WARM FARRO SALAD WITH CHARRED CORN

Warm Farro Salad with Charred Corn image

Provided by Jeff Mauro, host of Sandwich King

Categories     side-dish

Time 55m

Yield 6 to 8 servings

Number Of Ingredients 15

1/4 cup extra-virgin olive oil
Grated zest of 1 lemon, plus 3 tablespoons fresh lemon juice
1 tablespoon Dijon mustard
2 tablespoons minced shallot
Kosher salt and freshly ground pepper
6 ounces cherry tomatoes, halved
Kosher salt and freshly ground pepper
1/2 cup apple cider vinegar
1 1/2 cups farro
3 ears of corn, shucked
1 tablespoon vegetable oil
1/2 cup Kalamata olives, pitted and chopped
1/4 cup pistachios, chopped
1 tablespoon thinly sliced fresh chives
2 tablespoons chiffonade fresh basil

Steps:

  • Start by making the vinaigrette: In a bowl, whisk the olive oil, lemon zest and juice, mustard and shallot; season to taste with salt and pepper.
  • For the salad, combine the cherry tomatoes with salt and pepper to taste in a small bowl. Set aside.
  • Preheat a grill to high. Fill a large saucepan with 1 1/2 quarts water; add 1 tablespoon salt and the vinegar. Bring to a simmer over medium-high heat. Add the farro and gently simmer until al dente, 15 to 20 minutes; drain well. While the farro is warm, immediately mix with about three-quarters of the vinaigrette (set aside the rest to punch up or remoisten the salad later if necessary).
  • While the farro is cooking, brush the corn with the vegetable oil. Season with salt and pepper. Cook on the hot grill, turning with tongs, until charred, 10 minutes. Cut off the kernels.
  • Stir the corn kernels, tomatoes, olives, pistachios and chives into the farro. Gently toss to combine; add more vinaigrette and season with salt and pepper. Garnish with the basil.

WARM FARRO SALAD WITH ROASTED BUTTERNUT SQUASH AND SPICED CRANBERRY VINAIGRETTE

Warm Farro Salad with Roasted Butternut Squash and Spiced Cranberry Vinaigrette image

This warm fall salad is great with grilled or roasted chicken. Grilled lamb chops would also pair beautifully due to the addition of feta and fresh mint.

Categories     side-dish

Time 1h

Yield 8 servings

Number Of Ingredients 15

3 tablespoons brown butter (infused with a cinnamon stick during browning), melted
1 butternut squash, peeled, seeded and diced
2 cups farro
Salt
Extra-virgin olive oil
Freshly ground black pepper
3 cups fresh cranberries
2 cups brown sugar
2 tablespoons cider vinegar
1 teaspoon ground cinnamon
1/2 teaspoon ground allspice
2 oranges, zested and juiced
1 bunch fresh mint, picked, washed and lightly torn
2 cups fresh arugula
1 cup crumbled French feta

Steps:

  • Toss the brown butter with the butternut squash. Roast the squash in a 425 degree F oven until just tender and brown on the edges, 10 to 15 minutes. Meanwhile, cook the farro in boiling, salted water, until just tender (a slight chewiness is desirable in farro), about 10 minutes. Drain the farro, toss with olive oil and season lightly with salt and pepper. Set aside.
  • Combine the cranberries, brown sugar, vinegar, cinnamon, allspice and orange zest and juice in a saucepan. Cook over medium heat until the cranberries are bursting and their juices have slightly thickened, about 15 minutes.
  • When you are ready to serve the salad, place the farro in a large serving platter, scatter the roasted squash, mint, arugula and feta over top. Drizzle with the cranberry vinaigrette and some olive oil.

NY TIMES FARRO SALAD WITH BEETS, BEET GREENS AND FETA

NY Times Farro Salad With Beets, Beet Greens and Feta image

Farro is a sturdy grain that stands up well to such lusty ingredients as beet greens. The flavor is sweet and nutty, and it contrasts nicely with salty feta or goat cheese. The farro will absorb the color from red beets, giving this salad a pinkish tint. Be sure to cook the farro until tender, or else the salad will be chewy.

Time 35m

Yield 8 serving(s)

Number Of Ingredients 11

3 beets with greens, beets roasted & stems washed and rinsed in 2 changes of water
1 cup cracked farro, soaked for one hour in water to cover and drained
salt, preferably kosher salt, to taste
2 tablespoons sherry wine vinegar
1 teaspoon balsamic vinegar
1 small garlic clove, minced
1 teaspoon Dijon mustard
1/2 cup extra virgin olive oil (may substitute 1 to 2 tablespoons walnut oil for 1 to 2 tablespoons olive oil)
1/2 cup walnuts (broken pieces) (optional)
2 ounces feta (more if desired for garnish) or 2 ounces goat cheese, crumbled (more if desired for garnish)
1/4 cup chives or 1/4 cup mint

Steps:

  • 1. Bring 2 quarts water to a boil in a medium saucepan. Fill a bowl with ice water. When the water comes to a boil, add salt to taste and the greens. Blanch for two minutes, and transfer to the ice water. Allow to cool for a few minutes, then drain and squeeze out excess water. Chop coarsely and set aside.
  • 2. Bring the water back to a boil, and add the farro. Reduce the heat, cover and simmer 45 minutes, stirring from time to time, or until the farro is tender. Remove from the heat and allow the grains to swell in the cooking water for 10 minutes, then drain.
  • 3. While the farro is cooking, make the vinaigrette. Whisk together the vinegars, salt, garlic and mustard. Whisk in the oil(s). Add to the farro. Peel and dice the beets and add, along with the beet greens, feta or goat cheese, herbs and walnuts. Toss together, and serve warm or room temperature with a little more cheese sprinkled over the top if you wish.

WARM ROASTED VEGETABLE FARRO SALAD

Warm Roasted Vegetable Farro Salad image

This dish is great as a main course or as a side to a lean protein. Cooking farro in almond beverage provides an additional nutty flavour that enhances the overall complexity of the dish

Provided by Mary Jenny

Categories     Nuts

Time 1h35m

Yield 4 , 4 serving(s)

Number Of Ingredients 16

1/2 medium sized eggplant, peel on and large diced
1 tablespoon kosher salt or 1 tablespoon sea salt
1 cup cherry tomatoes, washed and left whole
1 medium sized zucchini, peel on and large diced
6 white button mushrooms, quartered
6 garlic cloves, peeled, trimmed and sliced
1/2 medium sized red onion, peeled and cut into wedges
1 tablespoon olive oil
1 cup cracked farro
2 cups almond milk (Almond Breeze)
1 teaspoon tbsp olive oil (15 mL)
1 tablespoon olive oil
1 tablespoon balsamic vinegar
3 sprigs fresh cilantro
1/2 teaspoon salt
1/2 teaspoon pepper

Steps:

  • Preheat the oven to 400˚F (200˚C).
  • In a large flat pan or baking sheet, salt the eggplant slices generously on all sides, toss to coat evenly and hold for 30 minutes to release excess moisture and bitterness.
  • Drain and rinse the eggplant and toss into a large mixing bowl. Add in the tomatoes, zucchini, mushrooms, garlic and onions. Generously drizzle the vegetables with olive oil and season with salt, and pepper, stir to coat. Transfer the vegetables to an ovenproof pan lined with tin foil. Roast the vegetables in the oven for 20 - 25 minutes or until soft, caramelized and fork tender. Stir or flip the vegetables about 10 - 15 minutes into the roasting process to avoid sticking to the pan. Remove the pan from the oven and set aside.
  • Meanwhile, rinse the farro with water and drain in a colander over the sink. Add the farro to a 3-quart (3L) saucepot and add in the Almond Breeze. Season with a pinch of salt and a drizzle of olive oil. Bring the liquid to boil over medium high heat, and then turn down the heat to a low simmer to avoid spilling over. Simmer the farro for 20 minutes with the lid to the pot cocked to one side to let out steam. Turn off the heat but leave the pot on the stovetop and close the lid. Steam in the pot for another 5 minutes or until the farro is soft but slightly chewy in the centre. Remove the lid and fluff with a fork.
  • When ready to assemble the dish, combine the cooked farro with the vegetables in a large serving dish and gently toss to mix. Whisk together the olive oil with the balsamic vinegar and drizzle over the farro salad. Toss to coat and season with salt and pepper to taste. Garnish with fresh cilantro and a squeeze of lemon. Serve warm.

  • Preheat the oven to 425 degrees F. Place the squash on a baking sheet and drizzle with the olive oil. Season with a big pinch of salt and pepper. I also like to do a sprinkle of garlic powder!
  • Roast the squash for 20 minutes, or until slightly caramelized and fork tender. While the squash is roasting, you can make the farro too! Cook it according to the package directions. You can also make the vinaigrette during this time too!
  • To toast the pecans, heat the pecans in a nonstick skillet over medium heat. Drizzle in the maple syrup. Cook for 2 to 3 minutes, stirring often, as the maple syrup sizzles. Spread the pecans on a sheet of parchment paper until ready to use. You can chop them or leave them whole - your choice.
  • Place the farro in a large bowl. Toss in the roasted butternut squash cubes, the dried cranberries, goat cheese and pecans. Drizzle on a few tablespoons of the vinaigrette and toss the salad well.
