1/4 cup all-purpose flour
1/2 teaspoon salt
1/4 teaspoon pepper
2 pounds beef top round steak, cut into serving-size pieces
2 tablespoons canola oil
1 medium onion, thinly sliced
2 cups water
2 tablespoons Worcestershire sauce
GRAVY:
1/4 cup all-purpose flour
1/4 teaspoon salt
1/8 teaspoon pepper
1-1/4 cups beef broth or water
Hot cooked noodles or mashed potatoes, optional

Steps:

  • Preheat oven to 325°. In a large shallow dish, combine flour, salt and pepper. Pound steak with a mallet to tenderize. Add meat, a few pieces at a time, and toss to coat., In an ovenproof Dutch oven, brown steak in oil on both sides. Arrange onion slices between layers of meat. Add water and Worcestershire sauce. , Cover and bake 2 to 2-1/2 hours or until meat is very tender. Remove to a serving platter and keep warm. , In a small bowl, combine flour, salt, pepper and broth until smooth; stir into pan juices. Bring to a boil over medium heat; cook and stir 2 minutes or until thickened. Serve steak and gravy with noodles or mashed potatoes, if desired. Freeze option: Freeze cooled beef mixture in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a covered saucepan, gently stirring and adding a little broth or water if necessary.

2 pounds boneless beef round steak, cut into serving-size portions

1 cup water

Steps:

  • In a large resealable plastic bag, combine the flour, salt and pepper. Add beef, a few pieces at a time, and shake to coat., In a large skillet, brown beef in butter on both sides. 4 (4 ounce) cube steaks
½ teaspoon salt, or to taste

1 (6 ounce) can mushroom stems and pieces, undrained

2 (1/2 pound) beef sirloin tip steaks
salt and pepper to taste
1 cup (1 small) chopped onion
1 (16 ounce) can diced tomatoes

1 ½ teaspoons dried oregano
1 bay leaf

Steps:

  • Heat oil in a large Dutch oven over medium-high heat. Place steaks into the pot one at a time, quickly browning on each side. Remove steaks, and set aside. Add the onion to the pot, and cook over medium-low heat until wilted, about 3 minutes. Return the steaks to the pot, and add the tomatoes, mushrooms, celery and green pepper. Season with oregano and add the bay leaf.
  • Cover the pot, and cook over medium-low heat for about 1 1/2 hours, or until meat is fork tender. If you wish to thicken the gravy, remove the meat to a plate. 2 pounds cube steaks, pounded thin and cut into bite-sized pieces
1 ½ tablespoons all-purpose flour
1 medium onion, chopped
1 pound mushrooms, sliced
salt and pepper to taste
1 (1.2 ounce) package brown gravy mix
2 (14.5 ounce) cans stewed tomatoes
1 (12 ounce) package egg noodles

Steps:

  • Heat oil in a Dutch oven over medium heat. Dredge steak strips in flour. Working in batches, place strips in hot oil. Fry until browned on both sides. Remove to a warm platter. When all meat is browned, return meat to Dutch oven, and stir in onions, mushrooms, salt, pepper, gravy mix, and stewed tomatoes. Bring to a boil, then simmer about 30 to 45 minutes.

1 (16 ounce) can tomatoes, cut up

  • Cut meat into serving size pieces; coat with flour.
  • Melt margarine in skillet.

3 lbs round steaks, cut 1 inch thick (or more)
2 medium yellow onions, cut in long slivers
3 green peppers, cut into 2-inch hunks
1/4 teaspoon garlic powder
1 (25 ounce) can whole tomatoes
1 (15 ounce) can tomato sauce
1 teaspoon Adolph's meat tenderizer
1 1/2 teaspoons black pepper
1 1/2 cups flour
3 tablespoons Crisco
3 tablespoons butter
salt (for peppers and onions)
water (if pan sauce begins to dry while baking)

Steps:

  • Preheat oven to 325°F.
  • Grease interior of covered roasting pan or Dutch oven.
  • Cut round steak into serving size pieces (approximately 4 inch squares).
  • Sprinkle both sides of steak pieces with Aldolph's tenderizer.
  • Place flour into plastic zip lock bag and place on a chopping block (or if you don't mind the flour mess clean-up, just place half the flour on a sheet of waxed paper that's on top of a chopping block).
  • Place 4 or 5 pieces of steak into the bag of flour, turning over several times to coat, then using the edge of a dinner plate, pound the flour into the meat.
  • Do this to both sides several times.
  • Remove the "pounded and floured" meat, and continue with remaining pieces.
  • Heat heavy skillet until droplet of water rolls when dropped into hot skillet.
  • Now add the Crisco; when Crisco is melted, add the butter.
  • Quickly fry steak pieces, in batches, until browned good on both sides.
  • Remove to plate until all steak has been browned.
  • Lower heat, add onions and green peppers, about 1/4 tsp black pepper with 1/4 teaspoon salt, and scant 1/4 teaspoon garlic powder.
  • Remember NOT to salt the steak if you've used Aldolph's tenderizer, but you do need to salt the onions and green pepper.
  • Cook the peppers and onions until lightly browned on edges.
  • Do not let burn!
  • Pour in the canned whole tomatoes and tomato sauce.
  • Break up tomatoes a bit with a spoon, leaving some in rather large pieces.
  • When this comes to a boil, remove from heat.
  • Pour tomato, green pepper, onion mixture into bottom of the greased roasting pan.
  • Place fried steak over the top.
  • Cover and bake 1 3/4 hours.
  • Check liquid about half way through baking time, add 1/4-1/2 cup water if necessary to keep sauce from drying out.
  • You want to maintain a gravy.
  • Serve in large "Country Style Bowl" with side dish of buttered and creamed mashed potatoes.
  • My family enjoys mayo cole slaw as the side dish with the Swiss Steak.
  • AND lots of bread and butter to dunk into the "gravy".

Steps:

  • Place Flour, salt and Pepper in a large ziplock bag, add beef pieces and shake well to coat. You may have to do it in batches.
  • Place butter in a large, deep skillet and melt (Do not let it simmer long enough to brown).
  • Add beef and brown beef on all sides.
  • Add garlic, beef broth, tomatoes, onion, green pepper, basil and sugar and bring to a boil.
  • Reduce heat to a simmer, cover and simmer mixture for 1 1/2 Hours, Stirring Occasionaly.
  • Before serving, Sprinkle meat with cheese (If desired) And let it simmer uncovered just long enough for the cheese to melt.

2 tomatoes, cut in wedges
1/2 teaspoon oregano

  • Rub steaks with salt and pepper and roll in flour.
  • Fry in large skillet in butter at medium heat until lightly browned. Push steaks to side of pan.
  • Add a little more butter on other side and add onions and garlic. Cook until slightly cooked.
  • When steaks are almost ready, add mushrooms and tomato wedges.
  • Sprinkle with salt and pepper, oregano and basil.
  • Place your sliced mozzarella over steak. Cover until cheese melts.
  • Serve over steaks.

1/4 teaspoon black pepper
1/4 teaspoon salt
1 tablespoon canola oil
1 1/2 lbs round steaks, trimmed of all visible fat
1 teaspoon canola oil
2 teaspoons garlic, minced
1 cup celery, chopped
1 cup onion, sliced
1/2 lb fresh mushrooms, sliced
1 cup diced canned tomato
1 cup water
2 tablespoons steak sauce

Steps:

  • Preheat oven to 350 degrees Fahrenheit.
  • Place steak between pieces of waxed paper and pound meat on each side with a mallet to ensure tenderness.
  • Cut meat into bite-size pieces.
  • Combine flour, pepper, and salt; dredge meat in mixture.
  • Heat the 1 tablespoon canola oil in a skillet and brown meat; drain and place in a 2-1/2 quart casserole or baking dish.
  • Heat the 1 teaspoon canola oil in a skillet and saute garlic, celery and onion for 2 minutes, then add mushrooms. Continue to cook until onions become translucent.

4 LBS. ROUND STEAK
1 CUP FLOUR
1 3 cup(s) vegetable shortening
1 tablespoon(s) salt
1/2 teaspoon(s) savory
1/4 teaspoon(s) pepper
2 cup(s) water
1(15oz0 can(s) tomato sauce, reduced sodium
1(1 LB)12 can(s) whole tomatoes
1 c cup(s) chopped celery
1 1/8 cup(s) chopped grreen peper
3/4 pound(s) mozzarella cheese

Steps:

  • Bone and cut into eight pieces.
  • Pound both sides of meat with mallet, dredge in 1/2 cup flour
  • In a large skillet,brown meat in shortening.
  • Place meat in a 9x13x2 in. baking dish.
  • Blend remaining flour with drippings in skillet;add seasoning and cook until brown.
  • Gradually blendin remaining ingredients except cheese; cook 5 minutes.
  • pour sauce over meat; bake uncovered; at 350 degrees, for 2- 21/2 hours. top with cheese last 5 minutes.
  • I like to put this into the crockpot after the meat is browned. Ialso make this ahead of time. THIS IS FOR A WEEKEND MEAL.
