BACON-SWISS TOSSED SALAD

- In a small bowl, combine mayonnaise, sugar, salt and pepper. In a large salad bowl, layer a third of the greens and a third of the mayonnaise mixture, onion, peas and cheese. Repeat the layers twice. Cover and refrigerate for at least 2 hours. Just before serving, add the bacon and toss.

Another 7-layer salad, but I couldn't find on Zaar that is just like this old favorite. This one calls for swiss cheese (rather than cheddar), which gives it a really different flavor.

- Thaw peas and allow to dry somewhat. Chop lettuce. Cut eggs into slices.
- In small bowl, combine mayonnaise and salad dressing. Mix well.
- In pretty dish (clear is best), layer as follows: half of lettuce, sliced eggs, thawed peas, sugar, salad dressing mixture, other half lettuce, swiss cheese.

- Layer first 5 ingredients in a shallow dish.
- Spread mayonnaise over the top as if you were icing a cake. Sprinkle Swiss cheese over the mayonnaise and chill.
- This taste best when chilled overnight.

I usually make this bacon, lettuce, onion, pea, cheese and cauliflower layered salad in a large flat bowl. There's never too much because everybody loves it! You can vary the salad by substituting green onions for red, jack cheese for the Cheddar, etc.

- In a 4 quart bowl, spread 3/4 cup Catalina salad dressing in bottom.
- Layer three-fourths of the spinach on top and pack down. (Be sure spinach is very dry.) Sprinkle with salt and pepper.
- Sprinkle with bacon and layer with sliced eggs.
- Then layer with iceberg lettuce. Pack down.
- Layer with peas then onion rings. Sprinkle with sugar to taste.
- Spread with mayonnaise, creating a 3/4 inch layer.
