COCONUT DATE BARS
The on-the-go, travel-light snack bar. Derived from a famous raw food bar and the ultimate in 'foodie!' This is a great snack for the active lifestyle and impressive to hand out to others. As an outdoor professional I take these in the back country and they need not be refrigerated and give great energy. Cut into bars and enjoy or wrap individually for on the go.

Steps:
- Blend almonds and coconut in a food processor; add dates and pulse until combined. Add cashews and coconut oil; pulse until mixture is thick and sticks together. Transfer to a sheet of waxed paper; form into a square, folding sides of waxed paper over the top. Refrigerate until solid, at least 30 minutes.

CANDIED COCONUT DATE SQUARES
These are so good, and best of all they are quick and easy to make. They are also very easy to double...and believe me, after you taste these you will wish you had doubled the recipe...I hope you enjoy these amazing squares as much as we do. Please note* there is no baking time.

Steps:
- Grease a 9x5x3" loaf pan with butter, and set aside, until ready to use.
- For the squares - In a medium sized pot, combine, dates, sugar, flour, butter and egg.
- Stir constantly until mixture comes to a full boil 7 -10 minutes.
- Continue cooking until it starts to thicken, this should take about 3 minutes.
- Add the coconut to the mixture and then spread into prepared 9x5x3" loaf pan.
- Prepare the glaze in a small bowl, stirring together the powdered sugar, milk, lemon juice and vanilla extract, until smooth.
- Drizzle the glaze over the warm squares.
- Cover and refrigerate until firm, this should take about 3 hours.
- Cut into squares, and store covered in the fridge until needed -- Enjoy.

- Coat 8x8" baking pan with nonstick vegetable oil spray; line with parchment, leaving overhang on all sides. Process 2 cups pitted Medjool dates, 3/4 cup raw cacao powder, 3/4 cup unsweetened shredded coconut, 1/4 cup cacao nibs, 2 tablespoons agave syrup, 1 teaspoon kosher salt, and 2 tablespoons water in a food processor until smooth (you may need to stop and scrape down sides a few times). Press mixture firmly into prepared pan. Scatter 1/4 cup unsweetened shredded coconut over top; press to adhere. Cut into bars.

- In a saucepan, combine dates, sugar and water. Cook, stirring frequently, until very thick. Stir in walnuts, if desired; cool. , Sift the flour, salt and baking soda together in a large bowl; add oats and brown sugar. Cut in butter until mixture is crumbly. Sprinkle water over mixture; stir lightly. Pat half into a greased 13x9-in. baking pan. Spread with date mixture; cover with remaining oat mixture and pat lightly. , Bake at 350° for 35-40 minutes or until lightly browned. Cool on a wire rack. Cut into bars.

- In a small bowl, combine dates and water; set aside to cool (do not drain). In a large bowl, cream sugar and shortening until light and fluffy. Beat in eggs. Combine the flour, baking soda and salt; gradually added to creamed mixture. Stir in dates. , Pour into a greased and floured 13x9-in. baking pan.
