I was having oven baked chimis this evening and the only thing I had in the frig for a side was brussels sprouts. My husband said that brussels sprouts don't go well with mexican food, so I said I'd add lime to them to give them a mexican feel. He just laughed. Surprisingly we loved them! A zingy fun combination of flavors.

24 Brussels sprouts
1 tablespoon butter
1/2-1 teaspoon fresh lime juice
salt
pepper

Steps:

  • Wash and trim brussels sprouts. Cut each in half. Place sprouts in a bowl with a teaspoon of water and cover with plastic wrap (leave little hole at along edge of seal for air to escape).
  • Cook in microwave on high for 2-3 minutes depends on how tender you like your sprouts. They will cook a little more in the next step but not much.
  • Melt butter in skillet over medium high heat to high heat. (Might need more or less butter depending on the overall size of your sprouts). You can use something other than butter, but I do love the flavor of browned melt on the sprouts. I know it's bad for me!
  • Add sprouts - cook over medium high to high heat (stirring ever so often)till the sprouts start to get brown.
  • Once sprouts have the color of brown you like, add salt and pepper and lime juice to taste I suggest trying a half of teaspoon of lime and if you'd like more than add more. Be careful not to add too much right off the bat because the lime will overpower the sprouts.

I love finding new and delicious ways to cook Brussels sprouts. Yum, Another great recipe from the Authentic Suburban Gourmet.

1 lb Brussels sprout
1 tablespoon sriracha sauce (or to taste)
3 tablespoons honey
1 tablespoon lime juice
salt
olive oil (for frying)

Steps:

  • Trim the stem end of the sprouts and cut each one in half. Keep any loose leaves.
  • In a small bowl, whisk together the sriracha, honey and lime juice. Taste and add more sriracha or honey if you like. Set aside.
  • Use a large skillet and add a generous amount of olive oil (about 1/4 cup) and heat on medium high. Pan fry the Brussels until deep golden brown and season with salt during cooking process. Transfer to a medium bowl and toss with the sriracha, honey and lime sauce. Taste for any additional seasoning and serve.

1 lb Brussels sprout, trimmed and halved
1/2 teaspoon coarse sea salt (less if using table salt)
1 tablespoon olive oil
1 tablespoon sriracha asian garlic sauce
1 tablespoon honey (or more to taste)
1 tablespoon lime juice

Steps:

  • Preheat the oven to 425 degrees.
  • In a large bowl toss the sprouts with the oil and salt to coat. Pour out onto a baking sheet, turning the sprouts onto their cut half so it becomes nice and brown.
  • Place into the hot oven. Cook until caramelized, about 20 - 25 minutes.
  • Meanwhile whisk together the sriracha, honey and lime together. When the sprouts are cooked, toss with the prepared Siracha mixture until thoroughly coated. Serve immediately.

  • Heat butter in a skillet over medium heat. Cook and stir Brussels sprouts in the melted butter until tender, 6 to 8 minutes. Squeeze lime juice over sprouts and season with kosher salt and pepper.

2 limes, juice of

Steps:

  • Cut the sprouts in half and lay flat on a chopping block.
  • Cut each half into julienne strips.
  • Heat a large skillet over med-high heat. (I use a wok).
  • Melt butter, then add the sprouts and saute' until tender about 6 to 10 minutes.
  • Season with lime juice, salt and pepper.

  • Place the Brussels sprouts on a large baking sheet. Drizzle with olive oil and toss until sprouts are coated. Season with salt and pepper, to taste. Roast for 20 to 30 minutes, stirring once. Remove from the oven when the Brussels sprouts are crispy and slightly charred on the outside.
  • While the Brussels sprouts are roasting, make the honey lime dressing. In a small bowl or jar, whisk together the olive oil, lime juice, honey, Dijon, garlic, salt, and pepper. Set aside.
  • To toast the pepitas, heat the pan over medium-high heat. Add the peptias in a single layer, making sure to not overcrowd them or they won't toast evenly. Add the cayenne pepper. Toast, shaking the pan occasionally or stirring so they don't burn. This will take a couple of minutes. When the pepitas are slightly golden brown and smell toasty, remove them from the pan. Season with salt.
