This is a chilled strawberry fruit dessert. Easy to make but hard to keep in the fridge for long.

Ingredients

2 pints fresh strawberries
2 ½ cups whole milk
1 (14 ounce) can sweetened condensed milk
1 (5.1 ounce) package instant vanilla pudding mix
1 (8 ounce) container whipped topping (such as Cool Whip®)
1 (12 ounce) package vanilla wafer cookies (such as Nilla®)

Steps:

Hull strawberries and slice in 1/4-inch thick slices, about 3 slices per strawberry.
Mix whole milk, condensed milk, and pudding mix together in a bowl; condensed milk will sink to the bottom, so mix well. Fold in whipped topping without mixing too much.
Layer a 9x13-inch baking pan with 1/2 of the wafer cookies, followed by 1/2 of the strawberries. Pour in 1/2 of the pudding mixture over top. Repeat with a second layer of wafers, strawberries, and pudding.
Refrigerate to let dessert firm up before serving, 2 to 3 hours.

This quick, cool summer dessert is from the N.C. Department of Agriculture and Consumer Services. Directions are for individual dessert dishes, but if you wish, a 7 x 9 inch dish may be used instead.

Ingredients

2 1/2 cups prepared angel food cake
1 (6 ounce) box instant vanilla pudding
milk, for pudding (amount called for on pudding box)
3 cups fresh strawberries, sliced
1 (8 ounce) container Cool Whip

Steps:

Tear cake into small pieces and cover bottoms of 5 dessert dishes.
Mix pudding according to directions on box; pour over cake.
Spread fresh strawberries over pudding mixture.
Top with Cool Whip.
Refrigerate if not served immediately.

2 lbs strawberries
1 cup sugar (or to taste)
1 quart water (reserve 1/2 cup)
1/2 cup cornstarch
1 tablespoon lemon juice (fresh only, please)
1/2 teaspoon vanilla extract
1/2 teaspoon almond extract
1/3 cup water
cold heavy cream

Steps:

Hull and rinse berries. Add to water and bring to a boil over medium heat. Add sugar and simmer until berries are tender, 10-15 minutes (depending on size of berries). Lower heat to medium-low.
Dissolve cornstach, lemon juice and vanilla and almond extracts in reserved 1/2 cup water, and add to berries and sugar. Bring to rolling boil, stirring constantly. Continue stirring and allow pudding to boil a few minutes until thickened. Ladle into individual serving bowls. Cool.
To Serve: Sprinkle with sugar and serve with cold, heavy cream.
