1/4 cup water
2 tbsp white or rice vinegar
1 tbsp cornstarch
1 small garlic clove (grated)
1 tsp salt
1/2 tsp red chili pepper flakes

Steps:

  • In a small saucepan, add maple syrup, water, vinegar, cornstarch, garlic, salt, red pepper chili flakes and whisk until combined.
  • Bring to a boil, reduce heat to low and simmer for 7-10 minutes or until sauce has thickened.
  • Transfer to a glass jar to store. Use this sauce to make sweet chili salmon, cedar plank salmon or slow cooker Thai chicken thighs.

(Note: Traditionally, Thai Sweet Chili sauce is not thickened with starch, but rather cooked into a syrupy consistancy. There's some benefit to thickening with starch and using less sugar.)

3 garlic cloves, peeled
2 hot red peppers (jalapeno, serrano, thai, cayenne, etc.)
1/2 cup sugar
3/4 cup water
1/4 cup vinegar
1/2 teaspoon salt
1 tablespoon cornstarch
2 tablespoons water

Steps:

  • Keeping the seeds makes for a hotter end product, removing less so. Keep in mind it will be hotter the first day and dissipates over time. Resist the urge to taste and redip your spoon. Enzymes in saliva breaks down starches and will eventually make it watery -- that is in my humble opinion.
  • In a food processor blend together the garlic, red peppers, sugar, water, vinegar and salt into a puree; transfer to a sauce pan.
  • Bring mixture to a boil and simmer until the mixture begins to thicken and garlic and peppers bits slightly soften, about 3 minutes.
  • Combine cornstarch and water to make a slurry. Whisk into the sugar/pepper mixture. Bring to a boil and cook for 1 minute. Cool completely before storing in refrigerator.

1 cup cucumber cut up into 1" pieces
1/2 cup chow mein noodles
1/2 cup VH Sweet Thai Chili Sauce
1 cup tempura or light batter mixed as per package instructions
2 chicken breast cut into small chunks
Salt to taste
Canola oil for frying
Green onion, green ends only, sliced for garnish

Steps:

  • Heat approx. 2 1/2" oil in a wok until a small piece of bread floats and bubbles.
  • Coat chicken pieces in tempura, just enough for one batch at a time, add to oil.
  • Remove onto a paper towel-lined plate. Salt to taste coming out of the oil. Continue cooking until all the chicken is done.
  • When chicken is done transfer to a large bowl, toss with the VH Thai sauce, cucumber, and chow mein noodles.
  • Serve immediately garnished with the green onion.

Here's my take on Thai-style sweet chili sauce, or Nam Jim. It's sort of a hybrid between the cooked and fresh versions. If you can't find Thai bird's eye chilies, use any other combination of fresh, preserved, and/or dried chilies. Things like jalapeno, red Fresno, or Serrano chilies work great, as does habanero. This sauce is great on grilled chicken and pork.

½ cup water
½ cup white distilled vinegar
2 tablespoons fish sauce
½ cup brown sugar
1 tablespoon ketchup
2 teaspoons sambal chili sauce
1 ½ teaspoons cornstarch
6 cloves finely crushed garlic
2 tablespoons finely minced Thai chili peppers (bird's eye peppers)
1 tablespoon fresh lime juice

Steps:

  • Place 1/2 cup cold fresh water and vinegar in a saucepan. Whisk in Asian fish sauce, brown sugar, ketchup, sambal chili sauce, and cornstarch. Whisk until cornstarch disappears. Place over medium-high heat and bring up to a simmer stirring occasionally. As it bubbles, it will start to thicken up. Remove pan from heat.
  • Whisk garlic and chili into hot mixture. Add fresh lime juice; whisk again. Allow mixture to cool to room temperature before checking for seasonings.
  • If not using immediately, transfer to a glass jar with a lid. Refrigerate.

2 fresh long red chilli peppers (like red jalapeño (in Thailand I used spur chilies))
2 garlic cloves (minced)
1 teaspoon fresh grated ginger ((optional))
1/2 cup water
1/2 cup white wine vinegar
1/2 cup mild honey (or replace with maple syrup to make vegan)
1/2 teaspoon salt

Steps:

  • Cut the chilli peppers in half and deseed them, except for 1/2 pepper. Chop coarsely and place in a food processor or chopper.
  • Add minced garlic and grated ginger together with water and pulse a few times.
  • Add mixture into a small saucepan and add vinegar, honey and water. Stir and bring to a boil on high heat.
  • Then lower to medium-low and simmer until the sauce thickens. This takes about 20 minutes. Stir occasionally to keep sauce from sticking to the bottom of the pan.
  • Fill finished sauce into a covered container to store in the fridge.

½ cup rice vinegar (unseasonsed)
3/4 cup water
4 oz white sugar ((1/2 cup + 2 tbsp))
5 garlic cloves (chopped finely)
1 tbsp soy sauce (gluten free soy sauce or salt if you'd like to keep the recipe gluten free or soy free, OR 1/2 tbsp fish sauce)
1/2 tsp cayenne pepper (optional - halve it or leave it out if you like it less spicy)
2.8 oz sambal oelek (a generous 2 1/2 tbsp (please see recipe notes))
4 tsp cornflour / cornstarch ((see recipe notes))
2 tbsp water

Steps:

  • Add the vinegar, water, sugar, garlic cloves, soy sauce, and cayenne pepper (if using) in to a non-stick pan. If you're using dried chili instead of sambal oelek, add it to the pan at the same time.
  • Heat over medium heat while stirring, to dissolve the sugar. Increase the heat to medium-high and bring it to a boil. Let it simmer for about 2 minutes.
  • Add the sambal oelek and mix through. Let it cook for a few minutes until it's slightly thickened (2- 5 minutes)
  • Mix the cornstarch and water into a smooth slurry and add this to the sauce as well.
  • While stirring frequently (to prevent the sauce from burning at the bottom), simmer the sauce for a further 2 - 5 minutes or until it reaches a desired thickness. Remember, the sauce thickens as it cools as well. If it thickens too much, add a little extra water to thin it out. If you're using Clear Jel, the sauce will thicken mostly only as it cools down.
  • Pour into glass jars with air-tight lids (OR heated and sterilized jars to store for longer).
  • Cool to room temperature and store in the fridge.

1 1/2 cup dry Thai chili peppers
1 cup water
1 cup sugar
2 tsp grated ginger (optional)
4 tsp garlic
6 tsp ketchup

2-3 tbsp water

Steps:

  • To make the chili sauce, add the dried Thai chili peppers and the rest of the ingredients into a food processor and process until mix until the sauce no longer has big chunks of peppers.
  • Pour the chili pepper mixture into a sauce pan over medium-high heat until it's boiling then simmer. Stir frequently to prevent the sauce from burning
  • Pour the slurry into the pan with the chili sauce. Return the chili sauce to a boil for 2 minutes then simmer stirring occasionally for 10 minutes until you get your desired thickness. Let the sauce cool to room temperature then pour into a jar with an air tight lid. **see notes**

1 Large Red bell pepper
2-3 Thai chili peppers ( (I like to use 2))
10 cloves Garlic
1/2 cup Water
1 cup Sugar
1.5 teaspoon Salt
3/4 cup White vinegar
1.5 tablespoons Tapioca starch
2 tablespoons Water

Steps:

  • Wash, remove seeds and cut 1 large sized red bell pepper into chunks.
  • Peel and wash 10 cloves of garlic.
  • Next, put 2 Thai chili peppers, 10 peeled garlic cloves, 1 large cut up red bell pepper into the mixing bowl. Pour ½ cup of water and blend it.
  • Blend the mixture until it's little chunks, don't have to be fine and smooth.
  • After that, pour the mixture into a pot and turn on medium high fire until it's boiling. Then, add 1 cup of sugar, 1.5 teaspoon of salt, and ¾ cup of white vinegar. Stir and mix it well.
  • Turn the fire to small and simmer for 10-15 minutes. Then, add tapioca mixture (tapioca starch 1.5 tablespoons and water 2 tablespoons mix well) to thicken the sauce.

  • Add sugar, cayenne, minced garlic, soy sauce, salt, vinegar, and water to a saucepan and let it simmer (about 3-4 minutes), stirring occasionally till the sugar dissolves completely and the mixture reduces slightly.
  • Add the chilli paste and mix. Simmer again for 2-3 minutes.
  • Mix together cornflour and water in a bowl till no lumps exist and stir in this cornflour slurry into the sauce. Mix continuously till the sauce comes to a boil. Then reduce the heat and simmer till for 3-4 minutes till the sauce is thick, translucent and shiny. Turn off the flame.
  • Serve immediately or cool completely and then transfer to a clean jar. Refrigerate for up to 4 weeks.

We have an abundance of peppers (of all sorts) growing wonderfully in our garden, so I came up with this wonderful medium heat level sauce (adjustable) that went great as an accompiment with our broiled cod fish fillets. Use it for any recipe calling for Thai chili sauce. Also great as a warm drizzle over a light salad (or how about over ice cream?). This is also a great canning or OAMC recipe! Great for gift giving/gift baskets. Recipe doubles, triples, etc. quite easily, just needing longer time to reduce down.

12 fresh Thai chiles, Dragon's eye, stems cut off and seeded (adjust seeds to your heat liking)
2 serrano peppers, chopped (seeded if desired, or jalapeno)
1 green onion, chopped
1/2 cup rice vinegar
1/4 cup apple cider vinegar
2 teaspoons sesame oil (or peanut oil)
1 teaspoon salt
1/4 cup sugar
1/2 cup honey
2 garlic cloves, peeled and smashed
2 teaspoons fresh ginger, slices
red food coloring (optional)

Steps:

  • To a small saucepan, add all ingredients and stir to combine. Heat and gently simmer over med-low heat, stirring occasionally, until reduced by half or when it is the consistency of a thick maple syrup, about 15-20 minutes. Be sure to keep an eye on it so it does not overcook or burn.
  • Remove from heat, let cool slightly, then use an immulsion blender or a mini food processor to chop everything up 'fine'. (you can also do this halfway thru the cooking process, then again at the end of cooking). If using, add food coloring to show level of heat (dark red being very hot).
  • Serve warm over fish, pork, chicken, vegetables, etc. Cover and refrigerate any extra. It will last 6 months or more in the fridge. This will get hotter the longer it is stored!
  • CANNING: PLEASE follow your canning booklet for sterilization instructions. Using 4 oz jars (a little sauce goes a long way), hot pack in boiling water bath for 10 minutes. Stored, it should last up to 2 years.

diabetic alternative: use granular sweetener of choice (e.g. erythritol)
1 tablespoon rice wine ((can substitute dry sherry))
1 tablespoon sambal oelek ((use more or less according to taste))
OR 1-2 teaspoons dried red chili flakes ((these are very hot, start with less and add more if desired))
1 1/2 teaspoons finely minced garlic
1 teaspoon finely minced ginger
1 teaspoon tamari or soy sauce ((use tamari for gluten free))
2 teaspoons cornstarch dissolved in 1 tablespoon water ((the sauce will thicken more once cooled))
1-2 drops natural red food coloring ((optional))

Steps:

  • Place all of the ingredients except for the cornstarch mixture in a small saucepan and bring it to a boil, stirring regularly. 1/2 cup rice vinegar (or white vinegar)
1/2 cup plus 2 tablespoons white granulated sugar
1/4 cup water
3 tablespoons fish sauce
2 tablespoons sherry (or cooking sherry)
3 cloves garlic (minced)
1/2 to 1 tablespoon dried crushed chile pepper (red pepper flakes)
1 1/2 tablespoons cornstarch
3 to 4 tablespoons cool water

Steps:

  • Gather the ingredients.
  • Add the vinegar, sugar, water, fish sauce, sherry, garlic, and pepper flakes to a saucepan or pot.
  • Bring to a rolling boil.
  • Reduce the heat to medium and let boil for 10 minutes, or until reduced by half. (Note that the vinegar will be quite pungent as it burns off; rice vinegar is less strong than regular white vinegar.)
  • While the mixture is boiling, dissolve the cornstarch into the cool water in a small bowl.
  • Reduce the heat to low and add the cornstarch-water mixture. Stir to incorporate and continue stirring and cooking until the sauce thickens, about 2 minutes. Then remove from the heat and taste-test.
  • Pour sauce into a small bowl or jar and serve as a condiment, dip, or marinade.

This sweet chili sauce is sweet, savory, tangy, and spicy all at the same time. It's so quick and easy and is truly one of the most versatile sauces you can make!

1 cup sugar
3/4 cup white vinegar
1/2 cup water
2 tablespoons chili paste (I used Sambal Oelek)
3 cloves garlic crushed and left whole
1 carrot very finely grated
pinch of salt
1 tablespoon arrowroot powder or cornstarch

Steps:

  • Combine all ingredients, except the cornstarch, in a medium saucepan and bring to a boil over high heat. Allow it to boil on high heat for 3 minutes, stirring occasionally.
  • While this is boiling, whisk or stir together the cornstarch and 1 tablespoon of water.
  • After 3 minutes, slowly pour the cornstarch mixture into the boiling mixture on the stove.
  • Stir to combine and reduce heat to a low boil. Allow it to boil, stirring frequently, for 2 more minutes.
  • Taste and add more chili paste if desired. Remove and discard the garlic.
  • Serve warm or allow to cool and refrigerate until needed. Sauce can be served hot or cold.
