STIR-FRIED TOFU WITH RED CHARD



Stir-Fried Tofu With Red Chard image

Most of the time that you devote to a stir-fry goes into chopping and measuring out ingredients. Sometimes the list looks long to me, and I fear the dish is going to take forever to make. But while I may spend 30 minutes prepping everything, I'll spend only five minutes at the stove. For things to go well, it's important that the mise en place be organized. If liquids are to be added to a dish at the same time, combine them in one bowl or measuring cup. If the garlic and ginger are to be added together, have them minced and combined in a small container. Clean your work area before you start cooking, and have everything close to the stove. Once you begin to stir-fry, you won't be able to do anything except grab the next ingredient. Read the recipe carefully from beginning to end, have the table set, your rice or noodles cooked and plates ready. I love the pink color that tofu takes on when cooked with red chard. Beet greens would also do the trick. In this recipe, blanching the greens is part of the prep.

2 tablespoons soy sauce
1 teaspoon sugar
1 tablespoon plus 1 teaspoon chopped or grated fresh ginger
3/4 pound firm tofu, sliced 1/2 inch thick, into 1- by 2-inch dominoes
1 large bunch or 2 smaller bunches red chard about 1 1/2 pounds, stemmed and thoroughly cleaned retain the stems
Salt to taste
1 teaspoon dark sesame oil
2 tablespoons canola or peanut oil
2 large garlic cloves, minced

Steps:

  • Mix together the soy sauce, 1 teaspoon of the ginger and the sugar. Toss with the tofu in a bowl, and set aside. Marinate for 15 minutes or longer. Refrigerate if not using right away. Meanwhile, fill a large pot with water and bring to a boil. Fill a bowl with ice water.
  • When the water comes to a boil, salt generously and add the red chard leaves. Cook the chard 1 to 2 minutes, until just tender, and transfer with a slotted spoon or deep-fry skimmer to the ice water. Drain and squeeze out the water (you don't have to squeeze it completely dry). Chop coarsely and set aside.
  • Trim the ends of the chard stalks, clean them well and slice crosswise, about 1/4 inch thick.
  • Heat a large, heavy nonstick skillet or wok over high heat until hot enough to evaporate a drop of water on contact. Add 1 tablespoon of the oil, swirl to coat the pan and reduce the heat to medium-high. Lift the tofu from the marinade, and add to the pan. Stir-fry for two to three minutes, until lightly colored. Add the chard stalks, and stir-fry for 1 minute. Add the remaining tablespoon of oil and the garlic and remaining ginger, and stir together for about 30 seconds until fragrant. Stir in the blanched red chard, and stir-fry with the tofu for one minute. Add the tofu marinade and cook, stirring, for another minute or two, until heated through and fragrant. Remove from the heat and serve, with rice or noodles.

4 slices bacon, chopped
2 tablespoons butter
3 tablespoons fresh lemon juice
½ teaspoon garlic paste
1 bunch Swiss chard, stems removed, leaves cut into 1-inch pieces
salt and pepper to taste

Steps:

  • Heat a skillet over medium heat. Place the chopped bacon in the skillet and cook until the fat separates from the meat. Melt the butter in the skillet. Stir in the lemon juice and garlic paste. Add the Swiss chard to the butter mixture. When the leaves begin to wilt, place a cover on the skillet and increase heat to medium-high. Allow the chard to cook while covered for about 4 minutes. Stir the chard leaves to coat with the butter mixture. Season with salt and pepper.

This is particularly beautiful if you can find rainbow chard, those multicolored bunches with red, white and yellow stems. Slice the chard crosswise in thin strips. If the pieces are too thick, they'll be tough.

1 tablespoon soy sauce (low-sodium if desired)
1 tablespoon Shao Hsing rice wine or dry sherry
2 teaspoons dark Asian sesame oil
1/4 to 1/2 teaspoon salt (to taste)
1/4 teaspoon ground pepper, preferably white pepper
1/4 teaspoon sugar
1 tablespoon peanut oil or canola oil
1 tablespoon minced garlic
1 tablespoon minced ginger
1 pound Swiss chard, preferably rainbow chard, stems trimmed, washed in two changes of water and cut crosswise in 1/2-inch strips
1 medium red bell pepper, cut in 1/4-by-2-inch julienne 1 cup julienne
1/4 cup thinly sliced scallions or minced red onion
1/4 cup coarsely chopped cilantro (optional)
Cooked quinoa, brown or red rice, or rice noodles for serving

Steps:

  • In a small bowl or measuring cup, combine the soy sauce, rice wine or sherry, and the sesame oil. Combine the salt, pepper and sugar in another small bowl. Have all the ingredients within arm's length of your pan.
  • Heat a 14-inch flat-bottomed wok or 12-inch steel skillet over high heat until a drop of water evaporates within a second or two in the pan. Swirl in the oil by adding it to the sides of the pan and tilting it back and forth. Add the garlic and ginger, and stir-fry for no more than 10 seconds. Add the chard, and stir-fry for two minutes, until the leaves wilt. Add the red pepper and spring onion or red onion. Turn the heat to high, and stir-fry for one minute, or until the pepper begins to soften. Add the salt, pepper and sugar. Toss together, and add the soy sauce mixture. Stir-fry for two to three minutes until the chard leaves are tender and the stems and red peppers are crisp-tender. Stir in the cilantro, and serve over cooked quinoa, rice or rice noodles.

3 tablespoons olive oil
2 tablespoons balsamic vinegar
2 tablespoons lemon juice
1 teaspoon lemon zest
3 tablespoons fresh basil, chopped
1 lb extra firm tofu, in bite sized pieces
3 tablespoons olive oil
6 garlic cloves
1 lb swiss chard
1/4 teaspoon spike seasoning

Steps:

  • Preheat oven to 375 Degrees F.
  • Mix first five ingredients in small bowl.
  • Line baking dish with tofu in one layer. Pour marinade over and bake for 1/2 an hour, or until marinade is absorbed by tofu and appears dry.
  • Remove stems and cut Swiss Chard (or other greens) into bite sized pieces and soak in cold water.
  • In a large saute pan, heat second batch of Olive oil and toast garlic until light brown (4-5 minutes). Add Tofu, reserving any fluid for gravy, to saute pan for one minute. Add greens and turn with tongs until wilted. Simmer for 15-20 minutes until tender.
  • Serve over grain (rice, etc)as you would any stir fry.

2 tablespoons low sodium soy sauce
1 tablespoon mirin (sweet rice wine)
2 teaspoons rice vinegar
1 teaspoon honey
1 (12 1/3 ounce) package water-packed reduced-fat firm tofu, drained
cooking spray
1 teaspoon dark sesame oil
1 cup thinly sliced shiitake mushroom caps
1 1/2 teaspoons minced peeled fresh ginger
1/4 teaspoon crushed red pepper flakes
2 garlic cloves, minced
4 cups thinly sliced swiss chard
1/2 teaspoon sesame seeds, toasted
2 teaspoons low sodium soy sauce

Steps:

  • To prepare tofu, combine the first 4 ingredients, stirring with a whisk. Cut tofu lengthwise into 4 equal slices.
  • Carefully place tofu in an 11 x 7-inch baking dish. Pour the soy sauce mixture over tofu. Cover and refrigerate 30 minutes, carefully turning once.
  • Preheat broiler.
  • Remove tofu from dish; discard marinade. Place tofu on a baking sheet coated with cooking spray.
  • Broil 10 minutes on each side or until tofu is lightly browned.
  • To prepare greens, heat oil in a large nonstick skillet over medium heat. Add mushrooms, ginger, pepper, and garlic; cook 1 minute, stirring frequently.
  • Add chard and sesame seeds; cook 3 minutes or until chard wilts, stirring frequently. Stir in 2 teaspoons soy sauce.
  • Place 1/4 cup chard mixture on each of 2 plates; top each serving with 1 tofu slice. Repeat layers with remaining chard and tofu.

1 tablespoon clear honey
150 g flat rice noodles
250 g swiss chard

200 g shiitake mushrooms, halved

1 red pepper, deseeded and sliced
1 orange bell pepper, deseeded and sliced
227 g water chestnuts, drained and sliced

  • Mix all the sauce ingredients until smooth.
  • Cook the rice noodles according to the packet. drain and rinse under cold water, then set aside.
  • Separate the leaves and stalks of the chard and shred the leaves. (You may also finely chop the stems and add them is you wish).
  • heat the oil in a wok and add the mushrooms and chard stalks (if using) and stir fry for 1 minute.
  • Add the garlic, peppers and chard leaves and fry for a further 2 minutes.
  • Add water chestnuts and sauce and stir fry for 2 minutes.
  • Add noodles, mix well and serve.

3/4 cup chicken broth
3 tablespoons light soy sauce
2 tablespoons brown sugar
1 tablespoon sesame oil
1 tablespoon sesame seeds
1 tablespoon cornstarch
2 teaspoons gingerroot, peeled and minced
1 1/2 teaspoons garlic, minced
1/2 teaspoon red pepper flakes (optional) or 1/2 teaspoon Tabasco sauce (optional)
1 lb boneless chicken, cut in thin strips
14 ounces firm tofu, cubed (optional)
1 cup snow peas or 1 cup sugar snap pea, cut into 1-inch pieces
12 ounces spaghetti
1/2 cup green onion, chopped

Steps:

  • In a small bowl, whisk together first nine ingredients and set aside.
  • In large skillet over medium-high heat saute chicken in a small amount of olive oil until meat is cooked through or tofu is lightly browned. Remove from skillet and set aside.
  • Add snow peas or sugar snap peas to skillet. Add soy sauce mixture and bring to a boil, stirring frequently. Reduce heat and simmer until sauce thickens, approximately 3 minutes.
  • Mix in cooked spaghetti and green onions. Top with chicken/tofu and serve immediately.
  • Variation: Add other vegetables according to the length of time needed to cook until crisp-tender. Add first: thinly sliced carrots. Next: sliced, peeled broccoli stems, onions, bell pepper strips, asparagus, chopped Swiss chard stems, cabbage. Next: broccoli florets, along with soy sauce mixture. Next: sliced mushrooms and summer squash. Last: fresh greens like spinach. You can use any combination of the vegetables listed above.

2 tablespoons pine nuts, toasted to light brown
2 tablespoons peanut oil
2 medium shallots, chopped finely
2 bunches red swiss chard or 2 bunches white swiss chard, rinsed well and torn into 2" pieces
1/4 cup crumbled feta cheese (Use your favorite Type, cow or goat)
salt and pepper

Steps:

  • In a wok heat the oil (medium heat).
  • Add shallots; stir fry 1 minute or until just beginning to brown.
  • Add Swiss Chard, toss and cover.
  • Cook 2 minutes.
  • Remove cover and cook about another minute.
  • If there is any liqiud drain it off.

16 ounces firm tofu, drained
4 tablespoons rice vinegar
1 tablespoon sesame oil
2 tablespoons reduced sodium soy sauce
1 tablespoon honey
1 tablespoon fresh ginger, minced
2 garlic cloves, peeled and minced
3 tablespoons Thai sweet chili sauce
4 green onions, sliced (white and green parts)
1 lb fresh asparagus
1 cup mushroom, sliced
1/4 cup reduced sodium soy sauce
2 tablespoons lime juice
5 tablespoons water
1 teaspoon cornstarch
2 tablespoons canola oil or 2 tablespoons peanut oil

Steps:

  • Place tofu between several sheets of paper towels on a plate and top with another plate or heavy pan and let sit for 30 minutes to press out liquid. Discard towels and turn tofu block on it's side and slice in half, making halves about 1 inch thick. Place slices in a pie plate or shallow baking dish.
  • In a small bowl, mix vinegar, sesame oil, 2 tbls soy sauce, honey, ginger, garlic and chili sauce. Pour this mixture over the tofu slices and cover with plastic wrap. Refrigerate for 2-4 hours, turning slices over halfway through.
  • Wash asparagus and snap off tough ends. Slice spears and tips into 1-inch pieces.
  • Remove tofu from marinade and pat dry. Save marinade.
  • Mix reserved marinade in a bowl with 1/4 cup soy sauce, lime juice, water and cornstarch.
  • Cut tofu slices into 1-inch cubes.
  • Heat oil over medium-high heat in wok or large skillet and stir-fry tofu until it begins brown, about 5 minutes. Remove tofu from pan to a plate.
  • Add asparagus, green onion and mushrooms to wok or skillet (add more oil if needed) and stir-fry until asparagus is just beginning to be tender, about 6 minutes. Return tofu to pan and stir-fry another minute or two.
  • Stir in marinade mixture and bring to a boil, cooking until slightly thickened. Serve at once over rice or noodles.
