  • Mix sauce into shredded chicken a little at a time until your desired consistency is reached (I never use all the sauce since I just like my chicken to be lightly coated.

SLOW COOKER SWEET AND SPICY PULLED PORK SANDWICHES

Slow Cooker Sweet and Spicy Pulled Pork Sandwiches image

Yield 10 to 12 sandwiches

Number Of Ingredients 7

One 4 to 5 pound Smithfield Boneless Pork Shoulder Blade Roast
One 12-ounce jar apricot preserves
One 12-ounce jar chili sauce
10 to 12 hamburger/sandwich buns (we love onion buns)
10 to 12 slices cheese (any kind, but we use cheddar)
coleslaw (already prepared from the deli, or homemade)
sriracha sauce

Steps:

  • Place the roast in the insert of your slow cooker (fat-side-up). In a medium bowl, whisk together the preserves and the chili sauce. Pour over the roast in the slow cooker. Put on the lid and set to cook on low for 10 to 12 hours. When the pork is done cooking, remove it from the pan and set it on a cutting board. Pour the sauce into a bowl and set it in the refrigerator. Shred the pork (remove any pieces of fat and discard) and put the pork into a bowl. At this point, you can cover the pork and refrigerate until you are ready to serve... or you can pull out the sauce, skim off any fat and add several generous spoonfuls of the sauce back onto the pork. Stir to coat, re-heat as you wish and you're ready to assemble. Preheat your broiler. Place the bottom buns on a large baking sheet. Top each bun with warmed pork and a slice of cheese. Broil 2 to 3 minutes, or until the cheese is melted and bubbly. To serve, top each with coleslaw and a good drizzle of sriracha sauce. Put tops on each sandwich and serve.

SWEET AND TANGY PULLED PORK

Sweet and Tangy Pulled Pork image

Sweet and Tangy Pulled Pork is one of my go-to dinner recipes. We eat pulled pork on its own, in sandwiches, stuffed into tacos, piled on nachos, stacked with enchiladas, and last but most certainly not least, layered into BBQ Sundaes!

Provided by Mary Younkin

Categories     Main Course

Time 8h5m

Number Of Ingredients 13

2 pound pork roast
1 small onion (sliced thin)
2 tablespoons brown sugar
1 tablespoon paprika
2 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1/3 cup cider vinegar
1 tablespoon Worcestershire sauce
1 teaspoon crushed red pepper flakes
1 tablespoon sugar
1/4 teaspoons dry mustard
1/2 teaspoon granulated garlic
1/4 teaspoon cayenne pepper

Steps:

  • Rinse and pat dry the pork roast. Place onions in the slow-cooker or pressure cooker. In a small bowl, combine brown sugar, paprika, kosher salt and pepper; mix thoroughly. Rub mixture all over roast and place the roast on top of the onions.
  • In a medium bowl, combine vinegar, Worcestershire, red pepper flakes, sugar, mustard, garlic salt and cayenne pepper; whisk to combine. Pour over roast.
  • CROCK-POT DIRECTIONS: Cover the pork in the slow cooker and cook on low for 4-5 hours, adding about 30-40 minutes for each additional pound if you're multiplying the recipe. Shred with tongs and allow the shredded pork to rest in the cooking liquids until ready to serve. Serve warm on your favorite rolls.
  • PRESSURE COOKER DIRECTIONS: Seal the pressure cooker; cook on high for 60-90 minutes, (The cooking time is 90 minutes for the Insta-Pot, but I've been told that it requires less time for a stove-top pressure cooker.) check to see if it is shreddable. Cook an additional 30-40 minutes as needed. Shred with tongs and allow the shredded pork to rest in the cooking liquids until ready to serve. Serve warm on your favorite rolls. Enjoy!

SPICY DR PEPPER SHREDDED PORK

Spicy Dr Pepper Shredded Pork image

This Spicy Dr Pepper Pulled Pork Sandwiches recipe is a fun twist on your favorite summertime comfort food. We'll show you how to make it at home.

Categories     main dish     meat

Time 6h5m

Yield 18 servings

Number Of Ingredients 6

1 whole large onion
1 whole pork shoulder ("pork butt"), 5 to 7 pounds
salt and freshly ground black pepper
1 11-ounce can chipotle peppers in adobo sauce
2 cans Dr Pepper
2 tbsp. brown sugar

Steps:

  • Preheat the oven to 300 degrees. Peel the onion and cut it into wedges. Lay them in the bottom of a large dutch oven. Generously salt and pepper the pork roast, then set it on top of the onions in the pan. Pour the can of chipotle peppers over the pork (include the sauce.) Pour in both cans of Dr Pepper. Add brown sugar to the juice and stir in.
  • Place lid tightly on pot, then set pot in the oven. Cook for at least six hours, turning roast two or three times during the cooking process. Check meat after six hours; it should be absolutely falling apart (use two forks to test.) If it's not falling apart, return to the oven for another hour.
  • Remove meat from pot and place on a cutting board or other work surface. Use two forks to shred meat, discarding large pieces of fat. Strain as much of the fat off the top of the cooking liquid as you can and discard it. Return the shredded meat to the cooking liquid, and keep warm until ready to serve. (You can also refrigerate the meat and liquid separately, then remove hardened fat once it's cold. Then heat up the liquid on the stovetop and return the meat to the liquid to warm up. Serve on warm flour tortillas or hamburger buns. Top with shredded lettuce, diced tomatoes, grated cheese, avocado slices, salsa, and whatever else you'd like.

  • First, make the pickles! In a small pot, combine all of the ingredients for the brine and bring them to a boil. Simmer for 5 minutes and remove from the heat. Place vegetables in a heat safe bowl and pour the brine over them. Cover and refrigerate until room temperature or cold (depending on your preference), which should take about 1-1½ hours. Voila! Quickest pickles ever. (These pickles obviously get better the longer you brine them. If you have the time, refrigerate these babies overnight.)
  • Make the pork. Heat 1 tablespoon of olive oil in a large saucepan or dutch oven over medium heat. When hot, add the minced onions and garlic. Cook for about 3 minutes until the onions become translucent.
  • Add the ketchup, beer, honey, vinegar and Sriracha and bring everything to a boil, then lower to a simmer. Add the pork tenderloin pieces, cover and cook for 40 minutes.
  • When cooked, remove the pork from the sauce and set aside. When cool enough to handle, shred the pork using your fingers or two forks, depending on how hands on you want to get.
