BAKED LEMON SOLE WITH SAUTEED SWISS CHARD
Steps:
- Preheat oven to 400 degrees F.
- In a food processor combine bread, lemon zest, walnuts and cheese. Pulse until almost uniform in texture. Continue pulsing while drizzling in the olive oil. Set aside.
- Season fish with salt and pepper. Place 4 fillets in a single layer on a buttered 9 by 12-inch casserole. In a small saucepan melt 4 tablespoons of butter and add the lemon juice and capers. Pour butter mixture over fish, and sprinkle tops with bread crumb mixture. Bake uncovered for 15 to 20 minutes.
- Meanwhile, add the olive oil to a large skillet over medium heat. Infuse the oil with minced garlic, then add the Swiss chard and saute until wilted, about 2 minutes. Season with salt and pepper, to taste. Serve hot with the sole.

- Arrange fillets in baking pan.
- In small bowl, combine the rest of the ingredients.

- To brown the surface, place baking pan under broiler for 1 to 2 minutes.

I came up with this recipe when I wanted to use up a box of stuffing mix with some fish, and didn't want to add a bunch of spices. This is so delicious, and is wonderful for company.

- Mix bread crumbs and spices from stuffing mix in one bowl.
- Mix egg and milk together in separate bowl.
- Add to bread crumb mixture red pepper flakes and cheese.
- Dip fish fillets in milk and egg mixture, then in stuffing mix.
- Place in lightly greased 9x13.
- Sprinkle the leftover stuffing mix on top of fish, and drizzle with 1/2 c butter.
- Bake 15 minutes at 400°F.

- Preheat oven to 425 degrees F. Spray an 11" x 7" baking dish with non-stick cooking spray.
- Wipe fish fillets with a damp cloth and lay them in the baking dish. Combine mayonnaise with lime juice, onion powder, garlic, and pepper. Spread this over the fish.
- In a food processor, reduce the bread to crumbs. Add the leaves of parsley and process again. If using panko, chop the parsley finely and add to the panko. Sprinkle these crumbs over the fish. Drizzle with the melted butter.
- Bake in preheated oven for 20 minutes or until fish flakes easily when tested with a fork. If using a fish other than grouper, it is very important to test the fish for doneness.
