My mom shared this recipe with me back in the '80s, and now it's a Turkey Day mainstay. We freeze locally grown corn during peak season, and I love to use it in this special side. -Wendy Young, Cordova, Maryland

4 large eggs
1 can (12 ounces) evaporated milk
1/2 teaspoon salt
1/4 teaspoon pepper
4 cups frozen corn (about 20 ounces), thawed
3 cups shredded Swiss cheese, divided
1/4 cup chopped onion
3 cups soft bread crumbs
1/4 cup butter, melted

Steps:

  • Preheat oven to 350°. In a large bowl, whisk together first 4 ingredients; stir in corn, 1-1/2 cups cheese and onion. Transfer to a greased 11x7-in. baking dish., Toss bread crumbs with melted butter; sprinkle over casserole. Sprinkle with the remaining cheese., Bake, uncovered, until golden brown and heated through, 35-45 minutes. Let stand 10 minutes before serving.

Number Of Ingredients 10

1 egg, beaten
3 cups fresh cut corn
1 (6 ounce) can evaporated milk
1/2 teaspoon salt
1 dash pepper
3/4 cup shredded cheese (any kind)
1/2 cup soft plain breadcrumbs
2 tablespoons melted butter
1/4 cup shredded cheese
3 tablespoons finely chopped onions

Steps:

  • cook corn in salted water until just tender.
  • Drain well.
  • Combine corn,milk, egg, onion, salt, pepper, and 3/4 cups of cheese.
  • Pour into 10x6 baking dish.
  • Combine bread crumbs, melted butter, and 1/4 cup of cheese in bowl.
  • Mix together, and sprinkle over top.
  • Bake at 350 degrees for 25 minutes.

This very simple slow cooker recipe adds a little zing to any dinner, but it's especially good with Thanksgiving dinner.

cooking spray
1 (16 ounce) package frozen corn, thawed
1 pint heavy whipping cream
2 cups shredded Swiss cheese
2 eggs, lightly beaten
ground black pepper to taste

Steps:

  • Spray the inside of a slow cooker with cooking spray.
  • Mix corn, cream, Swiss cheese, and eggs together in a bowl; season with black pepper. Pour corn mixture into the slow cooker.
  • Cook on Low until cooked through and cheese is melted, 4 to 4 1/2 hours

3-1/2 c cut fresh corn kernels - or - one 16-oz. pkg,. frozen whole kernel corn
1/4 c finely chopped onion
2 eggs
2 can(s) (5 oz.ea.) evaporated milk
1/2 tsp garlic salt
1/4 tsp pepper
1 c shredded process swiss or gruyere cheese (4 oz.)

Steps:

  • 1. In a covered medium saucepan, cook fresh corn and onion in a small amount of boiling lightly salted water for 6 minutes. (Or cook frozen corn, with onion, according to package directions.) Drain well.
  • 2. In a medium bowl, beat eggs with a fork. Stir in drained corn and onion, evaporated milk, garlic salt, and pepper. Stir in 3/4 cup of the cheese. Pour into a greased 2-qt. square baking dish.
  • 3. Sprinkle remaining 1/4 cup cheese onto corn mixture. Bake, uncovered, in a preheated 350º oven for 30 minutes. Let stand for 10 minutes before serving.

1 (5 ounce) can evaporated milk
2 tablespoons chopped onions

1/2 cup soft breadcrumbs
1 tablespoon butter, melted

Steps:

  • Preheat oven to 350*.
  • Lightly grease 2-quart baking dish; set aside.
  • In large bowl stir together egg, corn, milk, onion, salt and pepper.
  • Stir in 3/4 cup of the cheese.
  • Spoon into prepared baking dish.
  • In medium bowl combine bread crumbs, butter and remaining 1/4 cup cheese.

  • Bake for 25 to 30 minutes or until golden brown and the center jiggles slightly.

1 cups swiss cheese
10 ounces evaporated milk
0.5 cups onion
1 teaspoons salt
1 dashes pepper
16 ounces whole kernel corn
0.75 cups bread crumbs
2 tablespoons butter
1 units red sweet pepper
1 units celery leaves

Steps:

  • In medium mixing bowl, combine eggs, 1 cup of the cheese, evaporated milk, onion, salt and pepper; stir in cooked drained corn.
  • Turn mixture into an 8 ounce round baking dish (or Pyrex bowl) or 9" quiche dish. Place dish on a baking sheet.
  • Bake in a 350 degree oven for 20 minutes. Toss bread crumbs with remaining cheese and butter. Sprinkle the mixture in a ring over the corn mixture. Bake 5 to 10 minutes more or until golden and bubbly. Let stand 5 minutes. Top with sweet pepper and celery leaves (optional).

1/4 cup finely chopped scallion, white and light green parts
1 cup shredded swiss cheese, 4 oz
2 tablespoons flour
1/8 teaspoon pepper
1/8-1/4 teaspoon salt
1 cup fat-free evaporated milk
2 egg whites
1/2 cup crushed cracker
2 tablespoons butter, melted

Steps:

  • Preheat the oven to 350°F Lightly grease a casserole dish; set aside.
  • In a bowl, combine thawed corn, chopped scallions, shredded Swiss cheese, flour, pepper and salt. Mix well.
  • Stir in the evaporated milk.
  • In a separate bowl, beat the egg whites until stiff. Fold in the corn mixture.
  • Pour the corn mixture into the prepared casserole dish.
  • Mix the 2 tbsp melted butter with the crushed cracker crumbs; sprinkle over the corn casserole mixture.
  • Bake at 350°F for about 30 minutes or until a bit golden.
