion whole.
  • Toss the swordfish cubes, onions, and olive oil together in a bowl. Season lightly with salt and pepper and toss again.
  • Prepare a charcoal or gas grill.
  • Thread the fish, onions, and bay leaves onto long wooden or metal skewers, dividing the ingredients evenly among the skewers and alternating them as you like. Grill the skewers about 4 inches from the heat, about 1 minute on each side (for a total of 4 minutes). Serve with drizzles of balsamic reduction and pass remaining reduction separately.
