Steps:
- Preheat the oven to 350 degrees F (175 degrees C). Grease a large baking dish.
- Combine chicken, carrot, celery, and bouillon in a large pot and add enough water to cover. Bring to a boil, cover, and cook until chicken is no longer pink in the centers, 10 to 15 minutes. Drain, reserving chicken and broth in another pot or bowl.
- Melt butter in the same pot over medium heat. Cook onion and garlic in the hot butter for 5 minutes. Stir in flour, poultry seasoning, basil, thyme, and pepper. Stir in chicken broth and milk slowly. Add chicken mixture and peas. Simmer over medium-low heat until thick, 10 to 15 minutes. Pour mixture into the prepared baking dish.
- Bake in the preheated oven until mixture is bubbling, 20 to 25 minutes. Remove from the oven and place biscuits on top. Cover and bake for 15 minutes. Uncover and continue baking until biscuits are golden brown, 15 to 20 minutes more.

SWISS VEGETABLE CASSEROLE

Steps:
- Stir the soup, sour cream, black pepper, vegetables, 2/3 cup onions and 1/4 cup cheese in a 2-quart casserole. Cover the casserole.
- Bake at 350 degrees F. for 40 minutes or until the vegetables are tender. Stir the vegetable mixture. Top with the remaining onions and cheese.
- Bake for 5 minutes or until the cheese is melted.

- Preheat oven to 350°. In a large saucepan, saute onion and celery in butter until tender. Add garlic; cook 1 minute longer. Stir in flour, sugar, salt, basil and pepper until blended. - Preheat oven to 350 degrees.
- Layer 1 - In 9 x 13 casserole dish, melt 1/2 stick of butter. Spread shredded chicken over butter. Sprinkle black pepper and dried sage over this layer. Do not stir.
- Layer 2 - In small bowl, mix milk and Bisquick. Slowly pour all over chicken. Do not stir.
- Layer 3 - In medium bowl, whisk together 2 cups of chicken broth, chicken granules and soup. Once blended, slowly pour over the Bisquick layer. Do not Stir.

SWISS DUMPLING CASSEROLE
Spaetzle, are German dumplings and can be used as a side dish in place of potatoes or rice. This dish goes well with applesauce and ham or pork. Buttered Breadrumbs can also be used as the topping to add another texture to the dish. The casserole is also microwave-able. Cover, and warm it until the cheese is melted and strings when served.

Steps:
- Combine eggs and water; stir in flour and salt beating until smooth and shiny.
- The batter should pull from the side of the bowl, and should slowly slide off a spoon.
- Drop dough by ½ teaspoonfuls into large pot of boiling water (or pass through a large holed colander).
- Cook 2 to 3 minutes or until the dumplings pop to the surface.
- Remove the Spaetzle with a slotted spoon and place in a casserole dish.
- Melt the butter and sauté the onions until soft, with browned edges and add the nutmeg.
- Fold in the Swiss cheese and the sautéed onion mixture into the spaetzle.
- Salt and pepper to taste.
- Top with the reserved Swiss cheese.
- Place dish in a pre-heated 350 degree oven for 30 minutes.

SWISS STEAK AND DUMPLINGS BAKE
One of my favorite beef dishes, I make this one very often at my house. Although the recipe calls for steak, you can use any cut of beef that you prefer, I sometimes cut up a small roast for this. I have even added 2 tbsp grated Parmesan cheese to the cream mixture.

- Dredge the cubed beef in flour.
- In a large skillet, brown the meat on both sides in oil.
- Transfer to a 2-1/2-quart greased baking dish.
- In the same skillet saute the onions and garlic until soft; transfer to baking dish.
- In the same skillet combine the soup, Parmesan cheese (if using), milk, water, salt and pepper, stirring occasionally; pour over the steak and onions in the baking dish; mix to combine.
- Cover, and bake at 350 degrees for 50-60 minutes, or until meat is tender, remove from oven, and leave in baking dish.
- FOR THE DUMPLINGS: increase the oven temperature to 425 degrees.
- Combine the breadcrumbs and 2 tbsp melted butter in a small bowl; set aside.
- In another bowl, combine the flour, baking powder, poultry seasoning and salt.
- Stir in the milk and the remaining butter JUST UNTIL MOISTENED.
- Drop by rounded tablespoonfuls into the crumb mixture; roll until coated.
- Place the dumplings over the steak.
- Return to oven and bake uncovered at 425 degrees for 20-25 minutes, or until the dumplings are lightly browned and a toothpick comes out clean.

POTATO DUMPLING CASSEROLE
Yummy potato dumplings baked in a rich cheese sauce. A family favorite, and a great use for leftover mashed potatoes. You can also double the sauce recipe and use it as the base for a terrific macaroni and cheese casserole. If Jarlsberg cheese is not available at your store, you can use Swiss cheese.

- In a medium bowl, mix together the mashed potatoes, 1 cup flour, eggs, salt and pepper until well blended. Spoon into a clean plastic bag.
- Bring 5 quarts of water to a boil in a large pot. Adjust heat so that water boils very gently. Cut a small opening in the corner of the baggie, and squeeze out dumplings into the water, cutting with scissors at 1 inch intervals. Let the dumplings simmer uncovered until they float to the top. Remove with a slotted spoon, and place in a 2 quart baking dish. Keep warm.
- Preheat the oven to 350 degrees F (175 degrees C). Melt butter in a skillet over medium heat. Saute onion in butter until tender. Blend in 2 tablespoons flour until smooth. Pour in cream and broth, and cook, stirring constantly until thickened. Remove from heat and stir in half of the Parmesan cheese and half of the Jarlsberg until smooth. Pour over the dumplings in the dish. Sprinkle remaining cheeses over the top.
- Bake uncovered for 45 minutes in the preheated oven, until the top is golden brown and sauce is bubbly.

- Lightly grease 13x9x2 baking dish.
- In a large kettle melt butter and saute onions, celery, garlic until tender.
- Add flour, sugar, salt, basil, pepper and chicken broth.

SPAETZLE
Spaetzle are like noodles but better! They are served with many Hungarian meals and also Bavarian/German meals. They are used as the starch part of the meal in place of potatoes, rice or pasta Once cooked you can fry them in butter or just toss them with a little butter. Serve with gravy etc.your choice. The picture with the Spaetzle on the red plate is the way they look right after boiling them and have a little butter on them, they are quite good served plain like this. The photo in the fry pan is the way I like them most. I used a little bacon dripping, fried some onions and mushrooms added the cooked spaetzel and browned it very slowly took approx 30 minutes. Chopped bacon is also very good mixed in. Spaetzel is a nice change from regular pasta.

- Mix the flour eggs & salt together (use your blender).
- Slowly add the water until the dough is smooth, but not stiff.
- (If large eggs are used then use a little less water).
- Continue to blend the dough until it has enlarged in size.
- Heat a pot of salted water to boiling add a tbsp oil.
- Put batches of your dough in the hopper of the spaetzle grater and grate the noodles into the boiling water.
- Do the recipe bit by bit lifting the noodles out of the water when they float Keep warm while you cook the rest.
- N>B> If you do not have a spaetzle grater roll out the dough to about 1/4" thickness and slice across then slice the other way to have them the size you want them.
- Boil the same as with the spaetzle grater.
- Enjoy.

CHICKEN CASSEROLE WITH HERBY DUMPLINGS

- Heat oven to 180C/160C fan/gas 4. Toss the chicken pieces with the flour and some salt and pepper, to coat them - it's easy to do this in a plastic food bag.
- Heat the oil in a casserole with a lid. Brown the chicken pieces well on all sides - you'll need to do this in batches. Remove all the pieces to a plate, and tip the onions, carrot, lardons, bay and thyme into the pan. Cook gently for 10 mins until the onion is softened.
- Return the chicken pieces, with any juices that have collected on the plate. Then pour in the red wine, 250ml water and tomato paste and crumble in the stock cube. Add a splash more of water if you need, until the chicken is almost covered. Bring to the boil, then cover with a lid and bake in the oven for 20 mins. Remove the lid and bake for another 10 mins while you make the dumplings.
- Rub the butter into the flour with your fingertips until it feels like fine breadcrumbs. Stir in the herbs with ½ tsp salt and some pepper. Drizzle over 150ml water, and stir in quickly with a cutlery knife to form a light dough. Use floured hands to shape into ping pong sized balls.
- Place the dumplings on top of the stew and bake for 20 mins more until the dumplings are cooked through.

CHICKEN AND DUMPLING CASSEROLE
This is an easy, quick way to make chicken and dumplings. It is not traditional, but it is delicious. IMPORTANT NOTE: this recipe requires self-rising flour. If you do not use self rising flour, it will not work, and you will not get dumplings, just soup. Also, self-rising flour loses its leavening power after 6 months, and it won't work then, either. So when making this recipe, please use freshly bought self-rising flour. For the chicken, I buy a rotisserie chicken, remove the skin, legs and wings, and chop up the breast and thigh meat. This should give you about 2 to 3 cups of chopped chicken. Reserve the wings and legs for another use.

- Preheat the oven to 400ºF.
- Grease a 9" x 13" baking dish (I use Pam).
- Put the chicken in the greased baking dish.
- Sauté the onion, celery and carrot in the olive oil over medium heat for 5 minutes.

- Bake, uncovered, on the middle rack of the oven at 400ºF for 40 minutes, or until the top is beginning to brown.
- Let sit for 5 to 10 minutes before serving - this allows the sauce to set up. You can serve it right out of the oven, but the sauce will be thin.
