1 cup red seedless grapes
1 cup green seedless grape
1 (11 ounce) can mandarin oranges
1/4 cup chopped red onion
1/4 cup chopped walnuts
1 cup honey mustard dressing

Steps:

  • Cook pasta according to package directions; rinse under cold running water.
  • Set aside to cool.
  • When cool, combine pasta, grapes, oranges, onion and nuts in a medium bowl.
  • Add dressing; toss to coat.
  • Recipe can easily be doubled or tripled.

This salad is going to be in the Allrecipes Hall of Fame one day! My friend Ali made this refreshing summer salad for me, which is even better a few days later. Tortellini, a great vinaigrette, baby spinach, and feta. If you like balsamic vinegar, it's a must to add into the vinaigrette. Bon appetit!

2 (9 ounce) packages cheese tortellini
½ cup extra virgin olive oil
¼ cup lemon juice
¼ cup red wine vinegar
2 tablespoons chopped fresh parsley
1 teaspoon dried oregano
½ teaspoon salt
6 eggs
1 pound baby spinach leaves
1 cup crumbled feta cheese
½ cup slivered red onion

Steps:

  • Bring a large pot of lightly salted water to a boil. Add tortellini, and cook for 7 minutes or until al dente; drain.
  • In a large bowl, mix the olive oil, lemon juice, red wine vinegar, parsley, oregano, and salt. Place the cooked tortellini in the bowl, and toss to coat. Cover, and chill at least 2 hours in the refrigerator.
  • Place eggs in a saucepan with enough water to cover, and bring to a boil. Remove from heat, and allow eggs to sit in the hot water for 10 to 12 minutes. Drain, cool, peel, and quarter.
  • Gently mix the spinach, feta cheese, and onion into the bowl with the pasta. Arrange the quartered eggs around the salad to serve.

1/2 cup aged red wine vinegar
1/2 cup fresh lemon juice
1 1/2 teaspoons sugar
1 tablespoon salt
5 garlic cloves
1 1/2 small shallots, minced
2 1/2 cups extra-virgin olive oil
1 1/2 teaspoons fresh ground black pepper
2 cups red grapes, seedless and halved
1 cup feta cheese
1/2 cup walnuts
1 (8 ounce) package spinach or 1 (8 ounce) package spring greens

Steps:

  • Place red wine vinegar, lemon juice, sugar, salt, and garlic cloves in a blender and pulse on high speed.
  • Add the shallots and slowly incorporate the extra-virgin olive oil while blender is on high speed.
  • Finish seasoning with black pepper.
  • Allow the dressing to sit for 24 hours, refrigerated, before using.
  • Place spinach, grapes, feta, and walnuts in salad bowl.
  • Cover with dressing and toss.

I was making pasta salad for a picnic and noticed that I ran out of dressing. All I had was extra-virgin olive oil. So, that's all I used, with some salt. It was so much better this way. Everyone wanted the recipe and then couldn't believe that oil was the only thing on this salad. Please try it this way and if you don't agree, you can always add vinegar or something. But, I don't think you will.

1 bunch fresh asparagus, trimmed and cut into 1-inch pieces
1 (12 ounce) package spinach and ricotta tortellini
1 pint grape tomatoes, halved
½ pound pitted Kalamata olives, halved
2 tablespoons finely shredded fresh basil, or to taste
¼ cup olive oil, or to taste
salt to taste

Steps:

  • Bring a large pot of salted water to a boil. Add asparagus and cook uncovered until bright green, 1 to 2 minutes. Drain in a colander and immediately immerse in ice water to cool; drain.
  • Bring a large pot of heavily salted water to a boil. Stir the tortellini into the water and return to a boil; cook until the tortellini float to the top, 5 to 6 minutes; Drain water and run tortellini under cold water to cool.
  • Combine tortellini, asparagus, tomatoes, olives, and and basil in a bowl. Drizzle olive oil over tortellini mixture and stir to coat; season with salt.
