DAVE'S CHOCOLATE CAKE
My husband loves this cake and that is why I have named it Dave's Chocolate Cake. It is packed full of chocolate!

- 1. Mix everything together and put into a greased bundt pan.
- 2. Bake at 350° for 50 minutes
INDIVIDUAL MOLTEN CHOCOLATE CAKES
Steps:
- Preheat the oven to 325 degrees.
- Butter and flour six 6-ounce custard cups.
- Place 5 1/2 ounces of the chocolate and the butter in a metal bowl, and set it over a pan of simmering water. Stir until melted and smooth. Cool slightly.
- Using a standard electric mixer with the whisk attachment, beat the eggs, yolks and sugar at medium-high speed until they are pale and thick, about 10 minutes.
- Reduce the speed, and gradually mix in the flour.
- Add the chocolate mixture to the flour mixture, and continue to beat until thick and glossy, about 5 minutes.
- Divide half of the mixture among the prepared custard cups. Divide the remaining 2 ounces of coarsely chopped chocolate among them, placing the chunks in the very center of the chocolate mixture (there should be about 1 tablespoon of chopped chocolate per custard cup). Then top with the rest of the chocolate batter.
- Bake until the cake is set around the edges but the center jiggles slightly when the cup is moved, about 12 minutes. Cool slightly (no more than 5 minutes).
- Run a sharp knife around the edges of the cups. Turn the cakes out onto plates, and serve.
DAVE'S "SPECIAL" BLACK FOREST CAKE
My mother makes this cake for my husband when we go to visit her. He will eat two or three pieces of this over the course of the evening! It is very rich and moist. Simple to make.

Steps:
- Mix cake according to package directions and bake in a 9X13 inch pan.
- As soon as you remove from the oven, poke holes in the cake with the handle of a wooden spoon.
- Pour the sweetened condensed milk and cream of coconut over the cake.
- Make sure the milk& cream of coconut go down in the holes.
- Refrigerate cake for 20-30 minutes.
- Remove cake from refrigerator and spread the can of cherry pie filling on top.
- Refrigerate again for 30 minutes and then spread the carton of whipped cream over the top of the cake.
- Refrigerate several hours or overnight before serving.
CHOCOLATE IDIOT CAKE (FLOURLESS CHOCOLATE CAKE)
This cake is extremely rich, and tastes like the most delicious, silkiest, most supremely-chocolate ganache you've ever had. As mentioned, it's equally good a few days later, and only an idiot could possibly mess it up. You don't need to use ScharffenBerger chocolate for this cake, but use a good one-you'll appreciate it when you taste your first melt-in-your-mouth bite. Adapted from "Ready for Dessert" by David Lebovitz.

- Preheat the oven to 350F (175C).
- Butter a 9-inch (23 cm) springform pan* and dust it with cocoa powder, tapping out any excess. If you suspect your springform pan isn't 100% water-tight, wrap the outside with aluminum foil, making sure it goes all the way up to the outer rim.
- Melt the chocolate and butter in a double boiler (or microwave), stirring occasionally, until smooth. Remove from heat.
- In a large bowl, whisk together the eggs and sugar, then whisk in the melted chocolate mixture until smooth.
- Pour the batter into the prepared springform pan and cover the top of the pan snugly with a sheet of foil. Put the springform pan into a larger baking pan, such as a roasting pan, and add enough hot water to the baking pan to come about halfway up to the outside of the cake pan.
- Bake for 1 hour and 15 minutes. You'll know the cake is done when it feels just set, like quivering chocolate pudding. If you gently touch the center, your finger should come away clean.
- Lift the cake pan from the water bath and remove the foil. Let cake cool completely on a cooling rack.
- Serve thin wedges of this very rich cake at room temperature, with creme anglaise, ice cream, or whipped cream.
- Storage: This Chocolate Idiot Cake can be wrapped and chilled in the refrigerator for 3-5 days.
