1 1/2 cups long-grain white rice
1 tablespoon olive oil
1 medium red onion, chopped
1 garlic clove, minced
1 red bell pepper (ribs and seeds removed), chopped
2 cans (19 ounces each) black beans, rinsed and drained
1 can (14.5 ounces) vegetable broth
1 tablespoon cider vinegar
1/2 teaspoon dried oregano
Coarse salt and ground pepper
Garnishes (optional): lime wedges, fresh cilantro, and sliced radishes

Steps:

  • Prepare rice according to package instructions. Meanwhile, heat oil in a large saucepan over medium. Add onion, garlic, and bell pepper. Cook, stirring occasionally, until onion is softened, 8 to 10 minutes.
  • Add beans, broth, vinegar, and oregano. Cook, mashing some beans with the back of a spoon, until slightly thickened, 6 to 8 minutes. Season with salt and pepper. Fluff rice with a fork. Serve beans over rice, with garnishes, if desired.

4 cloves garlic (peeled)
1 tsp table salt
6 slices bacon (chopped)
2 TB olive oil
1 medium onion (finely chopped)
1 green pepper (seeded and finely chopped (3/4 cup))
2 1/2 tsp chicken bouillon powder
1 bay leaf
1/4 tsp ground cumin
1/2 tsp dried oregano
1 1/2 cups uncooked long grain white rice
2 15.5 oz each cans black beans, with liquid
1 3/4 cups water
1 TB red wine vinegar
Optional garnish: chopped cilantro or sliced green onions

Steps:

  • Place garlic clove on a cutting board and sprinkle with table salt. Let sit for 3 minutes and mince into a paste with knife. Set aside.
  • Place bacon and olive oil in a large heavy pot. Constantly stir over medium high heat until bacon renders fat and turns golden brown, about 6 min. Add onion, green pepper, and garlic paste into the bacon and stir until vegetables are translucent, about 5 min. Add the chicken bouillon powder, the bay leaf, cumin, oregano, and rice. Stir for 1 minute until well mixed and all the rice is coated in oil.
  • Add the beans with their liquid, the water, and vinegar. Mix to combine. Cover and bring to a boil. Immediately reduce to a simmer, and simmer covered for 45 minutes. Do not peek. Keeping pot covered, let it rest off heat another 10 minutes. Fluff rice with a fork and serve. Garnish with chopped cilantro or green onions if desired.

2 cloves garlic, chopped

2 15.5-ounce cans black beans, rinsed
1 teaspoon dried oregano
1 tablespoon red wine vinegar
4 radishes, cut into 1/2-inch pieces
0.25 cup fresh cilantro

Steps:

  • Cook the rice according to the package directions.
  • Meanwhile, heat the oil in a saucepan over medium-high heat.
  • Add the onion, bell pepper, garlic, 1 teaspoon salt, and ¼ teaspoon pepper and cook, stirring occasionally, until softened, 5 to 7 minutes.
  • Stir in the cumin and cook for 1 minute.
  • Add the beans, oregano, and 1 cup water. Simmer, covered, for 10 minutes.
  • Add the vinegar. Smash some of the beans with the back of a fork to thicken. Serve over the rice. Top with the radishes and cilantro.

1 pound black beans - dried
3 cloves garlic
4 bay leaves (divided)
2 tablespoons extra virgin olive oil
1 medium onion (diced)
1 red bell pepper (seeded and diced)
2 cloves garlic (minced)
1 tablespoon salt
1 tablespoon cumin
1 tablespoon dried oregano
1 teaspoon pepper
1/2 teaspoon cayenne
2 cups long grain white rice (rinsed)
4 cups chicken broth (low sodium)
minced cilantro and lime wedges (to serve)

Steps:

  • Soak beans overnight to soften and remove any small hard stones. The next day, strain and rinse soaked beans with fresh water.
  • To cook beans, place in a large pot and add enough water to cover the beans by two inches. Carefully smash whole garlic cloves with the back of a knife and add to the pot of beans along with 2 of the bay leaves.
  • Bring the pot to a boil then reduce heat to low and simmer until tender (90 minutes or up to two hours.) Set aside once cooked.
  • Next, in a large Dutch oven, heat olive oil over medium-high heat and sauté onions, peppers, and garlic. Add spices (salt through cayenne) and continue stirring until vegetables have softened, 4-6 minutes.
  • Rince rice in a strainer until the water comes out clear
  • Stir in rinsed (uncooked) rice and sauté for 2 minutes so that the rice starts to toast and lightly brown.
  • Pour in chicken broth and add reserved, cooked black beans along with bay leaves. Stir once then bring to a boil. Stir a second time then reduce heat to low and place a tightly fitting lid on the pot. Cook until liquid has been absorbed, about 15 minutes.
  • Use a fork to loosen the rice and bean mixture then serve with fresh cilantro and lime wedges.

These Cuban beans and rice are made with black beans and bacon and is authentic and easy and different than Puerto Rican beans and rice.

1 cup dried black beans
2 bay leaves
2 teaspoons kosher salt
3 slices bacon, coarsely chopped (about 100 g)
1 medium (7 oz) yellow onion, diced
1 medium (7 oz) green bell pepper, seeded and diced
3 cloves garlic, minced
1/2 teaspoon ground cumin
1/2 teaspoon dried oregano
1 cup long-grain white rice
1 3/4 cups store-bought or homemade chicken stock

Steps:

  • Place the beans in a large pot and cover with water by at least 3 inches (8 cm). Slide the pot in the refrigerator and let soak for at least 12 hours and up to 24 hours.
  • Drain the beans and return them to the pot. Add enough fresh cold water to cover the beans by about 1 inch (2.5 cm), toss in the bay leaves, and bring to a boil over high heat. Reduce the heat to medium-low and gently simmer until the beans are just tender, which can take anywhere from 45 to 90 minutes, depending on the age of your beans. Add the salt and continue to cook for 15 minutes more.
  • Meanwhile, in a large saucepan over medium-low heat, sauté the bacon until the fat has rendered and the bacon is crisp, 10 to 15 minutes. Using a slotted spoon, move the bacon to a stack of paper towels placed on a plate.
  • Add the onion and pepper to the pan and cook in the bacon fat until the vegetables soften, 8 to 10 minutes. Stir in the garlic, cumin, and oregano and cook, stirring, just until the garlic softens and the spice is fragrant, 2 to 4 minutes. Dump in the rice and stir constantly for a couple minutes to completely coat the rice with the bacon drippings. Then pour in the stock and bring to a boil. Lower the heat to a simmer, cover the pan, and cook until the liquid has been absorbed, 15 to 20 minutes.
  • When the beans are done, drain them, reserving at least 1/2 cup of the bean cooking liquid. Stir the beans into the pan containing the rice and continue cooking over medium-low heat until the rice is tender, 5 to 15 minutes more. If you need more liquid to fully cook the rice, use the reserved bean cooking liquid. Taste and adjust the seasoning to taste with salt. Stir in the bacon and serve the beans and rice immediately. Steps:

  • Heat a bit of oil or vegetable broth for oil-free cooking in a large saucepan. Add garlic and the optional onions and bell pepper. Fry all for around 3 minutes. Then add vegetable broth and rice. Cook for around 10 minutes.
  • Last, add the black beans, vinegar, and cumin. Season with salt and pepper plus the optional add ons, such as laurel spice or maple syrup.
  • Cook for around 5 minutes more, check if the rice is done. Divide onto plates or bowls and serve with the optional cilantro.

1 lb dried black beans
6 cups water
1 cup chopped onion
1 cup chopped bell pepper
1 tablespoon minced garlic
1/2 cup olive oil
2 bay leaves
1 teaspoon salt
1/4 teaspoon pepper
1 slice cooked and crumbled bacon
2 tablespoons red wine vinegar
2 cups cooked long-grain rice
chopped green onion, chopped hard boiled eggs,sour cream

Steps:

  • In a large stockpot cover beans with water and boil for 2 minutes.
  • Remove from heat and let stand for one hour.
  • Drain water and cover with fresh water (6 cups).
  • In a skillet saute the onions, bell pepper and garlic in oil for 5 minutes, until tender.
  • Add onion mixture and all remaining ingredients, except the red wine vinegar, to the beans and bring to a boil.
  • Reduce heat to simmer covered for 2 hours, until beans are tender.
  • Add more water if necessary.
  • At the last minute add the red wine vinegar, just before serving.
  • Serve with 2 cups of cooked rice.
  • Top with chopped green onions, chopped hard boiled eggs or sour cream.

Steps:

  • Preheat the oven to 400°F. Coat a sheet pan with cooking spray.
  • Combine the bell peppers, onion, garlic, and oil in a medium bowl. Toss with 1/4 teaspoon of the salt. Spread the vegetables on the sheet pan and roast until somewhat softened, about 15 minutes. Remove the pan from the oven and stir.

Cuban black beans and rice is a simple vegan recipe that's full of flavor and cheap to make. A hearty and delicious plant-based meal!

½ pound (225 grams) dried black beans, soaked overnight or all day
1 litre (4 ¼ cups) water
½ green pepper, finely diced, divided
½ medium onion, finely diced, divided
4 cloves of garlic, minced
1 bay leaf
2 tablespoons olive oil
½ teaspoon cumin
1 teaspoon dried oregano
¾ teaspoon smoked paprika
½ teaspoons salt, plus more to taste
1 tablespoon sherry vinegar (or red wine vinegar or apple cider vinegar)
½ tablespoon sugar
Long-grain rice, to serve

Steps:

  • Drain and rinse the soaked beans and put them in a pot along with the water, half the diced green pepper, ¼ of the diced onion, 2 cloves of the minced garlic and the bay leaf.
  • Bring to a boil then reduce the heat to the lowest setting and cover the pot with the lid. Simmer for 45 minutes.
  • After about 35 minutes start preparing the sofrito. In a pan heat the oil over medium heat and add the remaining onion. Sautee until tender then add the remaining green pepper. When the green pepper is tender add the remaining garlic and sautee for about a minute more or until the garlic is cooked. Add the cumin, oregano and paprika and fry, stirring continuously, for 30 seconds or until the spices are fragrant.
  • Add this sofrito to the beans along with the salt, cover and simmer for 30 more minutes.
  • You can start boiling water to cook the rice at this point.
  • Finally, add the vinegar and sugar to the beans and simmer for 15 more minutes. If the beans seem to have a lot of water you can simmer them uncovered this time, otherwise cover them again. You can optionally transfer a portion of the beans to a blender and stir the blended beans back into the pot (I didn't).
  • Taste and add salt as necessary (I added an additional ½ teaspoon). Serve the rice into bowls with the black beans on top.

1 (1-pound) bag dried black beans
4 quarts water
1 smoked ham hock
1 1/3 cups olive oil
2 onions, peeled and finely chopped
12 cloves garlic, peeled, finely chopped
12 small sweet chile peppers, seeded and finely chopped (or your choice combo of hot peppers)
2 bay leaves
Salt and freshly ground pepper
4 tablespoons sugar
1/2 teaspoon whole dried oregano, crushed
1 cup dry red wine
3 tablespoons red wine vinegar
4 teaspoons dried oregano
1 teaspoon ground cumin
Cumin Scented Rice, recipe follows

Steps:

  • Pick over beans, discarding any shriveled ones of foreign particles. Wash well and soak, covered in water, for 4 hours. Drain beans and place in 4 quarts of water in a soup pot. Add ham hock to the beans. Bring rapidly to a boil. Reduce heat to moderate and simmer beans until tender, about 35 to 45 minutes.
  • In a saute pan, heat 1 and 1/3 cups olive oil. Add the chopped onions and garlic to the pan and saute over low heat. Add the chopped chiles and season with salt and pepper. Add the bay leaves and cook for about 10 minutes, stirring occasionally.
  • Add 1 cup of drained black beans to the onion mixture in the saute pan, and mash thoroughly with rest of the ingredients in the skillet. Stir in the sugar and the dried oregano.
  • Add the bean and onion mixture to the bean pot. Cover, and simmer for 1 hour, at moderate heat. Add red wine, vinegar, 4 teaspoons dried oregano and cumin. Uncover and cook until sauce thickens. Serve hot.
  • 1 1/2 tablespoons butter
  • 1 tablespoon cumin seeds
  • 3 cups uncooked basmati rice
  • 2 small limes, juiced
  • 6 cups cold water
  • 2 teaspoons salt
  • Heat butter over medium heat in a large saucepan. When butter is melted, add cumin seeds and saute for 1 minute. Stir in the rice and cook for 2 minutes.
  • Turn the heat to high and add the lime juice, water and salt. Mix well. Bring to boil on high heat. Reduce heat and cook covered on low for 15 minutes until water evaporates.

My whole family loves this meal. Mix the leftovers together and use as a filling for fried burritos. Just place a scoop of warmed, mixed beans and rice in the middle of a large tortilla, sprinkle a handle of Daiya Cheddar Shreds (vegan) on the "flap" of the burrito. Roll it up so that the part with the cheese is the last section to be rolled. Then put that side down on a grill-pan covered in vegetable oil, so the heat seals the seam shut by heating the cheese. Turn burrito over so that all sides get crisp and brown.

1 medium onion, (diced)
2 cloves garlic, (crushed with the back of a knife)
1 green bell pepper, (diced)

2 cups uncooked rice
2 tablespoons Olive oil
1/4 lb (100g) bacon, (diced)
1 cup onion, (finely chopped)
1 cup green bell pepper, (minced)
1 teaspoon ground cumin
1 teaspoon dried oregano
1 bay leaf
1 tablespoon white wine vinegar
2 teaspoons salt

Steps:

  • The beans. Soak the beans in cold water overnight. Drain and place in a pot with 2 1/2 quarts (litres) of fresh water.
  • Add the onion, garlic, green bell pepper and bay leaf. Bring to a boil, reduce the heat and simmer covered for 45-60 minutes or until the beans are tender but firm. Check regularly and skim the foam off the surface.
  • Drain the beans and reserve 4 cups of the liquid. We will need it later.
  • The rice and beans. Heat the oil in a large pan, add the bacon and cook for about 3 minutes until brown.
  • Add the onion, green bell pepper, cumin, oregano, bay leaf and saute until onion wilts, about 5 minutes. Add rice and stir thoroughly. Add the beans, reserved liquid, vinegar, salt and cook uncovered until liquid has almost evaporated.
  • Stir with a fork, reduce the heat to low and cook covered for 20 minutes. Turn off the heat and let stand for 10 minutes more. Enjoy!

Bring to boil over medium-high heat. Reduce heat to medium, cover and simmer until beans are tender, stirring occasionally, about 50 minutes. Season to taste with salt. Drain, reserving beans and bean cooking liquid separately. Discard vegetables and cilantro.
  • For rice:
  • Bring 3 cups bean cooking liquid to boil in heavy medium saucepan. Add rice; bring to boil. Reduce heat to medium-low, cover and simmer until almost all liquid is absorbed, about 20 minutes. Uncover; fluff with fork.
  • Heat oil in heavy large skillet over medium-high heat. Add onions, bell pepper, garlic, cumin and oregano and sauté until onions are beginning to brown, about 5 minutes. Stir in beans and rice; cook until heated through, about 5 minutes. Season with salt and pepper.

Steps:

  • This recipe starts with the frijoles. Put the beans and bay leaves in a saucepan and cover with 6 cups of water. Bring to a boil over medium-high heat, then reduce to a simmer. Add water when necessary to keep the beans covered by 1 inch, until just tender. This will take about one hour. Season with a pinch of salt to taste. Now it's time to have some fun! Fry the bacon and oil in a 6- to 8-quart pot. Cook over medium-low heat until slightly crispy. Add the onion, pepper, garlic, cumin, oregano and stir for about 10 minutes. Add the rice and stir to coat. Add the beans and their liquid, stir well, and add enough water to cover the beans and rice by about 3/4 inch. Bring to a rolling boil over medium-high heat then turn down the heat to maintain a gentle simmer. Cover tightly and do not uncover until the water is absorbed and the rice and beans are both cooked throughout about 20 minutes. Season to taste with salt and pepper. Once done, garnish with cilantro and drizzle with a little olive oil just before serving.

  • Use a good sized saucepan with a tight fitting lid. Heat pan over medium heat, add 2 tablespoon olive oil then add garlic and ginger and sauté lightly for about 2 minutes. Add dry spices to coking ginger and garlic and stir to create paste and keep spices from burning then add rice and stir, cooking slightly for about 3 minutes. Then add water, stir and increase heat to bring to a boil before covering and reducing heat to minimum for 10 minutes to cook.
  • At the ten minute mark add tomato, green onion and black beans. Stir to combine well, return to heat, covered for another 6 to 8 minutes until rice is tender. Remove from heat, season with salt & pepper to taste.
  • Finish with remaining olive oil and chopped cilantro and let stand, off the heat for 2 or 3 minutes before serving with a little cilantro to give it a hit of green on the plate.
