CHICKEN VOL-AU-VENTS WITH SWEET AND SOUR SALSA
Classy enough for a dinner party but simple and quick enough for any occasion. Has an interesting contrast of hot versus cold and sweet & sour versus savory tastes. The salsa and vol-au-vents can be prepared in advance making it a quick one to pop in the oven as guests arrive. Please note the preparation time does not include the 30 minutes of refrigeration time for the salsa. The quantity of chicken and cheese will vary a little bit depending on the size of the cases, so fill them by eye using the directions rather than bothering to measure them out.

Steps:
- Make salsa by mixing together ingredients from pineapple to vinegar together thoroughly in a bowl.
- Place in refrigerator for 30 minutes or more.
- Preheat oven to 300°F (150°C), set the baking sheet to be around the middle of the oven.
- Place a piece of cooked chicken in each case that fills it to about half way.
- Top with a little cheese, it will melt down a bit during cooking but leave some room at the top for the salsa to be added after cooking.
- Bake filled vol-au-vents case on a baking sheet for 10-15 minutes until cheese has melted, keeping an eye on it to make sure the vol-au-vent cases don't burn.
- Top each evenly with the salsa mix (about 3/4 teaspoon each) and serve.

- Combine everything except chopped peppers and chopped tomatoes. Bring to boil, then simmer for 10 minutes. Add chopped peppers and tomatoes, and boil to desired consistency. To can: Fill sterilized jars, divide liquid equally among jars and screw on lids. Process in boiling water bath for 25 minutes. Can be frozen but takes away some of the flavor.

- Stir water, sugar, ketchup, pineapple, vinegar, red pepper flakes, soy sauce, steak sauce, and hot sauce together in a saucepan over medium heat. Remove 1/2 cup of the sauce to a small bowl; whisk cornstarch into the sauce in the bowl. Bring the sauce in the saucepan to a boil, stir the sauce with the cornstarch into the boiling sauce. Cook, stirring occasionally, until thickened, about 15 minutes. Remove from heat and allow to cool slightly before using.

ADDICTING SWEET AND SOUR SALSA
I went to my nephews graduation party. I had one bite of this salsa and had to track down the person that brought it. She was nice enough to email it to me. YUM!! It looks beautiful in a jar with nice ribbon for Hostess gift! Great for BBQ's (great over grilled chicken). Great with Tortilla chips. I have not taken this recipe anywhere with out having a recipe request- Chef Note: I like to chop vegies and keep them in a ziploc bag and put together with the juice a couple hours prior to event- I like crisper vegies. Other family members prefer the vegies to be marinated longer - So it is really just a matter of taste.

- Chop peppers and onion (I use smaller dice) and combine with black eyed peas, shoepeg corn and pimientos.
- Whisk together sugar, apple cider vinegar, veg. oil and tiger sauce.
- Mix all ingredients together- Cover, Marinate and chill for a couple of hours!(or more depending on taste).

- In a saucepan combine the onions, orange juice, water and sugar; bring to a boil, reduce heat, cover and simmer for 10 minutes.

SWEET & SOUR RIBS WITH POMEGRANATE SALSA

- Heat oven to 160C/140C fan/gas 3. Snugly fit the ribs into a roasting tin. Pour over the pomegranate juice and enough water (if needed) to cover the ribs, then cover tightly with foil. Roast for 2-3 hrs, turning halfway through, until the ribs are really tender, but not falling apart.
- Put all the sauce ingredients in a small saucepan. Gently heat, then bubble for about 2 mins, stirring. Set aside.
- When the ribs are done, tip away the liquid and coat all over with the sticky sauce. Cover and marinate in the fridge for at least 1 hr, or better still up to 24 hrs. Can be frozen at this stage.
- To make the salsa, mix together all the ingredients and chill until ready to serve.
- About 30 mins before baking, take the ribs out of the fridge to come to room temperature. Heat oven to 220C/200C fan/gas 7. Bake for 20-30 mins, turning occasionally and basting often with the sauce, until sticky, hot and crisping on the outside. Serve with the salsa and flatbreads or rice, if you like.
