For flavorful, tender meat, make Alton Brown's Corned Beef recipe from Good Eats on Food Network by beginning the salt-curing process 10 days ahead of cooking.

2 quarts water
1 cup kosher salt
1/2 cup brown sugar
2 tablespoons saltpeter
1 cinnamon stick, broken into several pieces
1 teaspoon mustard seeds
1 teaspoon black peppercorns
8 whole cloves
8 whole allspice berries
12 whole juniper berries
2 bay leaves, crumbled
1/2 teaspoon ground ginger
2 pounds ice
1 (4 to 5 pound) beef brisket, trimmed
1 small onion, quartered
1 large carrot, coarsely chopped
1 stalk celery, coarsely chopped

Steps:

  • Place the water into a large 6 to 8 quart stockpot along with salt, sugar, saltpeter, cinnamon stick, mustard seeds, peppercorns, cloves, allspice, juniper berries, bay leaves and ginger. Cook over high heat until the salt and sugar have dissolved. Remove from the heat and add the ice. Stir until the ice has melted. If necessary, place the brine into the refrigerator until it reaches a temperature of 45 degrees F. Once it has cooled, place the brisket in a 2-gallon zip top bag and add the brine. Seal and lay flat inside a container, cover and place in the refrigerator for 10 days. Check daily to make sure the beef is completely submerged and stir the brine.
  • After 10 days, remove from the brine and rinse well under cool water. Place the brisket into a pot just large enough to hold the meat, add the onion, carrot and celery and cover with water by 1-inch. Set over high heat and bring to a boil. Reduce the heat to low, cover and gently simmer for 2 1/2 to 3 hours or until the meat is fork tender. Remove from the pot and thinly slice across the grain.

For the beef:
1 teaspoon soy sauce
1 teaspoon Chinese rice cooking wine or dry sherry
1/2 teaspoon cornstarch
1/8 teaspoon freshly ground black pepper
3/4 pound flank or sirloin, sliced thinly across the grain
For the sauce:
2 tablespoons oyster sauce
1 teaspoon Chinese rice cooking wine or dry sherry
1 tablespoon soy sauce
1/4 cup chicken broth
For the stir fry:
3/4 pound broccoli florets
2 tablespoons high-heat cooking oil
2 cloves garlic, very finely minced or pressed through a garlic press
1 teaspoon cornstarch, dissolved in 1 tablespoon water

Steps:

  • Prepare the sauce: Stir together the sauce ingredients (2 Tbsp oyster sauce, 1 teaspoon Chinese rice wine, 1 teaspoon soy sauce, 1/4 cup chicken broth) in a small bowl.
  • Serve immediately: Serve the stir fry immediately, either on its own or over cooked rice.

Steps:

  • Sautee garlic into hot oil. Add the onion and broccoli until tender, for about 5 minutes.

1 (10 ounce) can refrigerated prepared pizza crust
1/2 lb corned beef, cut into 1/2 inch cubes
1 tablespoon butter
1/2 chopped onion
1 1/2 cups frozen chopped broccoli, defrosted
1 cup shredded swiss cheese
1/4 teaspoon pepper
8 teaspoons thousand island dressing

Steps:

  • Heat oven to 425 degrees. In medium nonstick skillet, heat butter until hot. Add onion; cook and stir 2 to 3 minutes or until tender. Remove from heat; add corned beef, broccoli, cheese and pepper; mix well.
  • On ungreased baking sheet, unroll pizza dough; cut into quarters. Flatten each quarter into 6 x 5-inch rectangle; spread each with 2 teaspoons dressing to within 1-inch from edges.
  • Place equal amounts of corned beef mixture in center of each. Bring together 2 opposite corners of dough, pinching to seal. Loosely close straight edges of dough to form diamond-shaped sandwiches. (Not necessary to seal edges completely).
  • Bake in 425 degree oven 11 to 13 minutes or until golden brown.
