Swiss Chard Recipe with Potatoes image

Naturally vegan, this Swiss Chard Recipe with Potatoes makes a great Italian side dish that goes with almost any meal. It's an easy Italian recipe just like nonna used to make.

2 pounds yellow potatoes (about 4 medium, peeled and diced (¾ inch))
1 teaspoon salt
2 pounds Swiss chard (ends trimmed, cleaned, ribs separated from the leafy part, cut into ½-inch pieces)
4 tablespoons olive oil (separated)
3-4 cloves garlic (fresh, roughly chopped)
pinch red pepper flakes (optional, or more)
salt and pepper (to taste)
1-2 tablespoons lemon juice from ½ lemon and olive oil (optional, to garnish, from ½ lemon )
1 tablespoon olive oil (optional, to drizzle over the top)

Steps:

  • Bring a large pot of water to a rolling boil.
  • Add the diced potatoes and the salt.
  • Reduce heat to a simmer for about 15-20 minutes, until they become tender and can be easily pierced with a knife.
  • While the potatoes are simmering, properly clean and chop the chard into ½ inch strips. (refer to details in post).
  • When the potatoes are tender, add the chopped chard stems.
  • Boil for 3-5 minutes or until just beginning to soften. The total time depends on their size.
  • Next, add the leafy chopped portion of the chard and boil for approximately 30 seconds. Gently drain all the vegetables in a colander.

Jim Leiken, the executive chef at DBGB Kitchen & Bar, cooked us this hearty, rustic dish of fork-tender potatoes, Swiss chard and bubbling Gruyère that can move easily from a satellite role to the centerpiece of a vegetarian holiday meal.

Salt
1 pound Swiss chard leaves and slender stems, stems cut into 1/4-inch cubes
2 1/2 cups heavy cream
1 garlic clove, smashed
1 small shallot, sliced
2 thyme sprigs
1 bay leaf
1/4 teaspoon freshly grated nutmeg
3 pounds (6 to 8 medium) Yukon Gold potatoes, peeled
1 tablespoon butter, at room temperature
Pepper
6 ounces grated Gruyère

Steps:

  • Heat the oven to 350 degrees, and place rack in the center. Bring a large pot of lightly salted water to a boil; set a bowl of ice water on the side. Boil the chard leaves until tender, 3 to 5 minutes, then transfer with a slotted spoon to the ice water. Squeeze them dry and chop roughly. Boil the diced stems until tender, 3 to 5 minutes. Drain well and add to chopped chard leaves.
  • In a small saucepan, bring the heavy cream, garlic, shallot, thyme and bay leaf to a simmer. Cook until reduced by half, about 25 minutes. Strain out the solids and add the nutmeg.
  • Meanwhile, slice the potatoes into 1/8-inch-thick rounds with a mandoline or sharp knife. Butter a 12- to 14-inch gratin dish. Assemble the gratin by layering the ingredients in this order: a single, slightly overlapping layer of one-third of the potato slices, a sprinkling of salt and pepper, one-third of the Gruyère, half the Swiss chard and one-third of the reduced cream. Repeat once, and then top with one more layer of potato, salt and pepper, and the rest of the Gruyère and cream.
  • Bake until the top is browned and the potatoes are fork-tender, about 45 minutes.

  • Wash the chard well. Trim the leaves away from the ribs. Cut the ribs in ¼-inch pieces and set aside, and then chop the leaves in 1-inch strips.
  • Heat the oil in a skillet over medium heat. Cook and stir the onion, chard ribs, garlic and chile for 5 to 10 minutes, until the onion is translucent and the chard ribs are soft. Add the chard leaves, the cilantro and the oregano and continue to cook and stir until the chard leaves have wilted and shrunk in volume. Sprinkle with the vinegar and season to taste with salt.
  • Pre-heat oven to 350° F. Lightly coat a 9 x 13-inch baking dish with oil and spread about ¼ cup of the enchilada sauce around the oiled dish. Set aside.
  • Place tortillas on a baking sheet, 4 to 6 to a pan, depending on the size of your pan. Lightly mist both sides of the tortillas with cooking spray. Heat in the oven 3 to 5 minutes, until the tortillas are soft and pliable, no more.
