BOURBON BBQ SAUCE
If you like whiskey, you'll love this bourbon BBQ sauce. It's perfectly sweet, a little smoky, and generously flavored with bourbon. Bonus that it takes only 25 minutes to make and is easily made refined sugar-free.

Steps:
- Place all the ingredients into a small pot over medium-high heat. Stir well then bring the pot to a boil. Reduce the heat so that it bubbles gently and continue to cook (with the lid off) for 15 minutes, or until the sauce reduces to about 1 ¾ cups.
- Store for up to 2 weeks in your fridge or up to 3 months in your freezer.

BOURBON WHISKEY BBQ SAUCE
This is a barbecue sauce recipe using Kentucky bourbon whiskey. For best results, refrigerate for a day or two, allowing the flavors to blend.

- In a large skillet over medium heat, combine the onion, garlic, and whiskey. Simmer for 10 minutes, or until onion is translucent. Mix in the ground black pepper, salt, ketchup, tomato paste, vinegar, liquid smoke, Worcestershire sauce, brown sugar, and hot pepper sauce.
- Bring to a boil. Reduce heat to medium-low, and simmer for 20 minutes. Run sauce through a strainer if you prefer a smooth sauce.

BOURBON BARBECUE PORK RIBS
Steps:
- Preheat oven to 290 degrees F.
- Season the ribs liberally with salt and pepper on both sides and place in a proportionate size deep roasting pan. Add 1 cup barbecue sauce and 2 cups water over the ribs until almost completely submerged; if not add a bit more sauce and water or use a smaller pan. Cover tightly with aluminum foil, place on center rack of the oven, and bake for about 2 hours or until meat is almost falling off the bone. Remove, drain liquid immediately, and coat cooked ribs with fresh barbecue sauce. It is best to make the ribs a day ahead up to this point. Refrigerate overnight and bring to room temperature before grilling.
- Preheat a grill to high. Place ribs on grill and grill for just a few minutes on each side. Serve.

- In a deep frying pan (Dutch oven?), melt the butter and gently fry the onions, chilies and garlic for about 5 minutes.
- Lower the heat and add all the other ingredients, except the Bourbon, stirring after each addition.
- Simmer for about 10 minutes, stirring frequently, then add the Bourbon and cook for another 3-5 minutes.
- Let the sauce cool, stir now and then.
- Put in clean jars or wide neck bottles and label.
- Store in a cool dark place.

- Sautee the onion and garlic. Melt butter in a medium saucepan over medium heat. Add the diced onions and minced garlic to the pan and cook until translucent and fragrant, about 4-5 minutes.
- Finish making the sauce. Slowly stir in the pineapple, brown sugar, water, apple cider vinegar, bourbon, tomato paste, molasses, and sweet rub. Increase the heat to high and bring the sauce just to a boil.
- Simmer and blend. Reduce the heat to medium low and simmer for 25 minutes. Turn off the heat and allow the sauce to cool slightly before transferring to a blender jar. Attach the blender lid tightly and blend the sauce until completely smooth.
- Use or store. Store the sauce in a lidded jar in the refrigerator. This sauce can be used immediately, but it tastes even better after it has chilled for 24 hours. The sauce lasts up to 2 weeks in the fridge.
