CLASSIC FRENCH VANILLA SOUFFLé
Made with butter, flour, milk, sugar, vanilla, and eggs, a homemade vanilla soufflé is easier than you may think and an elegant dessert with any menu.

Steps:
- Heat the oven to 350 F.
- Gather the ingredients.
- Butter a large soufflé dish and sprinkle in 1/4 cup of granulated sugar, tilting the dish to make sure the entire interior surface is covered.
- Set aside the prepared soufflé dish.
- Bring 1 cup of the milk to just steaming in a medium saucepan set over low-medium heat.
- In a bowl, stir together 5 tablespoons of the granulated sugar, the all-purpose flour, and the remaining 1/3 cup milk until it forms a smooth batter.
- Slowly whisk half of the hot milk into the batter, making sure to combine the ingredients until they are completely smooth-this is called tempering .
- Add the tempered batter back to the hot milk in the pan and bring the mixture to a simmer, stirring constantly. Stir and cook the mixture until it has thickened, about 1 minute.
- Stir the unsalted butter into the mixture until combined.
- Allow batter to cool at room temperature for 10 minutes, then stir in the vanilla extract.
- In a separate bowl, beat the egg whites on medium-high speed until they become foamy, and then add the remaining 2 tablespoons sugar. Continue beating the egg whites at high speed until they hold stiff, glossy peaks.
- Gently stir 1/3 of the egg whites into the vanilla mixture, then carefully fold in the remaining whipped egg whites. The vanilla mixture should be evenly colored and light and bubbly, without egg white streaks or marbling.
- Spoon the soufflé mixture into the prepared dish and allow it to rest, covered, for up to 30 minutes (or you can bake it right away).
- Bake for 25 to 30 minutes (slightly longer at high altitudes) until the soufflé has risen and has a crusty exterior.
- Serve the soufflé with a dusting of confectioners' sugar and a few plump berries, if desired. Enjoy.

SWEET VANILLA CORNBREAD
I was looking online for a good cornbread recipe and came across this one from Food Network, Sara's Secrets. It is super moist and easy to make. You can't mess it up! It is definitely a sweet cornbread. Just how I like it. Every time I make chili, this is the cornbread we have with it. NOTE: the amount of vanilla is correct-it is called Sweet Vanilla for a reason!!! We love it...hope you do too.

- Preheat oven to 350 degrees F.
- Combine the dry ingredients in a large bowl.
- In a small bowl, mix the eggs, buttermilk, and vanilla with a wooden spoon.
- Add liquid mixture to the dry ingredients and pour the melted butter over the top of the batter. Stir just until all ingredients are moistened yet thoroughly blended; do not to over mix.
- Pour the batter into a greased 8-inch square Pyrex pan.
- Bake in the preheated oven about 35 to 45 minutes, until golden around the edges and a toothpick inserted into the center comes out clean.
- Let stand 15 minutes before cutting to serve.

- 1. Run a little hot water into a 2 qt pitcher.Add 1/4 cup powdered creamer & 1/4 cup sugar, stir well to dissolve. Add 1/2 tsp vanilla. Stir.
- 2. Fill pitcher half wull with cold tap water. Add 2 2/3 cup instant nonfat dry milk powder, ix very well. Fill the pitcher the rest of the way full, stir again. Chill and serve. This milk is more palatably to some than straight reconstituted milk.
- 3. The coffee creamer gives the milk a richer fullnes, while the sugar and vanilla makes it taste sweet & almost dessert like.
- 4. If you must switch to powdered milk and are having trouble with the flavor, this recipe can make the transition easier.
- 5. For a gallon of milk, use: 1/2 cup each creamer,sugar & 1 tsp vanilla. Add dash of salt. Be sure to dissolve creamer and sugar in hot tap water first. They do not readily dissolve in cold water.
SWEET VANILLA SOYMILK
This is what I created for when I don't have ready-made storebought vanilla soymilk. It is so easy to mix up and just keep a bottle handy in the fridge for chai tea, pouring on cereal, etc. I also use this in my muesli recipes here on Zaar.
