With mandarin oranges and a slightly sweet dressing, this spinach salad is a refreshing change of pace. I frequently take it along to summer picnics.

1/2 cup vegetable oil
1/3 cup sugar
1/3 cup white vinegar
2 tablespoons minced fresh parsley
3/4 teaspoon salt
SALAD:
3/4 cup slivered almonds
4-1/2 teaspoons sugar
7 cups torn romaine
7 cups chopped fresh spinach
1-1/2 cups sliced celery
1-1/2 cups sliced green onion
3 cans (11 ounces each) mandarin oranges, drained

Steps:

  • In a jar with a tight-fitting lid, combine the first five ingredients; shake well. Set aside. In a skillet, cook and stir the almonds and sugar over medium heat until sugar is melted and almonds are coated, 5-7 minutes. Spread on foil to cool completely., In a large salad bowl, combine the romaine, spinach, celery and onions. Add oranges and sugared almonds; toss gently. Shake dressing; drizzle over salad and toss to coat.

2 oranges, zested
2 small oranges, juiced or 1 large orange, juiced
2 tablespoons balsamic vinegar
2 tablespoons honey
1 clove garlic, peeled
3/4 teaspoon salt
3/4 teaspoon freshly ground black pepper
3/4 cup extra-virgin olive oil
10 to 12 ounces pre-washed spinach

Steps:

  • Preheat the oven to 350 degrees F.
  • Place the prosciutto slices on a baking sheet and bake until just crisp, about 10 minutes. Let cool. Crumble the prosciutto slices into a container and store in the refrigerator.
  • In a blender, combine the orange zest, orange juice, balsamic vinegar, honey, garlic, salt, and pepper. Blend until smooth. With the blender running, add the olive oil in a steady stream until combined. Transfer to a container and store in the refrigerator.
  • To serve, put the spinach in a large bowl. Toss with enough of the vinaigrette to coat the spinach. Sprinkle with the crisp prosciutto crumbles, toss again, and serve.

3 cups fresh spinach, washed and dried, cut into chiffonade
2 green onions, chopped
1 orange, supremed and halved
1 tablespoon butter
1/2 teaspoon sugar
1/2 cup pecan halves
1 teaspoon dried rosemary
1/4 teaspoon cayenne
Salt and freshly ground black pepper
Citrus Dressing, recipe follows
1 teaspoon Dijon mustard
2 tablespoons orange or grapefruit juice (or a combination)
3 tablespoons canola oil
1 tablespoon olive oil
Salt and freshly ground black pepper

Steps:

  • Put the spinach and green onions in large salad bowl and sprinkle with the halved citrus supremes. In a small saute pan over medium heat, add the butter and sugar and stir until the butter is melted. Add the pecans and toss until the pecans begin to brown. Stir in the rosemary and cayenne and stir just a few seconds to release the aroma. Remove from the heat and season with salt and pepper, to taste. Sprinkle the pecans on the salad while still warm. Drizzle the dressing over salad and serve.
  • In a small bowl, add all the ingredients and whisk until emulsified.

1 1/2 lbs spinach, washed
2 large oranges
1/2 small red onion, thinly sliced
3 tablespoons sugar
1/4 cup cider vinegar
1/2 teaspoon dry mustard
1/2 teaspoon celery seed
1/2 teaspoon paprika
1/2 cup salad oil
salt

Steps:

  • Wrap spinach leaves in paper towels and chill to crisp, at least 1 hour or up to 1 day.
  • Peel oranges and remove the white membrane, then cut fruit segments from inner membranes. Separate onion slices into individual rings.
  • In a small bowl, mix sugar, vinegar, mustard, celery seed, and paprika until sugar dissolves. Add salad oil, whisking until dressing is the consistency of honey.
  • Combine spinach, oranges, and onion in a serving bowl. Pour dressing over salad, then mix lightly to coat, add salt to taste. Serve at once.

MANDARIN ORANGE AND SPINACH SALAD

This is a beautiful tossed salad with spinach, romaine, and mandarin oranges with a sweet, sour, slightly spicy dressing. To top it all off, glazed sliced almonds. I first made this in culinary school, and I have made it many times. It is great for entertaining. The mandarin oranges' color just "pops" against the greens. Time includes chill time for the dressing.

1/3 cup oil
1/4 cup sugar
1/4 cup white vinegar
1 tablespoon chopped fresh parsley
1/2 teaspoon salt
1/2 teaspoon hot pepper sauce (more or less Tabasco is best for this as it just brings some heat to the party)
1 dash black pepper
1/2 cup sliced almonds
3 tablespoons sugar
4 cups torn romaine lettuce
4 cups torn spinach leaves (or any combination of lettuces)
1 cup sliced celery
1 cup sliced green onion
1 (11 ounce) can mandarin oranges, drained

Steps:

  • In jar with tight-fitting lid, combine all dressing ingredients; shake well. Refrigerate 1 hour.
  • In skillet, cook almonds and sugar over medium low heat until sugar melts and coats almonds, stirring frequently. Cool; break apart.
  • Combine the rest of the salad ingredients.
  • Toss with dressing and top with almonds--I prefer to top the salad, and at the last minute, as opposed to tossing the almonds in the salad to keep the sugar from being "washed off" by the dressing.

1 (12 ounce) can mandarin oranges, drained
1/2 red onion, thinly sliced
1/3 cup walnut pieces, toasted
salt and pepper
1 tablespoon olive oil
1 tablespoon white wine vinegar
1 tablespoon frozen orange juice concentrate
1 tablespoon honey

Steps:

  • Preheat oven to 350.
  • Toast walnuts on a small baking sheetfor 6- 8 minutes, or until lightly browned.
  • Slice red onion; cut slices in half and separate rings.
  • Whisk dressing ingredients together in a small bowl.
  • Combine spinach, oranges and red onion in a large bowl.

1/2 cup plain yogurt
3 tablespoons poppy seeds

  • Make your dressing first:.
  • Add equal parts yogurt, mayonnaise and mix well.
  • Add the honey and mix inches Adjust this to your tastes. It is generally lightly sweet and rounds out the flavors of the mayo and yogurt.
  • Add the poppy seeds, mix in (if you don't have seeds, don't sweat it, they give a bit of texture but I have wanted this salad and run out and it is fine without it -- )
  • Salad:
  • Either mix the spinach, sliced water chestnuts and mandarin oranges, or make this directly on the plate. I usually break the water chestnuts because about a 1/2 slice and one mandarin orange plus a fork full of spinach leaves seems to be about perfect.
  • Top with the dressing.
