Steps:
- Heat olive oil in a large skillet (use a skillet with a lid).
- Add onions to skillet and pinch of salt; cover with a lid and cook over medium-low heat for 12 to 15 minutes, or until tender, stirring occasionally.
- Remove lid and continue to cook over medium heat for 3 to 5 minutes, or until golden, stirring frequently.
- Slowly add vegetable broth and balsamic vinegar; cook and stir over medium heat until liquid evaporates; about 1 minute.
- Season with salt and pepper and remove from heat.
- Serve
BALSAMIC ONIONS

- Preheat the oven to 375 degrees.
- Cut the onions in half and slice 1/4 inch thick. Place on a baking sheet and toss with 1/4 cup balsamic vinegar, the olive oil, salt, and pepper. Bake for 10 to 12 minutes, until the onions are tender. Remove from the oven, toss with 2 more tablespoons balsamic vinegar.

- Heat oil in a large skillet over medium-low heat. Add half of onions, cook down slightly then add the other half. (You can add them all at once but it might be difficult to stir until they cook down some, depending on the size of your skillet). Season with salt & pepper.
- Once onions are cooked down slightly (enough that you can stir them all in the skillet without any going overboard) add sugar and stir gently. Add balsamic and stir again. Reduce heat to low and slowly cook onions, stirring occasionally, for an hour or so. Vinegar will reduce and coat onions.
- Meanwhile, preheat oven to 400F (or according to package directions on flatbread).
- Top flatbread with half of cheese, desired amount of onions (see note) then the remaining cheese. Bake for 10 minutes or until cheese is melted and golden brown. Remove from oven, sprinkle with parsley, cut into slices and serve immediately.

- In a large skillet over medium heat, saute onions in 2 tablespoons butter, stirring occasionally 15-20 minutes until onions are caramelized and tender. Increase heat to medium-high and add mushrooms to skillet, stirring occasionally until mushrooms are tender. Transfer onion-mushroom mixture to a bowl and set aside.
- In same skillet, saute garlic in remaining 1 tablespoon butter until fragrant. Add rice to skillet and stir 1 minute. Add vinegar, then reduce heat to medium and begin adding hot chicken broth to rice, a little bit at a time, waiting until liquid is evaporated before adding more broth. Continue adding broth in small amounts 10-15 minutes until rice is tender and creamy. Stir in half-and-half, onion/mushroom mixture, and season risotto with salt and pepper to taste. Garnish with fresh parsley and serve risotto warm and enjoy!
BALSAMIC GLAZED PORK WITH CARAMELIZED ONIONS
My market had a sale on boneless, country style pork ribs so I stocked up. Not wanting to baste with a tradiditional tomato barbeque sauce, I became bold and made this up as I went along. The end result was very tasty indeed. You could use boneless chicken breasts or boneless pork chops in place of the ribs.

- *Note-You could use chopped fresh garlic in place of the dried powder, but I wouldn't add it until the the last ten minutes or so.
- I'm thinking the garlic may burn if you add it at the beginning and would ruin the dish.
- Combine all dry spice ingredients.
- Sprinkle on both sides of the ribs, rub into meat surface.
- Let stand at room temperature for 1/2 hour.
- In a large skillet, add the olive oil and 2 tablespoons of the butter over medium-high heat.
- When the butter has melted, add the ribs.
- Cook for approximately 5 minutes, and then turn over and sear the other side.
- You want to get a nice crust from the spices on each side.
- Add the chopped onion.
- Cook for approximately five more minutes, stirring the onions until they become tender and are starting to brown.
- Pour the balsamic vinegar over everything in the skillet.
- Turn the heat down to medium-low and cover the skillet.
- Cook for approximately 10-15 minutes more, depending on the thickness of the meat.
- Occasionally stir the onions and turn the meat.
- You want to really caramelize the onions, until they become slightly charred.
- They take on a lovely, sweet and smoky flavor.
- Test your meat to ensure that it's cooked through by inserting a meat thermometer in the center.
- Temperature should be 170 degrees.
- Remove the pork and onions to a platter.
- Turn the heat up to medium-high.
- Add the wine to the skillet.
- Stir up the browned bits in the skillet with a wooden spoon.
- Cook until the wine is reduced by about half, five minutes.
- Take the skillet off of the heat, and add 1 tablespoon butter.
- Stir the sauce until the butter has melted, and season with salt and pepper.
- Pour the sauce over the pork ribs and onions.

- Put your sliced onions and vinegar in a large skillet with a tight fitting lid. If you don't have one you can use a pot instead, but the process may take a bit longer. Cover and cook over medium heat about 20 minutes.
- Take off the lid and continue to cook, stirring every few minutes, until there is no liquid left. Once this happens, the onions will start to caramelize. You'll then add 1/3 cup of water, stirring again until there is no liquid left. Repeat this process until onions are fully cooked and caramelized. Set aside.
- Mix together all ingredients, form into 8 burger patties. Preheat your grill to medium-high heat. Make sure it's nice and hot before adding your burgers or they may stick. You can also cook these in a cast iron skillet. Either way, using medium-high heat, they should take about 7 minutes on each side. Flip only once to get the juiciest burgers and cook until the burgers reach 165 degrees or if you don't have a thermometer, until they're hot and no longer pink on the inside. Put a slice of provolone on each one and close the lid until melted (this will only take a minute or so).
- Serve each tasty turkey burgers on whatever you like, such as a whole wheat bun, english muffin, greens, etc., along with about 1/8th of the caramelized onions.

- Put all the ingredients apart from the vinegar in a slow cooker - or a very low oven or aga (50degreesC)
- Let it cook all day - and all night if it needs it - untill the onions are soft and dark brown and reduced. If it is crisping the heat is too high. You may need to stirr it occasionally - but i usually just leave it.
- Cook for the last half hour without a lid - to help it dry out a bit.
- Stirr in the balsamic vinegar. Done!
- I serve this with Lamb or Beef - but I also keep pots of it in the freezer to top homemade bread - or to put on puff pastry with brie.

- Cook The Chicken: Heat the oven to 450°F and arrange a rack in the middle. Place 4 cups of water and 1 teaspoon kosher salt in a medium saucepan over high heat. Add chicken and bring to a boil then reduce heat to medium-low and simmer for 15 minutes. Remove chicken to a plate and allow to rest until cool enough to handle and meanwhile start the onions. Once the chicken is cool enough to handle, shred it into bite-sized pieces.
- Make The Caramelized Onions: Meanwhile, heat 1 tablespoon of the oil in a large frying pan over medium heat until shimmering. Add the onion, season with salt and freshly ground black pepper and cook, stirring occasionally, until onion is golden brown, about 10 to 12 minutes. Add the remaining 1 tablespoon of oil and add the chicken and half of the thyme and cook for another 2 to 3 minutes until mixture is thoroughly mixed and cooked through.
- Shape The Pizza: When ready to assemble, cut a piece of parchment paper large enough to line a large rimmed baking sheet. Lightly flour the dough and either roll the dough out or press the dough into a large rectangle about 12-by-10-inches and 1/4-inch thick.Scatter mozzarella over the top then scatter chicken and onions over the mozzarella and finally top with blue cheese. Bake until crust is puffed and golden on the bottom and sides and cheese is melted, about 15 to 18 minutes.
- Make The Reduced Balsamic: Meanwhile, add the balsamic vinegar and honey to a small saucepan and simmer over medium heat until it's reduced and coats the back of a spoon, about 8 to 10 minutes (it should be the consistency of room temperature honey). Set aside. If too thick, you can loosen by adding a teaspoon of vinegar and rewarming while stirring with a spoon.
- Cut into 10 or 12 pieces and top drizzle with balsamic reduction and the thyme and serve immediately.

- Remove the skin from the onions, cut in half and place the onions cut side down on a chopping board. Slice each onion as thinly as you can.
- Add enough oil to coat the bottom of a heavy-based saucepan (how much oil is needed is going to depend on the size of your pan). Heat over med-low heat until shimmering.
