CHICKEN DUMPLING CASSEROLE

The secret of this is not to stir anything. That's what makes your dumplings. When you dish it out, you have your dumplings on top. May want to use low sodium granules.

2 chicken breasts, cooked and shredded (I use a store bought rotisserie chicken)
2 cups chicken broth
1/4 cup butter
2 cups Bisquick
2 cups whole milk
1 (10 1/2 ounce) can cream of chicken soup (the herbed cream of chicken soup if you can find it)
3 teaspoons chicken bouillon granules (I use Wylers)
1/2 teaspoon dried sage
1 teaspoon black pepper
1/2 teaspoon salt (to taste)

Steps:

  • Preheat oven to 350 degrees.
  • Layer 1 - In 9 x 13 casserole dish, melt 1/2 stick of butter. Spread shredded chicken over butter. Sprinkle black pepper and dried sage over this layer. Do not stir.
  • Layer 2 - In small bowl, mix milk and Bisquick. Slowly pour all over chicken. Do not stir.
  • Layer 3 - In medium bowl, whisk together 2 cups of chicken broth, chicken granules and soup. Once blended, slowly pour over the Bisquick layer. Do not Stir.
  • Bake casserole for 30-40 minutes, or until the top is golden brown.

Spaetzle, "little sparrows," are very like hornli, "little horns," and knopfli, "little buttons." They are all tiny dumplings, very popular in Germany and Switzerland. A plateful of these lovely golden nuggets can be a meal in itself, with salad and wine. Otherwise, serve them with chicken, game, or meat. The purchase of a spaetzle mill will simply the procedure of make them, although you can certainly make do with a large-hole colander, or even a wooden board and a sharp knife

3 cups all-purpose flour
4 eggs
1 teaspoon salt
3 grindings black pepper
1 cup warm water
4 quarts salt water, approximately
1/4 cup butter

Steps:

  • In a large bowl, combine the flour with the eggs, salt, pepper, and warm water.
  • Beat hard with a wooden spoon to form a thick, smooth batter.
  • Continue beating for 5 minutes.
  • This should be done rather energetically, by scraping the dough toward you with a regular rhythm, so as to incorporate as much air as possible.
  • Let the dough rest, covered, for 15 minutes.
  • Bring the salted water to a boil.
  • If you are using a spaetzle mill, simply push the dough through it into the boiling salted water.
  • If you do not have a mill, balance a colander (the largest you own) on the rim of the pot in which the water is boiling.
  • Make sure that the water is at least 8 inches below the colander or the dough will simply congeal from the steam.
  • Use a large wooden spoon to press the dough through the holes in the colander into the water.
  • A third alternative is to add a little more flour to the dough (about 1/2 cup) to stiffen it.
  • Remove the dough to a floured board and with a sharp knife slice it into strips about 1/4 inch wide and 1/2 inch long.
  • Boil the spaetzle for 4 minutes.
  • Drain in a large colander, and rinse briefly under cold running water.
  • Drain.
  • *Melt the butter in an ovenproof skillet.
  • Saute the spaetzle for 3 to 4 minutes, then place the skillet in a 350°F.
  • oven and bake for 10 minutes.
  • Serves 6 to 8.
  • NOTES AND VARIATIONS:*You can make the spaetzle ahead up to this point.
  • Spread them out on a kitchen towel and cover them with a damp towel.

One of my favorite beef dishes, I make this one very often at my house. Although the recipe calls for steak, you can use any cut of beef that you prefer, I sometimes cut up a small roast for this. I have even added 2 tbsp grated Parmesan cheese to the cream mixture.

1/4 cup all-purpose flour
2 lbs steak, cubed
1 medium onion, chopped
1 -2 cloves minced garlic (optional)
4 tablespoons oil
2 (10 3/4 ounce) cans condensed cream of chicken soup, undiluted
2 tablespoons grated parmesan cheese (optional)
1 cup whole milk or 1 cup half-and-half
1/3 cup water
salt and pepper
1/2 cup dry breadcrumbs
5 tablespoons butter or 5 tablespoons margarine, melted and divided
1 1/3 cups flour
2 teaspoons baking powder
1/4 teaspoon poultry seasoning
1/2 teaspoon salt (or to taste)
2/3 cup milk

Steps:

  • Dredge the cubed beef in flour.
  • In a large skillet, brown the meat on both sides in oil.
  • Transfer to a 2-1/2-quart greased baking dish.
  • In the same skillet saute the onions and garlic until soft; transfer to baking dish.
  • In the same skillet combine the soup, Parmesan cheese (if using), milk, water, salt and pepper, stirring occasionally; pour over the steak and onions in the baking dish; mix to combine.
  • Cover, and bake at 350 degrees for 50-60 minutes, or until meat is tender, remove from oven, and leave in baking dish.
  • FOR THE DUMPLINGS: increase the oven temperature to 425 degrees.
  • Combine the breadcrumbs and 2 tbsp melted butter in a small bowl; set aside.
  • In another bowl, combine the flour, baking powder, poultry seasoning and salt.
  • Stir in the milk and the remaining butter JUST UNTIL MOISTENED.
  • Drop by rounded tablespoonfuls into the crumb mixture; roll until coated.
  • Place the dumplings over the steak.
  • Return to oven and bake uncovered at 425 degrees for 20-25 minutes, or until the dumplings are lightly browned and a toothpick comes out clean.

3 -4 cups cooked chicken (I use a rotisserie chicken)
2 cups chicken broth
1/4 cup unsalted butter
1 cup flour
1 1/4 teaspoons baking powder
1/4 teaspoon salt
1 cup milk
1 (10 3/4 ounce) can Campbell's Cream of Chicken Soup

Steps:

  • Preheat oven to 400.
  • Melt butter in the microwave and pour into bottom of a 9x13 pan. Shred the chicken and spread it on top of the butter.
  • Whisk together the milk and the flour, baking powder and salt. Slowly pour over the chicken. Don't stir.
  • Whisk together chicken broth and cream of chicken soup. Pour soup over the flour and milk mixture. Don't stir.
  • Bake uncovered for 35 to 45 minutes, or until dumplings are golden brown.
